Found this in an old recipe magazine.
I haven't tried this recipe yet, but am going to as soon as the summer weather hits.
I think it might be nice and refreshing to serve this on a hot summer's day.
Time includes chilling as you must begin this recipe the day before you need it. -- posted by Tisme

Watermelon Steak

This is the novelty dish of some Boston restaurant--when I was living with a friend in Boston the recipe was released in the papers. It looks like a slab of fish but is, in fact, watermelon. Very peculiar texture. When your friends ask you what it is, you can start singing, "Down by the bay..." -- posted by 101794

Watermelon Sorbet

This refreshing guilt-free sorbet is perfect for a hot summers day. I found it fairly easy to make for one of my first attempts at a sorbet because it only requires you to break up the mixture twice instead of up to four times like in most other sorbet recipes. You can REALLY taste the watermelon in this delicious icy treat! Can also be made vegan by emitting egg whites but it will just be a little trickier to scoop. -- posted by Brittney_xo

Triple-Melon-Ball Fruit Dessert

This is simplicity itself, chilled balls of cantalope, honeydew melon and watermelon inside a parfait glass, decorated with two chocolate sticks or ice-cream wafers. I made this once many years ago and still remember the oohs and ahhs when I presented the glasses on a tray to my guests. Note that you will need a melon baller for this recipe. -- posted by Perfectionist cook

Watermelon Agua Fresca- Sandia

This agua fresca can be used as a template for any soft fruit: cantaloupe, mango, papaya, pineapple, strawberry, guava... the list goes on and on. Start by mashing the fruit and add water to make 1 gallon. Don't be tempted to throw this in the blender, as the best aguas always have bits of fruit floating throughout. You should make it a little stronger than you think since chilling dulls the flavor and ice will dilute it. Extra agua can be frozen into paletas. Please adjust the sugar to you liking.
Neptune Salad With Watermelon, Shrimp and Strawberry Dressing

A recipe that has Neptune in the title usually means that it has shrimp or other seafood. My version of Neptune Salad is especially refreshing on a hot day and has a lusty flavor that likely would satisfy a Roman god. -- posted by Chef Babz

Watermelon Jicama Salad

I saw a different recipe for this salad on a Bobby Flay Food Network show and it got me thinking. I combined watermelon and jicama with my basic recipe for pineapple salsa (recipe #132536), made a couple of additional changes and came up with this recipe. Since this recipe is an invention on my part, all ingredients are, of course, variable according to your own personal taste. Cooking time is chilling time.
Agua Fresca

Very refreshing drink, very easy to make. It works just as well with Cantaloupe or Honey Dew melons. I've made this recipe with many different types of melon with great results. The grocery store I use has a yearly melon sale in the summer. You can try and buy several types of melons that you normally couldn't get in this area of Wisconsin. The Santa Claus melon has a very mild flavor and light color. I like to use my LaLane juicer. -- posted by Jess4Freedom

Melon Trio With Lime & Yogurt (21 Day Wonder Diet : Day 1 )

This is the Day 1 breakfast for the 21 Day Wonder Diet. I was unable to buy cantaloupe on my first day, so I used 300g each of the honeydew and watermelon. You can choose any flavoured yogurt you like, as long as it is low-fat. Passionfruit is especially well suited to the other flavours in this dish, but i used raspberry (my Hubby doesn't like passionfruit) and that worked well too! This breakfast is to be followed up by a mid-morning snack of 1 small red capsicum & 1 tablespoon low-fat cottage cheese. If you dislike raw capsicum, you can have an apple instead. -- posted by Sara 76

South-Of-The-Border Fruit Salad - 1 Ww Point

Fruit salad with a kick to it, this salad is very original and very delicious. Please be sure to use fresh fruit as the flavour will come through better. Portions are also a very nice size and the point count is great! The secret ingredient here is salt. It actually makes fruit taste sweeter - but a little goes a long way. Enjoy! -- posted by Nif

Fabulous Fruit Salad

From TOH magazine. I love fresh fruit--and this salad is sooo chock-full of fresh fruit, that it is well-named! I can't make the dressing for myself (due to a food intolerance), but I think it would make a tasty dressing. Cook time is the minimum of 1 hour chilling time. -- posted by Halcyon Eve

Cardamom-Flavored Fruit Salad (Salatat Al-Fawaakih)

From: "Classic Vegetarian Cooking from the Middle East & North Africa"-Arabian Gulf. This is the BEST fruit salad my husband or I have ever tried! It's easy, healthy, refreshing and WONDERFUL. You have to like cardamom to really appreciate it though. You may find yourself doubling the sauce in the future because you want to drink it up. I don't repeat very many recipes because there are too many new ones to try but this one is repeated over and over during cantaloupe season. I'm sure it would work with other fruits as well but I like this combo so much I haven't experimented. -- posted by Engrossed

This dessert is best made when fresh local berries are available.
