			<title>Exquisite and Addictive Rolled Baklava Cookies</title>

			<description>Baklava in another fashion.  This rolled version is quicker, easier, and takes much less time than you would think... something simple, yet elegant.  It is fun to make with your teens or friends on a week-end.   Basically, I took my baklava recipe and made it simpler.  There are just a few steps, but they are repeated over and over.  Melted butter is used along with oil in a spray can to hurry it along.  You may use walnuts, pecans, almonds, pistachios, or a combination.  Whatever is your nut of choice, make sure you use good honey, pure cane sugar (do not skimp on your sugar, it makes a taste difference), and quality butter.  Margarine has no place in baking.  Do not pour the  honey mixture over the hot cookies; wait until they are cool.  If not, the cookies will get soggy.  These are great any time of the year and look great when served in paper cups. There were about 6 other recipes  posted here but I wasn't sure about them because the ingredients list were different for each and I had never made this type of cookie before.  They are very cakey cookies and the lemon glaze is very good.  The cookies themselves also have a nice subtle lemon flavor. This very tasty treat is pronounced 'Pahk-see-mah-THAHK-yah' in Greek, &amp;amp; the original recipe, which I've cut back considerably, made 10 dozen of these little buggers! Because these paximathakia are made without eggs &amp;amp; butter, they can be stored (after cooling COMPLETELY!)  for up to 2 months in airtight plastic containers, &amp;amp; can be frozen. Food coloring paste is more concentrated than the food coloring sold in most supermarkets and yields a deeper more intense color.  It is widely available in most cake supply and decorating stores, both storefront and Internet based.  If you don't have and not sure if you want to spend the money, feel free to use food coloring. These are time consuming and not a good option for beginner cooks (or the impatient).  The effort I am promised is worth it. 			<description>I cut this recipe out of the Medford Mail Tribune a couple of years ago.  This is my 3rd Christmas of using this recipe and my family would go nuts if I didn't make at least four different kinds using this basic recipe.  Grated orange peel can be substituted for the lemon peel for a different taste.  Any kind of dried fruit can be substituted for the dried cranberries, and any kind of nut can be used for the pine nuts, pistachios are nice.  I vary the type of chocolate I use  to dip one side of each Biscotti either white, milk or dark chocolate.  I've substituted other flavors of extract for the vanilla also.  This basic recipe is good but if you are a baker who likes to experiment with flavors THIS is the one to try that with!!. I'm not an aniseed lover so I often omit it as it has a strong flavor of it's own that seems to cover other flavors. She notes that anise or fennel can be used in place of the cinnamon, but recommends using only a single pure flavor note, as that's the way her nonna would have liked it. 			<description>I love figs - they have slowly become progressively more uncommon in the American diet; I suspect because they are tender &amp;amp; do not transport well when fresh &amp;amp; have limited commercial value. In our area there are old fig trees in almost every back or side yard but few people eat them - such a shame.  They used to be so important that folks would cook little pear shaped cherry tomatoes in sugar syrup &amp;amp; then pack in sugar for winter use as fig substitutes.  Figs are very nutritious - high in manganese, magnesium, copper, potassium &amp;amp; vitamin K... and delicious to boot!
This recipe calls for the ability to grind the dried figs to get the right texture. This will be my first foray into using my Electrolux for grinding. 			<description>Mary, a friends Greek neighbour, took the time to show us this recipe.  It is a family recipe from her area of Greece.  The actual dough has very little sugar as they are dusted heavily in icing sugar once cooked.  These are very crunchy and has peices of almonds through out them.  The shape is entirely upto the cook, just make sure they are not too large as they will burn on the outside and not cooked on the inside.
