			<description>This is a great version of a traditional steak sandwich without being traditional.  A tomato based relish with Mediterranean flavors and a red pepper mayonnaise, grilled skirt steak, and fresh spinach.  Now, I happen to buy these great flat breads right from my market, but you can easily make your own - there are many good brands out there these days. You can also take a pizza dough and form into a small rectangle, brush with some olive oil flavored with grated onion, garlic, and seasoning and grill inside or out for just a few minutes and then remove. I hope you like it too! :) You can save time and use your own BBQ sauce but it is said this BBQ sauce is out of this world. The rub is so good! If you would like to make just enough rub for this recipe use 1 tbls. kosher salt, 1 tbls. plus 1 1/2 tbls. light brown sugar, 1 tbls. smoked paprika, 1 1/2 tsp. chili powder, 1/8 tsp. dried rosemary,crushed, 1/8 tsp. dried thyme, 1 1/2 tsp. granulated garlic. 			<description>Do you hate eating nachos and getting to the bottom and there is no cheese or no sauce left. Or how about hating that someone smeared sour cream all over all the chips because they like it - but you don't.  How about olives that you like but your friends don't and pushed them all off to the side. Well this is a great way to make nachos for a party so everyone is happy.  Individual pouches or small packets of nachos for each person. You get your own chips, lots of cheese, a creamy sauce and served with the traditional toppings.  Now for me ... traditional toppings include shredded lettuce, black olives, jalapenos, salsa or tomatoes, sour cream and guacamole. Now since this is a NO MESS easy clean up meal.  I line a pie plate with parchment paper and put all the toppings right in that. That way at the end of the meal ... toss the parchment paper out and NO clean up. And with all those toppings they can make the nachos exactly to their liking.. Each parchment packet has chips, cheese and either the seafood topping or the traditional beef and bean topping, all hot and ready to garnish. And the best part ... individual packets so once again, no clean up or mess. This is just a great party food.  So whether you decide on the seafood or the beef, you will have 8 great packets of nachos to enjoy during my favorite ... 			<description>This sticky, spicy chicken curry is deliciously sweet and packs just the right amount of heat. It is to be scooped up with warm, chewy naan, then licked off of fingers.Your first step is to hunt down some curry leaves. Their flavour is irreplaceable in this dish - a bit nutty, warm, and citrusy. Used a lot in South Indian cooking, they have nothing to do with curry powder which is a blend of spices.Start by browning the chicken in a heavy skillet - make sure the oil is good and hot and the chicken has been patted dry before you put it in the pan. Dont flip it until it releases easily - if it is sticking, leave it - it will tear if you try and turn it before it is ready. Next, cook the onions gently over low heat for about 10 minutes to coax out the sweetness. Then add the spices to the pan to saute before the liquid is added. These three steps have a big flavour impact.
As far as curries go, the ingredient list is very short. Which makes it a great curry for beginners, if you can track down some curry leaves at an Indian grocer. 			<description>I created this recipe 3 years ago when I decided to brine a turkey for the first time.  I wasn't happy with any of the recipes I found online.  Now I would never fix a turkey any other way.  It infuses flavor throughout the bird.  I make this brine the day before I need it so it has time to cool in the refrigerator.  Brining time will depend on the size of your turkey or chicken.  We usually do an 18 lb. bird &amp;amp; I brine it for 3 days.  This is equally good for birds roasted in the oven or smoked on the grill.  The number of servings and cooking time will depend on the size bird you are cooking.
