Brie & Spiced Pear Paste Sandwich

A delicious sandwich made with your choice of bread, slices of brie, Maggie Beer's scrumptious Spiced Pear Paste and baby spinach leaves. The first time I made this I used Maggie Beer's equally delicious Apple and Rosemary Paste. On that occasion, I used sour dough bread, but I've also made this sandwich with ciabatta. I've made it as a take-to-work sandwich, which has meant that by the time I have eaten it, the brie has been wonderfully melted - making the use of margarine or butter totally unnecessary. Since making this sandwich the first time - a serendipitous creation: it was simply what I had on hand - I've added chopped walnuts as I love the textural variety that they bring to the sandwich. This sandwich would, I believe, also be delicious pan-fried, though I've not yet tried it that way. Maggie Beer is an Australian chef and writer and she produces many, many food products and drinks. Her products are available online: http://www.maggiebeer.com.au/home/. For Australian Zaar members, her Spiced Pear Paste should be readily available from any good delicatessen, greengrocer's or supermarket. Her pastes might seem expensive but a little bit goes a long way when it comes to the flavour they bring to a sandwich. And I haven't yet even begun to explore where else I might use them. Zaar would not allow me to use Maggie Beer's Spiced Pear Paste as an ingredient, so in the ingredients I have listed slices of pear and I have suggested some spices that could be added if you are using slices of pear. Add one or more of these, according to your taste preferences. -- posted by bluemoon downunder

Ricotta and Pine Nut Cheesecakes

Delicious individual cheesecakes made in a muffin pan. I found this recipe in the April 2008 issue of the Australian 'Good Taste' magazine. This recipe can be made ahead to the end of step 4 up to a day ahead. If you've not used Greek yoghurt before, DO try it: it's amazingly, creamily delicious! And when it comes to yoghurt, I just cannot eat low-fat or reduced fat varieties. There's just NO comparison between their watery flavourlessness and Greek yoghurt. The stated cooking time of 20 minutes does not include the cooling and 11/2 hours chilling time. -- posted by bluemoon downunder

Chicken and Ricotta Sausage Rolls

I haven't made these yet but I was keen to post this recipe as soon as I spotted it in the current issue of the Australian magazine 'New Idea' because I love Fergusson Plarre's (naughty but delicious) spinach and ricotta rolls and this recipe could so very easily be adapted to include spinach by perhaps halving the chicken mince and adding some spinach in its place. Anyway, I'm looking forward to experimenting with the recipe and was keen to post it here where I can find it! The lemon mayonnaise also sounds very tasty! If you're not keen on citrus flavours, feel free to serve with your own choice of sauce or dip. These would, I think taste good with Tzatziki. This recipe featured as part of an easy-to-prepare Melbourne Cup lunch menu. To the best of my knowledge, Melbourne is the only city in the world to have a holiday for a horse race, the first Tuesday in November. And what better place than Zaar to test the truth or otherwise of that statement! And to answer --Nimz--'s query as to why these are called "sausage rolls", I'd say that the term "sausage roll" has become a generic term for anything resembling a sausage roll in appearance. I have two other sausage-less "sausage rolls" posted on Zaar: Recipe #169225 and Recipe #139699. -- posted by bluemoon downunder

Spam’s Blueberry Cheese Stuff

SPAM at it’s best. SPAM, Blueberries and cheese how can you go wrong. If you don’t tell anyone SPAM is in it, they would never know. This was my Mom’s recipe from 40 plus years ago. I don’t know where she got it from but all of us kids liked it and now my grandkids love it too. It is quick and easy. It can be used for any meal and as a snack, served warm or cold. Can be a casserole or made as any size muffins. This can easily be doubled. -- posted by Cook'n'Kootsz

Huey's Mini Leek Tarts

Adapted from Huey's recipe for Mini Leek Tarts, which he has classified as a SNACK ATTACK recipe. Huey (Iain Hewitson) is an Australian chef: he has written several cooking books and hosts a popular TV cooking show each weekday. If you preferred, you could use this recipe to make one larger tart, but if you do this, remember to adjust the cooking times. I have added onion and garlic to Huey's original recipe as the combination of leeks, onions and garlic - if you have not tried it - is truly delicious. Australian Tasty Cheese is a yellow, fairly flavoursome cheese used a lot in cooking. Vary the cheese to suit what's on hand and your taste preferences. -- posted by bluemoon downunder

