Mango Pudding

This was a back-of-the-fridge creation, belive it or not, that I think turned out well. Then again, I really like tofu, so if any adventurous non-vegetarians happen to try this, let me know what you think. It seems like a dessert dish, but its great for breakfast, too. -- posted by Vye367

Mango Ginger Sorbet ( Ice Cream Maker )

_Recipezaar_ has turned me into an ingredient scavenger. ;-) Seriously - when shopping, if I spy an unusual-to-me ingredient, I buy it (in this case the mango puree in the freezer case). Then comes the task of finding ways to use it. This simple recipe was adapted from a Daisy Martinez episode aired on PBS. Cook time includes 3 1/2 hours freeer time. -- posted by SusieQusie

Mango and Ginger Sorbet

I love Sorbet. It's great for getting rid of any old fruit that needs eating. So you can think of this recipe as a mold. What you need is a base syrup- the water and the sugar, a flavour- blended up fruit, lemon/lime juice, whatever. If you want you can also add a contrasting flavour, in this case, the ginger. You can use your imagination with this one, but as a base, you can't go wrong with mango and ginger- yum! -- posted by Lieutenant Ducky

Mango Lime Sangria

I don't usually drink wine, but tried this recipe and it could lead to me becoming a "winehead". This is such a great summer drink. This can be garnished with fresh mint or lavender. For some reason it would not recognize dry rose' wine, but that is what I used. -- posted by Sherrybeth

Due to my dietary requirements I am always on the lookout for healthy and low fat twists on the fatty meals I used to enjoy. We like burgers and we like curries and so that was the inspiration for this healthier turkey curry burger.
Ataulfo Mango Jam

Ataulfo mangoes are only available in the Toronto area from late March until September. I don't know what the availability is in other regions. They are 8 to 10 inches long with an oblong round-bottom shape and a gold-blushed yellow skin. The juicy flesh inside is yellowy-orange, creamy smooth, free of fibrous stringiness (which can set off allergies in people sensitive to stone fruits) and is described as the best thing to have fallen out of a tree since the apple observed by Isaac Newton. The flavour resembles a delectable combination of peach, banana,m pineapple and butter. They're incredibly sweet and loaded with vitamin c and dietary fibre. Look for them in your local Chinatown. Watch Corey Mintz of the Toronto Star (where I found the recipe) slice and peel a mango here: porkosity.blogspot.com/2008/04/mango-ectomy.html -- posted by Dreamer in Ontario

Mango and Sweet Pepper Salsa With Toasted Pepitas

From my hero's at Cook's Illustrated Summer 2008 (America's Test Kitchen). Pepitas are pumpkin seeds and usually can be found in the bulk foods area of your grocery or natural foods store. The recipe calls for bell pepper but I just saw some red sweet peppers at Whole Foods that would probably work really well. Cooking time is actually the resting time (in which the acid from the lime juice mellows the flavors). Pair this salsa with pork, chicken, or firm white fish. -- posted by LaJuneBug

Mango Garlic Rib Rub

I made this up with a few ingredients that I had in the house and it turned out great. I used country style ribs and grilled it on low. I usually like to slow cook ribs on the grill by placing the meat on one side with the burner off and heating the grill with the side with nothing on it, then browning some at the end. This takes hours and I didn't have time for that this time, but I'm sure it would have been even better. -- posted by Green Cuisine

Avocado, Banana and Mango Muffins

An unusual combination, to be sure, but one that looks so good I just had to share! I've recently discovered the wonders of avocados, and have been trying to find new ways to enjoy their heart-healthy benefits. Though I haven't yet tried these muffins (from the Kiwi Gardens B&B in Kailua-Kona, Hawaii), I will certainly do so the next time I have some extra avocados on hand. You can save some time by using thawed frozen mango chunks instead of fresh mango. -- posted by Lynne the Pirate Queen

Superfruit Smoothie

My absolute favorite smoothie - banana, kiwi, mango, peach, and clementine! When fresh fruit is in season, I like to play around with different combinations, but this is the one that I make the most. Not only does it taste absolutely amazing, but it is loaded with natural nutrition too; Vitamins B & C, potassium, dietary fiber, omega-3 F.A.s, antioxidants, calcium...much more wholesome (and yummier!) than a vitamin pill in my opinion. And because of the fiber and protein, it is filling enough to be a hearty snack or a meal substitute. Before you get too excited, a quick word of warning about the kiwi - if you eat too much at once it can make your mouth feel tingly and raw (yes... I've had this happen. I can't help myself!) I hope you like this smoothie as much as I do! :) -- posted by Oenophilly

Jazzy Fruit Salad

Fruit salad is one of my go to favorites to take to summer events. Light fresh and easy, you can always please a crowd. The color contrast between the tropical fruits and the bright berries will be an eye-catcher with the addition of ginger, lime and mint giving it jazzy finish that everyone will remember.
