Melon Trio With Lime & Yogurt (21 Day Wonder Diet : Day 1 )

This is the Day 1 breakfast for the 21 Day Wonder Diet. I was unable to buy cantaloupe on my first day, so I used 300g each of the honeydew and watermelon. You can choose any flavoured yogurt you like, as long as it is low-fat. Passionfruit is especially well suited to the other flavours in this dish, but i used raspberry (my Hubby doesn't like passionfruit) and that worked well too! This breakfast is to be followed up by a mid-morning snack of 1 small red capsicum & 1 tablespoon low-fat cottage cheese. If you dislike raw capsicum, you can have an apple instead. -- posted by Sara 76

Watermelon Salad

Recipe from a restaurant called Iron Barley here in St. Louis. They say this recipe is for 2 dinner size entree portions. If you are going to serve it as a side dish it will serve 4, but they recommend you cut the watermelon in smaller pieces if doing smaller salads. Cooking time is actually marinating time. NOTE: I served just the marinated watermelon as a side dish (didn't put it atop greens nor did I use onions) and it was great with BBQ meat!!! -- posted by JanuaryBride

Watermelon and Berry Soup

This is a wonderful, easy recipe. Dairy free, no cook, quick to make! Perfect for entertaining in the summer. I "adjusted" the original of this recipe which came from "Vegetarian Cooking for Everyone", a fabulous cookbook by Deborah Madison which won Julia Child and James Beard awards (I'm not vegetarian, it's just a great book!). I always keep Costco's 3 Berry Mix in my freezer. I use these frozen berries, but use fresh if you prefer. I like the texture the thawing berry's have in the soup as well as the unexpected chill they add to each bite. This is really an easy recipe to adapt, be creative, go wild! -- posted by Mrs Goodall

Fabulous Fruit Salad

From TOH magazine. I love fresh fruit--and this salad is sooo chock-full of fresh fruit, that it is well-named! I can't make the dressing for myself (due to a food intolerance), but I think it would make a tasty dressing. Cook time is the minimum of 1 hour chilling time. -- posted by Halcyon Eve

From: "Classic Vegetarian Cooking from the Middle East & North Africa"-Arabian Gulf. This is the BEST fruit salad my husband or I have ever tried! It's easy, healthy, refreshing and WONDERFUL. You have to like cardamom to really appreciate it though. You may find yourself doubling the sauce in the future because you want to drink it up. I don't repeat very many recipes because there are too many new ones to try but this one is repeated over and over during cantaloupe season. I'm sure it would work with other fruits as well but I like this combo so much I haven't experimented. -- posted by Engrossed

Watermelon Gazpacho

Recipe by Josh Silvers at Syrah Restaurant in Santa Rosa, CA. I just tried this for the first time yesterday with a slight modification (I used agave nectar instead of the suggested syrup) and served it to a group of friends who were visiting. Everyone loved it, it's very refreshing, healthy, and easy to make. Perfect for a hot summer day! -- posted by pleiad7

If you want to make 1 or 2, just keep the watermelon chunks in the freezer until they're ready to use and muddle them in the glass or throw in a small blender or food processor. -- posted by I_Cook_For_Firemen

Peachy Fresh Fruit Salad With a Flourish of Angelica and Mint!

This was the first thing I was taught to make at secondary school in Domestic Science! We were all taught to make basic lemon syrup for the fruit salad, a great classic and a standard recipe that I have never forgotten! However, here I have deviated a little and have taken advantage of some excellent local peach syrup instead of the homemade lemon syrup I usually make; and I have garnished the salad with mint and angelica from my herb garden. I have suggested certain fruits to use, but the beauty of a fresh fruit salad is that you can always rustle one up with whatever you have locally and to hand. Serve with fresh pouring cream for a real treat! -- posted by French Tart

Cherry Tomato and Watermelon Salad

If in-season cherry tomatoes are unavailable, substitute vine-ripened cherry tomatoes or grape tomatoes, avoiding pale, unripe ones. The amount of liquid given off by the tomatoes will depend on their ripeness. If you have less than 1/2 cup of juice after spinning, proceed with the recipe using the entire amount of juice and reduce it to 3 tablespoons as directed (cooking time will be shorter). -- posted by Abby Girl
