			<description>I have been making these for years - ever since I moved to FL where shrimp is so affordable. They are light and creamy.  Wonton wrappers make this easy to make and the creamy sauce is a quick 10 minutes on the stove.  I often make these ahead and freeze ... then when I need them, just pop them in some boiling water, heat up my sauce, and dinner is ready. Serve with a traditional crisp salad (I happen to like a grilled romaine salad) and then of course some crusty garlic bread. **Note! I made this recipe using half a box of pasta since that's what I had on hand.** I made it with farfalle and it was great.

			<description>As a grad student, I'm always looking for recipes that are quick, easy and relatively cheap, but taste great at the same time! I adapted this ziti dish from a number of recipes online after none of them were precisely what I wanted. I hope that you enjoy it too. 

The cheese is simply what I tend to keep in the fridge and therefore what I had to put the recipe together. It was a good combination, but you can substitute whatever you would like for it. Equally, you can leave out the ground beef if you'd like it to be vegetarian. 			<description>The original recipe came from the San Francisco Chronicle.  The original recipe calls for arugula (which I love) but it's hard to find sometimes, so I switched to fresh spinach.  If you can find an Italian tonno in olive oil (Bumble Bee has one in the gold can which I can easily find), then it's worth the extra money to use.  However, I have used tuna in water when it was all I had in the pantry.  Just drain the water and add a little olive oil to the can, since this tuna is a bit drier than the Italian version.  Let it marinate for about an hour, then drain it and use. Canned tuna has never tasted so good!!!   I love this recipe for a quick dinner that I can throw together out of the pantry in less than 30 minutes, and DH was surprised how good it was when he first tasted it.  This is a good base recipe to add extra goodies (sun dried tomatoes, mushrooms, artichokes, black olives, capers, etc.). FYI ... These feeds a crowd, but I love to make it and then keep 1 or 2 pieces out for the week and freeze the rest. It either makes one huge pan or two smaller ones.  I have found that making the ragu the night before makes the preparation a lot easier. 

Two minor substitutions I have made:  (1) I use the already prepared ground chuck and ground pork from the meat section of my grocery store.