Ham, Cheese and Mushroom Quiche

I've adapted this recipe from one which featured in the pre-Christmas 2008 Australian magazine 'New Idea' as an excellent way to give new life to various leftovers from the Christmas Day meal, in this case, leftover leg ham. This recipe can, of course, be made at any time of year, with leftover ham or ham bought specifically for making this recipe. The preparation time below includes the time needed to bake and cool the pastry case.
Vampire Killer Cheese Spread Mix

When my best friend moved away, her mom's good friend made a cheese spread for the going-away party that was so good I spent an entire year trying to find where she got the mix. I finally found it online, but at $12.50 each after shipping, I decided I could probably come close enough on my own. So, with a little experimentation, this is what I came up with. I warn you, it's quite addicting and you'll want to stay a polite distance from others when speaking after you eat it. You can put the dry ingredients together and store them in ziploc bags or small containers so that you can just pull out a mix and add it to the wet ingredients in a snap. I serve it with crackers or beer bread. It can also be rolled into a cheese ball or log for a nice presentation if you're feeling ambitious. -- posted by Reeces Pieces

Roast Beef, Blue Cheese and Caramelised Onion Bagels

Adapted from a recipe in the pre-Christmas issue of the Australian magazine 'New Idea' which contained several recipes which make good use of Christmas day leftovers. This recipe could, of course, be made at any time of year when you have left over roast beef. At other times, you could always buy sliced roast beef at your local deli. You can either halve your bagels and toast the halves, or simply warm them in the oven. Whichever you prefer. :) And if you know you like lots of mayonnaise or dressing on burgers or bagels, consider increasing the quantities of the cheese and the mayonnaise. The other recipes posted from this collection are Recipe #344949, Recipe #345416 and Recipe #345446. -- posted by bluemoon downunder

This I got from another recipe exchange site a few years back now. Just try it! It's addictive! I've brought this appetizer to many parties & it always does very well! Goes well with what ever cracker you like. You can adjust the hotness of the horseradish as desired. I originally found it on this site, however made a couple minor changes, and have since shared it too many times to count. Very easily made into single sevings and can be frozen for later serving. Also a good idea for "Portion Control". The first time I made this, my husband ate the whole pan. YES! THE WHOLE PAN!

From Bon Appétit, August 2003 - Enter the tart - light, delicate, and fresh.
Tuna Cheese Spread

Who knew that curry and tuna would meld so well together? I used a lemon and pepper tuna and dipped it with roasted garlic italian bread. Serve this on crackers, stuffed in a tomato, or in a sandwich. I found this recipe in Potlucks, Parties, and Barbecues/Taste of Home from Dorothy Anderson of Ottawa, Kansas. Double the recipe if serving a crowd or just enjoy for lunch.

12/5/09 I made this again today (I came across the recipe again on another website), and I doubled the amount of tuna and added some lemon pepper and a can of garbanzo beans. I would add cucumber if I had some. YUMMY! More of a lunch than a dip. I enjoyed it on Ritz Crackers, but feel free to have it as a sandwich filling, stuffed in a tomato, or with carrot and celery sticks. -- posted by AmyZoe

Scottish Cheddar Cheese and Spring Onion Tea-Time Scones

Another one of my Scottish grandmother's recipes! I have several cheese scone recipes posted on Zaar, but this one is one of my favourites. Spring onions are also called green onions or scallions. My mum still makes these regularly and serves them filled with cream cheese (Boursin is great!) and cooked ham, a tea-time scone sandwich! Try to use a mature Scottish cheddar - my favourite comes from the Isle of Mull, but any mature farmhouse cheddar cheese will work. Another idea is to make mini versions of these scones for delightful appetisers, spread them with a filling of your choice - very welcome with a chilled wine or sherry! -- posted by French Tart

Chorizo and Halloumi Skewers

A yummy-sounding recipe from the current issue of the Australian magazine 'super food ideas'. You'll need 8 pre-soaked wooden bamboo skewers. Feel free to vary the olives in this recipe. I haven't made these yet but I'd be inclined to use unpitted kalamata olives or perhaps half and half unpitted kalamata olives and the suggested pimento-stuffed green olives. I've suggested that these could be served at a picnic, if you were picnicking where there were BBQs. They could be made up to the end of step 1. For serving at a home BBQ, they could of course also be prepared to that stage and BBQd just before you are ready to serve them. -- posted by bluemoon downunder

