Manicotti

This was my favorite recipe as a kid. All the ingredients I've listed are kid friendly, but you could add spinach or other "adult-only" foods if you like. Serve with a nice green salad and warm bread! Delicious! -- posted by Kathleen Talbot

Manicotti with Basil Cheese Filling and Puttanesca Sauce

I created this for my birthday, a little of this, a little of that. If you don't want to spend the whole day cooking, make the sauce up to a month ahead of time and freeze it it 2 containers. Use the amount you need and save the rest for spaghetti. The story I've heard about the word puttanesca is that it means prostitutes sauce, and that the ladies would prepare the sauce and put it on their windowsills, the smell was so wonderful, it attracted the men. I know it made my old man melt. -- posted by morelhunter

Cheese stuffed manicotti covered in a homemade meat sauce. The tomato sauce is a garden or chunky style. I make the sauce in double batches and freeze.
Baked Manicotti

Found this one on Allrecipes.com and tweaked the ingredients just a bit to fit the picky Italian DH. Ground sausage as opposed to ground beef gives the dish much more flavor. Do ahead tip would be to stuff the shells the night before, place in red sauce, refrigerate, and then make the white sauce just prior to cooking. Watch the amount of chicken bouillon as it can make the white sauce way too salty. Serve with some garlic stuffed/sauteed artichokes (Recipe #61210) and a small garden salad. -- posted by Chippie

The Best Cheese Manicotti

I love Italian food, and I love cooking for my friends at college, so that's how this dish evolved. I don't really use any written recipe when I make it, so some of the seasoning measurements are approximate. This makes seven 2 manicotti shell servings, which is a lot, but it tastes great even as leftovers. -- posted by Nadezhjda

Garlicky Shrimp Manicotti

We love shrimp, we love pasta . . . this recipe combines the best of both! While these are perfectly delicious reheated the next day, I would advise baking any leftovers only when needed as the pasta does tend to soften after reheating, making removal from the baking dish (and therefore a pretty presentation) more difficult. Preparation time does not include time to make the marinara sauce or the home-made manicotti. -- posted by FlemishMinx

3 Cheese Manicotti

Years ago my grandmother ordered me these recipe cards in the mail that you file in a box that the company provides. I didn't much care for the recipes so we ended the subscription. There was one gem in the bunch, though. It remains a family favorite! (I don't remember the name of the company) I have adjusted the cooking times several times based on different ovens (military, moving, rental houses, unreliable ovens!) so you may need to watch it and cook it more or less based on your oven. It is not a very traditional recipe but it is quick with little mess! You can also make it ahead and just cook it when you are ready. -- posted by MSZANZ

Stuffed Manicotti Alfredo

I have only had this at a restaurant once at a place in Louisville called The Old Spaghetti Factory. It was so good, I stuffed myself bigger than the Manicotti! So, I came home and started playing around with a couple of recipes and this resulted. I think it's a delicious alternative to the heavy tomato sauce that's usually on Manicotti for the veggie-worshipers, there's no meat. Serve with a green salad and some garlic bread for a delicious meal. Looks like a lot of work, but it's really not and goes fairly quick. WELL WORTH IT! -- posted by Redneck Epicurean

Manly Manicotti

A rich mix of delicious cheeses with a smooth, hearty filling. A kick of Italian old school and the flavor of smoked cheese. You can't go wrong with this old favorite with a twist.

I made this recipe from memory. I got the original from my mom and kicked it up a few notches. This is great for romantic dinner or a family favorite.

I don't use measurements. Real food has to be properly eye-balled and mixed to your personal flavor. -- posted by Chef #601599

Cheese Stuffed Manicotti

This recipe is pretty quick and easy, that's why I like it. I found this recipe on the back of the "Ronzoni" Manicotti noodle box. The best way to prep the noodles is to pre-boil the noodles, making them still firm enough to stuff but soft enough for them to finish cooking when you bake the dish in the oven. -- posted by karilfoster

This is my most famous dish, Manicotti con Spinaci e Funghi, I sometimes make it without the spinach and its just as good, also I really like garlic so if you don't like a very strong garlic taste I would only use one clove instead of the 2-3 i would normally use. -- posted by Nessa's Mommy

Farmhouse Manicotti With Optional Meat Sauce

Seems kinda pointless to me, to go to all the trouble of making & stuffing the 'cotti's and then NOT have meat in the sauce. So I adjusted this found recipe from *Grandma's Kitchen* recipe cards, to include ground beef in the sauce.
Cheesy Beef and Spinach Manicotti

The filling amount should be plenty to stuff 14 shells with maybe a small amount left over --- to remove the bitterness from the spinach, cook firstly according to package directions --- to save time you may cook the ground beef/spinach mixture up to step #4 and refrigerate for up to 2 days. For easier stuffing, warm the mixture in the microwave to just room temperature before adding in the mozzarella cheese and eggs, then proceed with recipe as stated --- ground beef or bulk Italian sausage may be used successfully. This recipe was developed and tested using both on different occasions. I prefer the Italian sausage meat, you could use half of each if desired --- also see my recipe #72308. -- posted by KITTENCAL

Baked Manicotti

Source: Cook's Illustrated
We prefer Barilla no-boil lasagna noodles for their delicate texture resembling fresh pasta. Note that Pasta Defino and Ronzoni brands contain only 12 no-boil noodles per package; the recipe requires 16 noodles. The manicotti can be prepared through step 5, covered with a sheet of parchment paper, wrapped in aluminum foil, and refrigerated for up to 3 days or frozen for up to 1 month. (If frozen, thaw the manicotti in the refrigerator for 1 to 2 days.) To bake, remove the parchment, replace the aluminum foil, and increase baking time to 1 to 1 1/4 hours. -- posted by Brookelynne26
