			<description>I am posting this recipe because it was in a cookbook I received from NE Lady in the cookbook swap March 2009.  I was intrigued by the picture in the cookbook; however, mine didn't turn out looking like the picture!  I had way too many noodles and too little broth.  The cookbook, &amp;quot;Soups for Any Body&amp;quot; states that it is a mix between a soup and a stew.  Mine was pretty thick, so I would add more beef stock to the recipe.  I'd also serve more soy sauce with each serving, and allow each diner to add their hot pepper oil.  If you let your meat marinate while you chop the vegetables, it gets on the table pretty quickly! It makes a welcome change from all the special celebration food at this time of year. It is traditionally made with the Christmas capon carcass, but chicken stock works equally well. This recipe calls for cappeletti, which means &amp;quot;little hat&amp;quot;. The difference between cappelletti, from Modena, and tortellini, from Bologna, lies in the stuffing and not in the form. According to the Modenese, cappelletti are shaped like hats: On the other hand, Giuseppe Cerri, whom the Bolognese credit with the happy invention of the tortellino, claimed to have been inspired by a vision of Venuss navel. We also had to make a few changes with the soup but that is when we are making it for the whole home, as we have chicken soup twice a day! When we make it for the Cafe - it is the real thing. Adapted from 'Pasta Cooking' by Parragon....  the original recipe called for spinach, which I didn't fancy, so I subbed zucchini. I get the impression that our zucchini are generally a bit smaller than those in the Northern hemisphere, so balance the amount used with your other vegetables, just feel your way!  You don't want your soup to be over-loaded with any one vegetable.

			<description>A couple of notes about this recipe. 
First of all, this is a recipe for one person. I know that doesn't seem true, but the 4 coups of water boil down really fast. 
Secondly, I usually soak my lentils beforehand because it makes them cook quicker. 
Third, I put &amp;quot;2 oz&amp;quot; of pasta, because that's usually the serving size for one person for pasta... sometimes it's 1/4 of a cup, and sometimes it's more. Just go with what the box says, or whatever you feel is good for you.

Adding the squash makes the whole thing rich and smooth, with a color and consistency similar to Kraft Mac'N'Cheese!  Delicious!  Even my daughters loved it! (3 yrs &amp;amp; 7 mos) I just took the chicken out for my baby girl, mashed it up, and she couldn't have enough!

			<description>An &amp;quot;Anything Goes&amp;quot; would-be Korean soup.  But if you don't have basic korean ingredients around the home, then I include my typical substitutions.

* Kochukaru and Kochujang are typical Korean ingredients for Hot Pepper Flakes and Hot Pepper Paste (in that order)
* If you do not have these available, I have included Cayenne Pepper and Maggi Sweet Chili Sauce as you can get the at most grocery stores

I always make my recipe #407601 they really make a difference in the soup, 1 1/2 this recipe as you need more noodles.  I also use recipe#404067 for the potatoes, cut back a bit on the butter and milk when using in soup because all the liquid already gives it great flavor. 			<description>A vegan adaptation of a Cantonese-American favorite.  Not hard to make but takes some time to stuff the wontons.  

Serve the wontons in a mild, low sodium vegetable broth (chicken flavor if possible).

You can double or triple the wontons recipe, lay them out on a cookie sheet, and freeze them, then bag them and take them out to make soup in small quantities.
