			<description>This is from the January &amp;amp; February edition of Cook's Illustrated magazine. I knew as soon as I saw this recipe I had to make it...what a simple and easy way to make manicotti, even with a homemade sauce!! I love manicotti, but I just hate stuffing the shells!! Since this doesn't use manicotti shells, there's no messy stuffing involved, just rolling the cheese mixture in the lasagna noodles, which really cut down on my frustration factor in making manicotti. The original recipe calls for diced tomatoes to be pulsed in a food processor, but since I don't have one, I just bought crushed tomatoes and they seemed to work fine for me. I also used less salt than the recipe calls for, but that's just our personal preference. 			<description>The filling amount should be plenty to stuff 14 shells with maybe a small amount left over --- to remove the bitterness from the spinach, cook firstly according to package directions --- to save time you may cook the ground beef/spinach mixture up to step #4 and refrigerate for up to 2 days. For easier stuffing, warm the mixture in the microwave to just room temperature before adding in the mozzarella cheese and eggs, then proceed with recipe as stated --- ground beef or bulk Italian sausage may be used successfully.  This recipe was developed and tested using both on different occasions. I started making this as a newly wed, and it is still a family favorite.  I usually double the recipe and freeze at least 1/2 of the stuffed noodles, since that is the most time consuming part. 			<description>This is the best Vodka Sauce I personally have ever tasted! It's spicy, creamy, lil bit chunky, just perfect...I must say without tooting my own horn. I make the Vodka sauce first and let cool and reheat SLOWLY back up to temp just before I pull the Manicotti out of the oven to cool. *Dis is yummy really really yummy
**MAKE BUTTER WITH YOUR LEFT OVER HEAVY CREAM*.
I use the butter for Garlic bread! 
- in a plastic jar, violently shake Heavy Cream for 10-15 mins.
- check every few mins and remove the buttermilk as it separates.
 I suggested a plastic container because I smack it against my legs! We prefer Barilla no-boil lasagna noodles for their delicate texture resembling fresh pasta. Note that Pasta Defino and Ronzoni brands contain only 12 no-boil noodles per package; the recipe requires 16 noodles. The manicotti can be prepared through step 5, covered with a sheet of parchment paper, wrapped in aluminum foil, and refrigerated for up to 3 days or frozen for up to 1 month. (If frozen, thaw the manicotti in the refrigerator for 1 to 2 days.) 			<description>Wild mushrooms, caramelized onions, creamy ricotta, tangy cheese, fresh herbs make this a great dish.  Now I prefer whole wheat manicotti if you can find it. I found some at Whole Foods which I love, but if not, good ol' Ronzoni or Muellers or any brand will work just fine.  To me it is just a nice option to the tomato based manicotti or that with beef or chicken.  I just enjoy the change of having a lighter vegetarian dish now and then even though this has a rich cream sauce.
