This drink was HUGE in Pensacola, Florida where we lived for 2 years while my husband was in flight school. There was actually a big Bushwhacker Festival on the beach. My friend Lorraine B gave me this wonderful recipe when I was looking for an interesting hostess gift. One of the best things about this recipe is that it only takes one week to infuse, as opposed to up to a month that I've seen in other recipes. I actually made a quadruple recipe and got 6 bottles to give as gifts (I kept one for myself, of course!). A Creole flambéed dessert coffee that is still served in grand style at some of New Orleans finest restaurants. This is a very special after-dinner drink, spectacular for entertaining. Can be prepared at the table with lots of fanfare to impress the guests. There are special brulot bowls made to prepare this drink, but a round, chafing dish works well. The Mai Tai Cocktail is a beautiful tribute to rum....fine aged rum. If you like rum, you will like this strong cocktail. Contrary to popular belief, this is not a fruity cocktail and I cringe when I see bartenders add fruit juices to this perfect drink. If you like fruity drinks try a zombie or Maui Mai Tai - but if you like rum, this is a celebration. This is NOT the original Mai Tai recipe, but it is a fabulous version . The original Mai Tai was created in the early 40's by Trader Vic in Oakland. The name of the drink comes from the reaction of its first samplers, who were from Tahiti, when they exclaimed "Mai Tai - Roa Ae", which means "Out of This World - The Best". -- posted by NcMysteryShopper

I love Amaretto or other liqueurs for dessert. This could go either way, before or after dinner. I usually don't like the taste of most hard liquors, but the spiced rum with the amaretto was incredibly delicious! The addition of club soda makes it a nice before dinner drink, and, alternatively, the cream makes it a luscious dessert drink. (And I admit to using fat free half and half and it was great.) St. Vincent Rum Punch

I spent quite a bit of time living on the island of St. Vincent in the West Indies and picked up this Rum Punch recipe from the Grand View Hotel there. I cut the ingredients in half as the original recipe was for a huge quantity. Also, the amount of rum and water was unclear. I interpreted the rum to water ratio as 1 part rum to 2 parts water since the original recipe does not quantify an actual amount of either. If you use a normal size bottle of rum and double the amount for the water, you should be fine. It takes a few days to make, but is definitely worth the effort. -- posted by Green Cuisine

Adapted from "Peterson's Holiday Helper," by Valerie Peterson (Clarkson Potter, 2008). This is a blend of all the favorite holiday flavors, not really a true sangria. You can use a sparkling cider or grape juice, or even a champagne if you'd like to. Cherries are an excellent addition to this drink as well. This is such a great cocktail! It's great on taste, easy to make and so pretty! This recipe only makes one drink so it might be wise to go for the pitcher-load! It's sure to be a winner at your house, or pool, or anywhere! BTW: Torani syrups are fantastic, non-alcohol and do so much to flavor your drinks, put in your coffee, in recipes, and include it in your desserts.
