			<description>Mojo is a traditional Cuban marinade made with sour oranges, spices, and garlic.  Sour oranges are used in many Hispanic dishes and can be found in ethnic grocery stores.  Mojo is used as a marinade for pork, chicken, and seafood before cooking.  It acts to tenderize any cut of meat and can be used as a ceviche as well.  This is a family recipe made with black coffee, which is traditionally used in Cuban family recipes to marinate fresh hams and large cuts of meat.  Serve with Recipe #373864 as dressing at the end.  Other ways to serve Cubano-style pork loin, is to slice and serve with a fresh fruit salad or serve in soft tacos or sandwiches. Family reunions were never the same after he went on to that Great Grill in the Sky and I'm sure our Heavenly Father calls on Grandpa often for charcoaled chicken sloppy with his finger-lickin' tangy goodness.

Grandpa's &amp;quot;sop&amp;quot; is the starter for this recipe, used as a marinade and for basting while the meat is cooking. The red sauce should be used in the last 10-15 minutes only, as it will burn. Note: If you double this recipe, don't double the lemon. It's just too much. Also, the garlic juice called for in the recipe used to come in a garlic-shaped green bottle with a pointed top, and I think was made by McCormick. 			<description>This marinade is enough for 12 pieces of chicken.  Recipe is taken from &amp;quot;Savannah Style&amp;quot; a cookbook published by the Jr. League there in 1980.
You marinate the chicken pieces, then cook them in a pan on the grill, turning frequently, then remove from pan and place chicken pieces directly on grill for about 10 minutes. This particular type is based off of a nut Masala and Garam Masala only it uses the wild rice native to my homestate, Minnesota, for the &amp;quot;nuts&amp;quot; as well as a decent amount of cloves. But for anyone BBQing at any time, this sounds yummy so I'm posting it here for safe-keeping.  Personally, I'll be leaving out the  dried chilli flakes.  But do feel free to crank up the heat if that's your preference! 			<description>Amazing recipe to marinate salmon prior to smoking.  We've used this recipe the last 4 years with great success.  Gives a tangy, flavorful bite to smoke fish strips.  We cut the fish into 1-inch wide strips approx. 8-10 inches long and tie two together with thin twine.  We then loop the tied strips over slats in our smokehouse for the drying time and smoking.  We smoke slowly outdoors in our smokehouse using a combination of alders and apple chips.  We use red cooking wine for our preferred flavor.  Recipe taken from www.fishsniffer.com, Cookin' Your Catch, by Mark Elkins.  This is an expensive marinade, but it will fill a five-gallon bucket and do approximately 10-12 huge fish. I could only find plain fruit jams, so I saw this recipe on the net for this Asian jam for jam tarts, but it took along time to cook. There was no name to the original recipe. So I took the spices, add more and then put it with the pectin pineapple jam I have made in the past. Hope you like it, it is good on toast, but allot of people have told me it is great on ice cream. 			<description>I like to use this when I reach for salt, So I lower my intake of salt and kick up the flavor of what I cook.
I used home grown herbs that I dried whole. Leaves that are loosely packed into measuring cups. So if using store bought do take note the amounts of the whole herbs would be a lot less. I guesstimate my 2/3's. Great to season any game, roast beef or roast poultry. Season roast veggies, stuffing, rice or potatoes. How about a touch on your eggs.

			<description>This makes a thick, delicious paste that coats the chicken with tons of flavor.  I like to make more than one batch at a time, apportioned into quart-sized ziplocs containing enough marinade for two chicken breasts.  I freeze my chicken in the same bag with the marinade; the night before I intend to grill, I put the whole bag in the fridge and let it defrost / marinade overnight and all through the next day.  I like to serve some fresh, homemade pico de gallo on top.
