Twice-Baked Potato Casserole With Green Chiles

I created these to serve alongside grilled chipotle chicken breasts and a salad. Wouldn't be a bad addition to any meat dish. These taste more sinful than they actually are! I typically use either red or russet potatoes, though I imagine any type would be fine. This can also be made in the microwave for a pretty quick side dish. Since there's only two of us eating, I typically freeze half for another dinner. -- posted by <a href="http://www.recipezaar.com/member/1433633">Robyn's Cookin'</a>

Grandma's Sweet Potato Crunch (Also Called Sweet Potato Souffle)

My grandma did not like marshmallows on her sweet potatoes, but she would make it half and half for the kids. When she would make this for the holidays there was always a little Maker's Mark in it, but you can also leave the bourbon out if you don't have any on hand. I make mine just like she always did, and I still sneak into the fridge with a spoon and go after these potatoes! This recipe makes enough for about 6-8 people, but we usually double it since it's so good cold. -- posted by <a href="http://www.recipezaar.com/member/886603">CharlieGal</a>

I was at a friends house helping her cook a Moroccan meal, and she needed a side dish of baby red and white potatoes and some vegetables.
Sweet Savory and Spicy Potato Salad

My friend Tricia made this for a cookout and I fell in love! It is the only potato salad I will make from now on. My husband never eats potato sald. He says &quot; If there is meat around, why waste the time on side dishes?&quot; He ate two HUGE servings of this......it is THAT good! If you cannot find candied jalapenos, just use one small fresh jalapeno (seeded and minced) and a tablespoon of sugar....it is just as good. We love curry, so we add more curry powder. Taste it and customize it to your taste!

Twice-Baked Potatoes

These twice-baked potatoes, stuffed with cheddar cheese and bacon, are just the way my mother used to make them. I always loved the addition of the green onions. When you are feeling indulgent (these potatoes may not be for the weight conscious!) and are in the mood for a good steak and potatoes, try these! They are also good served alongside prime rib, chicken, or pork (even good all by themselves). Double or triple the recipe for your dinner parties. And, they can even be prepared upto 2 days ahead...just cover with plastic wrap and refrigerate until ready to do the final bake. -- posted by <a href="http://www.recipezaar.com/member/64780">Alan in SW Florida</a>

Grilled Asparagus and Sweet Potato Miso Soup

Although you can use American sweet potato, it is best with Japanese sweet potato if you can find it. Besides asparagus and sweet potato, you can certainly add slices of kabocha and green beans as well. This is a very basic miso soup and you can add other ingredients as well. This makes small 4 servings ie what I call Japanese serving size, less than 1 cup per person. -- posted by <a href="http://www.recipezaar.com/member/61569">Rinshinomori</a>

Potato Tortillas

Being married to an Idaho boy, we eat potatoes a lot and I am constantly searching for ways to use up the huge boxes of potatoes his family sends us. Luckily, after all these years, I remembered when I was living in California I went to dinner at someones house where they were using the leftover mashed potatoes rolled up in tortillas for dinner.
The Mama's Thanksgiving Maple Sweet Potatoes and Apples

This recipe is DEMANDED when we have family dinners at my Mama's house. It's delicious! My sister and I actually got into an arguement over who got the leftovers. They're sweet but they do not have the goopy marshmallow junk on them. They're the only ones that I eat. It was created by my Mama (Sheryl) so all credit goes to her on this one.
Celery Black Grape and Blue Cheese Potato Salad

This combination is genius and works incredibly well if I do say so myself! Every element of the dish complements the next. One of those things I make sometimes and live off it for days! Crunchy big chunks of refreshing celery set in blue cheese dressing with the sweetness of black grapes to offset both. The potatoes are a great foil to this and prevent it from being too rich. A great dish to serve at buffets or pot luck dinners Its a cheeseboard lovers dream and looks colourful and presentable too -- posted by <a href="http://www.recipezaar.com/member/1431918">robd16</a>

Sweet Potato Turkey Hash

A happy accident when trying to make a healthy and filling brunch, made from combining a few different existing recipes. A good mix of veggies and meat with lots of flavor. Safe for South Beach phase 2 and good if you aren't on South Beach, too. Could also be a good way to use up Thanksgiving leftovers (mashed sweet potatoes could be used as well as diced turkey breast). -- posted by <a href="http://www.recipezaar.com/member/1197229">Cookalicious</a>

Creamy Hash Brown Potato Casserole

This hash brown potato casserole recipe is the best I've ever had. The extra sour cream really makes it moist unlike other, drier recipes! The Velveeta shredded cheese is very important. If you can't find it in a superstore retailer's grocery section, try a dedicated grocery store.
Rachel's Super Easy &amp; Fast Home Fries

Time-consuming home fries on my watch? Never! I had leftover potato &quot;meat&quot; from making potato skins so I made home fries with them, from 8 small potatoes without skins so that probably equals about 4 regular potatoes and 6 small ones. If you plan ahead on making home fries for breakfast, then you can pre-bake potatoes for this. Please note that cooking time does not account for baking the potatoes! This assumes that you have leftover baked potatoes and are using them this way. Raw or boiled potatoes will not work. This makes 1 large serving, if you plan on making enough for your family pre-bake more potatoes. NOTE: The amounts shown aren't an exact science, more to give you an idea and show that home fries can be made quickly :) -- posted by <a href="http://www.recipezaar.com/member/1375473">the80srule</a>

Sarasota's Easy Leftover Turkey, Leek and Potato Tart

A unique way to use up turkey, mashed potatoes and cranberry sauce. Add a couple of fresh ingredients and this goes together in no time. Now, if like many, who have steamed green beans for Thanksgiving, try reinventing them by a quick saute with shallots, mushrooms, and a little balsamic vinegar. Just 4-5 minutes and you have a great way to use up those beans and it makes a great side dish with this.
Whipped Sweet Potatoes and Bananas With Honey

From Tyler Florence, Ultimate Thanksgiving. I like the idea of using banana and honey instead of sugar for the sweetness. I can't stand those yucky, overly sweet sweet potatoes that we here in the south usually serve. This is a better option for those of us who enjoy sweet potatoes without all the sugar. I did retain the pecan topping but you can probably cut it back to 1/2 cup of brown sugar.
