			<description>I made this up one night, when I had lots of cheese in the fridge and wanted something spicy and hearty. It's full of flavour and vegetarian but, as I said, it is very spicy thanks to the chipotles so don't make it if you've got mild tastebuds! The sauce is fairly liquid to start with but will thicken as the shells soak it up during cooking. 			<description>I have only had this at a restaurant once at a place in Louisville called The Old Spaghetti Factory.  It was so good, I stuffed myself bigger than the Manicotti!  So, I came home and started playing around with a couple of recipes and this resulted.  I think it's a delicious alternative to the heavy tomato sauce that's usually on Manicotti for the veggie-worshipers, there's no meat.  Serve with a green salad and some garlic bread for a delicious meal.  Looks like a lot of work, but it's really not and goes fairly quick. A couple 15oz cans of black beans can be substituted for the dried ones to save time. This would be very good with some shredded cheddar added to the top if it as well. I make the Vodka sauce first and let cool and reheat SLOWLY back up to temp just before I pull the Manicotti out of the oven to cool. *Dis is yummy really really yummy
**MAKE BUTTER WITH YOUR LEFT OVER HEAVY CREAM*.
I use the butter for Garlic bread! 
- in a plastic jar, violently shake Heavy Cream for 10-15 mins.
- check every few mins and remove the buttermilk as it separates.
 I suggested a plastic container because I smack it against my legs!
