			<description>This recipe is from 'jamies dinners' by Jamie Oliver. It makes a lovely starter, but can also be served with grilled prawns or satay chicken. Jamie says it's also lovely as a snack inside a wrap or flatbread. Even though the coconut may be a pain to prepare it's well worth it... However, you may also want to use 1 plastic container of fresh coconut pieces. That's what we used, it was probably less than a whole coconut, but I think it was enough. Although I haven't tried watercress yet, I assume it should work just as well. Jamie calls the salad Keralan, but as it contains cress, it isn't really a true salad from there. 			<description>I spend 7 hours today serving this delicious salad at a fiesta fundraiser at my daughter's school here in California.  Pico de Gallo is usually known as a type of salsa, but in this case, it is a popular fruit salad spiced with a red chili powder that is popular in Mexico. Sounds odd, but it's a delicious and addictive combination. You dice the fresh fruits into chunk size pieces and mix them together in any combination you like.  Today, we combined watermelon, mango, pineapple, cucumber and jicama. 			<description>I saw this sandwich on a menu at a restaurant, and wrote down the description. After some research I came up with this. I am convinced the restaurant sandwich couldn't have been better! Its an amazing dish! We left off the bun and placed all the ingredients on a plate, salad style.I know it would be out of this world on a hawaiian bun, but we can't have bread..( sigh)

This is not only healthy, but it is SO festive and colourful - my photo shows the one I made this Boxing Day (26th December), I usually add kiwi fruit too, but we had run out of them.......oooops! My quantities listed here make enough for 6 to 8 people, but this can be increased as well as reduced to suit personal requirements. I normally serve this with cr&amp;egrave;me fraiche or vanilla yoghurt, but its also wonderful when served naked, the salad that is, not me!
