			<description>I created this recipe 3 years ago when I decided to brine a turkey for the first time.  I wasn't happy with any of the recipes I found online.  Now I would never fix a turkey any other way.  It infuses flavor throughout the bird.  I make this brine the day before I need it so it has time to cool in the refrigerator.  Brining time will depend on the size of your turkey or chicken.  We usually do an 18 lb. bird &amp;amp; I brine it for 3 days.  This is equally good for birds roasted in the oven or smoked on the grill.  The number of servings and cooking time will depend on the size bird you are cooking. 			<description>This was in a small cookbook I bought at a Christmas Holiday Sale, probably 10 years back. It was submitted by Ellen Yatze, from Ft. Myers Florida.  Ellen, it is a great soup! It is funny how going through my old recipe boxes, I have all these old hand written recipes, I have yet to type up - ones I simply forgot about. The title says it all. But what I like about this is how quick it cooks up.  Other than chopping your chicken (I used a store bought rotisserie) and basil, and cooking the bacon, the rest is open the can or jar and add to the pot. Simmer for 15 minutes and you have a hearty soup. 			<description>This traditional Italian dish is originally made with veal.  Turkey is the next best thing and this actually tastes and looks quite fancy.  You can make everything ahead of time but ONLY assemble at the last minute.  Its just great to serve at buffets, you'd never imagine a can of tuna could be transformed to such heights!  Serve with lots of salad and tomatoes and  some cold new potatoes. 			<description>This is a recipe I adapted from Martha Stewart's Everday Food. It is a stovetop version of a classic southern casserole. I am usually suspicious of so called &amp;quot;quick&amp;quot; versions of classics and even more so of &amp;quot;light&amp;quot; adaptations, but this one was right on the money. The texture and flavor are reminiscent of Boston Market chicken pot pie. There is no cream of chicken soup and you can have dinner on the table in about 45 minutes. The original recipe called for whole wheat biscuits, but I made Bisquick biscuits with melted butter generously brushed on top (makes a golden brown crust). This recipe would be delicious with turkey and can be made with cooked chicken or turkey as well.
