Tropical Fruit Medley Soup or Dessert

This is so pretty and delicious! Cool soups are soothing, and easy on the palate. Serve in an assortment of glasses or teacups. A lovely array of tropical fruit! This is also pretty served in a shallow wide-rimmed bowl. Chill time of 30 minutes. -- posted by Manami

Tropical Pudding

From Cooking Light's 1991 Annual Cookbook. Quite different from those already posted. There is a chill time to allow the gelatin to set a bit but I have no idea how long that takes and this recipe did not state a time, so I did not factor that into prep or cook time. -- posted by the_cookie_lady

Stumbled upon this at epicurious and really wanted to see the response, if I could get any! I think they look yummy, and a nice alternative to sugar blasted Jell-O! Also: pretty!

PLEASE NOTE: you can't use fruits like pineapple, kiwi, or papaya, or the gelatin won't set! -- posted by Indigo!

Chocolate with a hint of ginger and mango...certainly a new twist on an old favorite. I have also added 1/2 cup coconut to these in the past with no change in the ingredients and it turned out fine.

Christmas Morning Jewelled Muffin Mix in a Jar

Delightful festive spiced muffins, studded with jewel coloured fruit and nuts - just the thing for Christmas morning! I love all types of "mixes" in a jar! Soups, biscuits, spices, cookies and cake mixes etc! However, this muffin mix is my favourite - it makes a wonderful gift, or I make it for us, as it looks so pretty & festive sitting in the kitchen waiting to be baked! Try to use really colourful dried fruits with a good mix of tastes and textures. For those of you who cannot source Mixed Spice, an essential ingredient, I have a recipe posted on Zaar: Recipe #266688. This muffin mix is always popular as a gift, and I do try to find unusual shaped jars and hand-made paper or card for the baking instructions. A wooden spoon tied around the neck of the jar is another winning idea - and don't forget the Holly sprig! -- posted by French Tart

Mango Float

One of my favorite Filipino deserts. The recipe comes from my Filipino friend and helper, Marina. This desert can be made with two layers of filling or three depending on the size of your baking pan. I usually use a smaller glass pan with more layers, because I like the layers, it fits in the refrigerator better, and with the glass you can see the pretty layers. :) Cooking time doesn't include the time to chill in the refrigerator or freezer. Serving size can vary by the size dish you use. You can use a large dish with only 1 or 2 layers and take it to a potluck to feed many or a small dish for the family. I put the serving size for a smaller dish with 3 layers. -- posted by Enjolinfam

Creamy Mango Sorbet

When I bought my home in Florida, I was blessed with a mature mango tree in my backyard. While looking for mango recipes on the web I came across this recipe. To add to the joy of the simplicity of this recipe, You don't even need an ice cream machine. All it takes is the ingredients, a plastic freezer storage bag, and just a little attention. This recipe can also be made with any mangoes you may be saving in the freezer, and Splenda may be substituted for the sugar. -- posted by Doc Joe

Mango Lassi - Simplest & Quickest

When you enjoy what you like, you should find out how it's made and help spread the word to people who might not have had the chance to try! I read over the others here on Recipezaar site and thought what was needed is a simple, effective one for everyone's busy lifestyle. A couple of thoughts:
- The main thing for this recipe is the 2:1:1 ratio. If you want to increase or decrease it due to your available ingredients (or if you don't have measuring instruments), just use that proportion with whatever container you have handy. In my case, due to the size of my blender, I made four smaller batches and poured into a one gallon jug to take to a get-together.
- Some of the other recipes added sugar or sweetener, I found that with the type of canned pulp that I purchased, it was already sufficiently sweet that no additional sugar needed to be added. You may want to taste your batch and adjust to your liking if you can not get the sweetened variety.
- Do I need to say that the Yogurt should be fresh? If it is not, there is a chance that if it is sour or flavored, the taste will come out quite different. Who knows, maybe it'll be to your preference!
- If you want your to be more exotic, you can add more cardamom (but not too much to overpower the mango flavor) or add rose water.
- Fresh mangoes versus canned - depends if you want to take the risk of finding non-fibrous or stringy mangoes and ones that are just ripe. If you want to make this quick and easy, go with uniform quality of the canned. This will also free you to being able to make the dish any time of the year!
- Obviously you can also freeze and make popsicles if you have the appropriate paraphernalia. This could be a sneaky way for it to become a kid-pleaser.

Another variation is to add cut up pieces of fruit and have a fruit salad dessert with the mango lassi as the base. Some people like it with bananas, others with strawberries (like my wife), or you can go pineapple, apples, mandarins, etc.

Enjoy! -- posted by Amateur Know-What-I-Like Chef

Mango Custard Tart

As I continue to enter dessert recipes from our recent cruise, I am seeing a definite & freq trend for make-ahead combos using fruits w/a custard. This recipe from *Carnival Creations* by Cyrus Marfatia (Exec Chef of Carnival Cruise Lines) takes us to the far-eastern cuisines of India, Malaysia & Thailand. Altho the recipe suggests the French influence of Napoleon Brandy, my DH would look upon that as a "sinful waste" & I will use a more std cooking brandy. (Times have been estimated & do not include cooling times) *Enjoy* ! -- posted by twissis

"Mangoes are a wonderful ingredient for desserts -- their distinctive aroma and flavor blends so well with other components. Here, mango puree infuses baked custards. Don’t bother unmolding them, and serve chilled, with a dollop of whipped topping and a couple of mango slices, if you so desire." -- posted by sexymommalucas

The Caribbean Mango Fool

From my DD's Children's World Cookbook & Posted for ZWT-5. A very healthy, slushy fruit drink that can also be served as a dessert. Although coconut in fresh, dried or liquid form, is an important ingredient in Caribbean Cooking, this recipe does not depend on it if there is an allergy or personal preference not to use it.
Mangoes Foster With Creme Fraiche (By Bobby Flay)

I first saw Bobby Flay prepare this on the Food Network in 2007. It was a featured recipe during a segment called "Boy Meets Grill" in the episode called Dinner on the Grill. It looked so good so I just had to try it. It was an immediate hit with my family. I have made this on the grill (as Bobby Flay prepared it) as well as on my stovetop, and it comes out fantastic each time. -- posted by NorthwestGal

Tropical Fruity Jello

To make jello a little more interesting, I added my favourite tropical fruits and it worked beautifully! This is so refreshing on a hot day and the low sugar version is great for waistline-watchers. I use sugar free jello but feel free to use a small packet of regular peach jello. I have been told that fresh pineapple prevents gelatin from setting so only use canned for this recipe.
Light Mango Tart

A light, moist tart that really compliments the flavor of ripe mangoes. This is a very easy recipe, very quick to get together and with no uncommon ingredients. I make this for simple family weekday dinners and weekend lunches with whatever fruit is in season - I've tried this recipe with peeled peaches and with nectarines as well and I imagine that strawberries would be great, too! I got this recipe from a friend who says she got it from a magazine. To the ingredients listed, I also like to add a tablespoon or two of coarsely chopped or processed almonds to give the tart a bit of a crunch. -- posted by ChefEmma
