Macaroni Salad

This is an easy and low-fat pasta salad, enjoyable with grilled goods, on a picnic or even as side dish. If it has to be prepared beforehand, try to add the yoghurt and mustard shortly before serving, otherwise it gets dry.

Preparation time does not include the time needed for cooking and cooling of the pasta. -- posted by lacriath

Picnic Pasta Salad

A Caesar pasta salad with lots of fresh veggies, chicken, and cheese. Very tasty and hearty. Easy to put together, especially if you use a rotisserie chicken. Is a meal in itself. Requested for any warm weather get-together. No mayo, so it keeps better on warm days. Is easily doubled for a crowd. -- posted by Chef #588563

Poppy's Pasta Salad

This tantalizing dish is the perfect solution for busy ladies (like me) who need quick, easy dishes to take to summer cook-outs, church dinners, etc.

This is my own variation of the hundreds of pasta salads I've tasted over the years. I get raves from every one, especially my Grandfather....thus the name "Poppy's Pasta Salad."

The extra care taken in preparing the vegetables (as you'll see) makes this recipe great for people with Diverticulitis. -- posted by Josephina

Quick and Tasty Shrimp Salad

This is a delicious chilled salad to serve as a side at potluck's, barbecue's, etc. It goes great with hamburgers on the grill and we like it a lot as a side to light chicken or pork dishes. I always keep the ingredients on hand so I can make it in a pinch. Prep time does not include chill time. All ingredients can be altered to suit your tastes. This also doubles nicely. Enjoy! -- posted by ChicagoRN

Fresh from the Garden Pasta Salad

This is a quick and easy recipe I've used before when I want to bring something to a cook-out with our family. This is a colorful, healthy meal that takes a limited amount of time to prepare -- can be done a day ahead of time which just makes everything taste that much better!! It's also something relatively inexpensive if you have a garden and need a way to use up some vegetables quickly. I put my vegetables in the pot to "steam" where they soften up a bit. This also doesn't have any mayonnaise so you don't need to worry about keeping it cold if you're going to be outside. If you prefer the "cool-down method" you can rinse pasta off in cold water, add all ingredients, mix in Italian dressing, transfer to storage bowl with lid and refrigerate immediately. -- posted by KyAmy

Debbie's Pasta Salad - Little Bit of This, Little Bit of That

I wanted to make a pasta salad so I used a little bit of this from different recipes as well as a little bit of that to come up with a recipe that had the ingredients that my family love's - thus this recipe was created and has now become a keeper. My family inhaled this and it is almost gone over night. I just guessed on the serving amount, it makes a lot. Prep time is approximate and does not include refrigeration over night. If I had a green pepper I would have added that as well. -- posted by Mainely Debbie

This is a more exciting spin on a side dish I had at a restaurant once. I eat this for lunch all by itself!
This pasta salad is a lot like those you might find at a pizza restaurant on their salad buffet. Everyone loves this! I always get asked for the recipe and there is never any left. If I take it to a cook-out, this is the one item that is talked about most. You can play with this a little bit by adding other vegetables if you wish or leave out the pepperoni and maybe add something else instead. Let this one marinate overnight.
Killer Pasta Salad

Oil/vinegar based pasta salad, of my own creation. Good stuff. The carrots add a bit of sweetness, the sunflower seeds a nice crunch and nutiness, the garlic and herb seasoning ( I think it was Good Seasons brand) add a different kind of flavor, and the pasta a nice array of shapes and colors.I use one box of wacky shaped pasta like cellantani, and one box of Tri-colored rotini. This makes an enormous amount of pasta salad, so you might want to half the recipe. We live on this stuff in the summer. -- posted by Retro Kali

Sunflower Crunch Salad (With Ramen!)

Ok - this is one of those recipes that sounds questionable & becomes more appealing when the budget closes in. We used to make this a hundred years ago when we were in college on tight budgets... Time passed, the recipe was lost & today it showed up in an email from The Witchita Eagle!
It's cheap, not entirely bad for you with the fresh vegies (& nuts) & tastes unbelievably good! LOL - am adding cabbage to the shopping list because mine in the garden are just too small!
There was no serving size listed so I opted for 4 to 6 - you'll see. Awesome potluck or picnic dish - just mix vegies, ramen & dressing on site & serve. -- posted by Buster's friend

I LOVE pesto pasta, but it seems whenever I get it from the deli, it's either too salty or too oily or both. Also, homemade pesto pasta salads tend to rely on jarred pesto sauce, all of which I find are also too oily and/or salty. Well, you know what they say about what to do if you want something done right, and this recipe is the result. I hope you enjoy it as much as I do! -- posted by allimarie

Tuna Pasta Salad

This is a quick and simple lunch or light supper from 2009 Taste of Home Annual Recipes (courtesy of Sue Gronholz, Beaver Dam, Wisconsin). I doubled the recipe to have leftovers during the week. I followed the recipe except I used whole wheat pasta shells, red onion, regular mayonnaise (1 cup instead of 2 cups), and I tripled the peas. I also used 1/2 teaspoon salt and decided to add lemon pepper seasoning at the end for flavor. Works great when you're hungry now and need something quick. Yummy! -- posted by AmyZoe

Baked Macaroni & Cheese

Here's a classic mac & cheese recipe given to me by my (would-have-been) mother-in-law many years ago. It has become a family favorite, and I get asked to make it nearly every Thanksgiving and Christmas. It makes enough to feed a small army!

It's best to use block cheese and grate it yourself, to get the best cheese flavor.

Leftovers can be easily cut into squares, wrapped with wax paper and frozen. Then just take one out and nuke it for a great side to go with a sandwich. -- posted by Chef #1299589

This is quick and easy to prepare- a great meal with salad in the summer or with more substantial sides in the winter. I like that it is a complete meal, without the fatty crust associated with a quiche. If you do not have Cavenders seasoning, pepper will do.
Peppy Pasta Picnic Salad

Colorful, healthy salad. Have this salad as one to be served along side a green salad and your favorite BBQ. Do not mix your meat and Yogurt dressing with the pasta ingredients until you are at your picnic- it only takes a minute to toss them together. I recommend that you use "HOT" pepperoni sticks not the usual pizza pepperoni. If you don't like too much spice use medium pepperoni but this salad is meant to be spicy or it will be boring. If you do not want to be bothered roasting your garlic just crush it and saute it in a tsp butter for 3 minutes. I say 6 servings this would be as a side salad and depends on the appetites of your group -- posted by Bergy

This is a recipe that is easy to make from ingredients that are often in the fridge/ storecupboard. It is a great accompaniment to a picnic, backyard bbq or anywhere you need multiple dishes that are easy to make and go well with a variety of foods. Super with chicken or sandwiches. If you substitute tri-color pasta it makes it even more colorful when matched with the fresh vegetables.
You can add onions for more flavor but it is good without too.
