Manicotti with Basil Cheese Filling and Puttanesca Sauce

I created this for my birthday, a little of this, a little of that. If you don't want to spend the whole day cooking, make the sauce up to a month ahead of time and freeze it it 2 containers. Use the amount you need and save the rest for spaghetti. The story I've heard about the word puttanesca is that it means prostitutes sauce, and that the ladies would prepare the sauce and put it on their windowsills, the smell was so wonderful, it attracted the men. I know it made my old man melt. -- posted by morelhunter

Baked Manicotti

Found this one on Allrecipes.com and tweaked the ingredients just a bit to fit the picky Italian DH. Ground sausage as opposed to ground beef gives the dish much more flavor. Do ahead tip would be to stuff the shells the night before, place in red sauce, refrigerate, and then make the white sauce just prior to cooking. Watch the amount of chicken bouillon as it can make the white sauce way too salty. Serve with some garlic stuffed/sauteed artichokes (Recipe #61210) and a small garden salad. -- posted by Chippie

The Best Cheese Manicotti

I love Italian food, and I love cooking for my friends at college, so that's how this dish evolved. I don't really use any written recipe when I make it, so some of the seasoning measurements are approximate. This makes seven 2 manicotti shell servings, which is a lot, but it tastes great even as leftovers. -- posted by Nadezhjda

3 Cheese Manicotti

Years ago my grandmother ordered me these recipe cards in the mail that you file in a box that the company provides. I didn't much care for the recipes so we ended the subscription. There was one gem in the bunch, though. It remains a family favorite! (I don't remember the name of the company) I have adjusted the cooking times several times based on different ovens (military, moving, rental houses, unreliable ovens!) so you may need to watch it and cook it more or less based on your oven. It is not a very traditional recipe but it is quick with little mess! You can also make it ahead and just cook it when you are ready. -- posted by MSZANZ

Stuffed Manicotti Alfredo

I have only had this at a restaurant once at a place in Louisville called The Old Spaghetti Factory. It was so good, I stuffed myself bigger than the Manicotti! So, I came home and started playing around with a couple of recipes and this resulted. I think it's a delicious alternative to the heavy tomato sauce that's usually on Manicotti for the veggie-worshipers, there's no meat. Serve with a green salad and some garlic bread for a delicious meal. Looks like a lot of work, but it's really not and goes fairly quick.
Prepare this ahead of time, then when your guests arrive, pop the pan in the oven and spend time with your guests! Also works great with almost any kind of pasta: layered like lasagna, stuffed in manicotti or big seashells, mixed willy-nilly with linguine or elbow macaroni. So many choices!
Super Easy Working Mom's Manicotti

A twist on the super easy recipe my closest girlfriend Jules35 and I use from the back of the AMERICAN BEAUTY PASTA (THE ONLY ONE THAT SHOWS A RECIPE THAT YOU DON'T HAVE TO BOIL THE PASTA FIRST!! Sometimes we make it with sausage and mushrooms, sometimes veggie style-either way is great! Their make ahead tip is below as well! We have made this with a single can of sauce (large) but if you want it really saucy, you may want to adjust the recipe later to suit your tastes. ;) I topped with a 4 cheese blend that had cheddar in it for the picture. Up to you!! -- posted by Mommy Diva

This recipe is pretty quick and easy, that's why I like it. I found this recipe on the back of the "Ronzoni" Manicotti noodle box. The best way to prep the noodles is to pre-boil the noodles, making them still firm enough to stuff but soft enough for them to finish cooking when you bake the dish in the oven. -- posted by karilfoster

Southwestern Style Manicotti - Vegetarian

Something I came up for our weekly "veggie night". We thought it was pretty good. A couple 15oz cans of black beans can be substituted for the dried ones to save time. This would be very good with some shredded cheddar added to the top if it as well. Prep time includes time to cook the lentils and pasta (which can be done at the same time) but not time to cook the beans, since most people will likely opt to used canned. -- posted by DbKnadler

This is good. I've had the recipe for awhile, but don't remember where I got it. I've been looking for it again, and came across it in my private recipes, so I decided to make it public, after cleaning it up a bit. -- posted by Kayne

Baked Manicotti With Meat Sauce

I think this originally came in Women's Day magazine, back when they had a skinny 6 or 8 page cookbook, in a strip, in the center of the magazine. I started making this as a newly wed, and it is still a family favorite. I usually double the recipe and freeze at least 1/2 of the stuffed noodles, since that is the most time consuming part. Serve with a sald and garlic bread, and a good bottle of red wine ! -- posted by NurseJaney

Turkey & Spinach Manicotti

I am posting this recipe for safekeeping. It comes from the EatBetterAmerica webstie. This looks really good & easy! I can't wait to try it. I know stuffing manicotti can be a pain, so use a disposable gallon sized bag and snip a corner to pipe the filling into the pasta. -- posted by Julie421511

Broccoli Slaw Manicotti With Roasted Red Pepper Sauce

This cheese manicotti recipe is delicious! The red pepper sauce gives it a nice flavor. I have never made homemade sauce before - but this is wonderful and super easy! My picky kids will eat this and don't notice the broccoli slaw in the manicotti - yay! Vegetarian and filling. Try it! -- posted by Jennibear

Mc Call's Cooking School Manicotti

This is the most delicious manicotti EVER! The homemade noodles are like crepes, and they melt in your mouth. You won't miss the meat. We used cottage cheese in place of the ricotta.