Rocket and Broad Bean Potatoes

Baked potatoes stuffed with broad beans, rocket (or baby spinach leaves), tangy blue cheese, garlic and basil; and if it takes your fancy, topped with chopped bacon! Adapted from a recipe on some 'Good for You' cards from International Masters: a series focussing on health and nutrition. I am intrigued that 'broad beans' are not in the Zaar Kitchen Dictionary. So, some information about broad beans! From Wikepedia: broad beans have a long tradition of cultivation in Old World agriculture, being among the most ancient plants in cultivation and also among the easiest to grow. It is believed that along with lentils, peas, and chickpeas, they became part of the eastern Mediterranean diet in around 6000 BC or earlier" Reading that you'd expect to find them in the Zaar Dictionary! Not so! The entry in the Cook's Thesaurus reads "fava bean = broad bean = butter bean = Windsor bean = horse bean = English bean = fool = foul = ful = feve = faba = haba = habas". And my recipe card says "Broad beans are a tasty, almost meaty-flavoured bean that are full of nutritional benefits. Broad beans are a great source of protein and fibre and also contain vitamins A and B and zinc, iron and folate. They are available fresh or frozen - if using the fresh beans, you will need to cook them lightly in boiling water to soften them before blending them with the rocket". Obviously, you could use other cheeses instead of the blue cheese. I've made these several times and have used low-fat feta (which I love), and I've also added a handful of pine-nuts in step 3. . Be guided by your taste preferences. -- posted by bluemoon downunder

Grilled Steak Tacos With Avocado Salsa

Some of my friends got together and decided to cook me a special meal before the end of tax season. So they would check out my mail, for my magazines and then they would replace them a day or two later and I was none the wiser. The dietician, Allison, was the chief conspirator and they were able to pull it off! She loves Mexican food and has been teaching me all about it. They made me these at about 2:30 yesterday afternoon and were they delicious. :) We had a ball! There were just a few of us and then about 5pm I went back to work! They then gave me a copy and asked me to check here on zaar and if it wasn't would I post it & voilá!! The recipe is From: Hotel Cooking Schools in F&W Magazine, May 2009 edition.Chef Gonzalo Martinez grills the chorizo, the cheese and even the chiles in the salsa (and it does make a difference!). His Chef tip is to thinly slice the flank steak across the grain to keep it tender.(Yummy) ;) -- posted by Manami

Kat's 7 Layer Dip

This is my summer "Bring a dish" favorite. The way I make it, I only have 6 layers. This recipe is made without beans, but can easily be adapted for those who want to use beans.

I love this recipe. It has a great light taste and is very easy to customize to your personal preferences. It's always a big hit. I got this recipe from my sister, who got it from someone else. -- posted by Chef #1071114

Cheese-Stuffed Potatoes/Yogurt-Spice/Sesame Seed Crust

If you want to study the art of meatless barbecue, India is the place to do it. So says Steve Raichlen in his Globe-Trotter Guide to BBQ.This nation of more than a billion people has more vegetarians than there are people in the USA. Over the centuries, Indian grill masters have evolved a higly sophisticated style of vegetarian barbecue - dishes bursting with flavor (not to mention dairy and grain proteins). Their grilling is so complex and satisfying, you'll never miss the meat! Tandoori "aloo" potato - turns up at grill parlors throughout northern India. The best Raichlen has ever tasted came from the landmark restaurant Moti Mahal in Delhi, the potatoes were packed with cheese, slathered with spice paste, and crusted with sesame seeds. What's not to like? If unable to find the yogurt for some reason, place regular yogurt in cheesecloth-lined strainer set over a large bowl. Cover and chill overnight to drain & voilá! Bon Appetit Magazine, July 2009 edition. There are cooling times that vary - depending on when you serve these wonderful potatoes.:) -- posted by Manami

Baked Macaroni & Cheese

Here's a classic mac & cheese recipe given to me by my (would-have-been) mother-in-law many years ago. It has become a family favorite, and I get asked to make it nearly every Thanksgiving and Christmas. It makes enough to feed a small army!

It's best to use block cheese and grate it yourself, to get the best cheese flavor.

Leftovers can be easily cut into squares, wrapped with wax paper and frozen. Then just take one out and nuke it for a great side to go with a sandwich. -- posted by Chef #1299589

Little Wild Sorrel and Herb Tarts With Melted Goat's Cheese

A delicious and different way to use sorrel leaves - sorrel is usually used in soup and omelette recipes. These little herb tarts are so summery and make wonderful picnic food, as well as interesting appetisers. I have wild, woodland and cultivated sorrel in my garden, but prefer the tangy almost lemon and vinegar taste of wild sorrel leaves in these little tarts. Serve these warm or at room temperature with lightly dressed salad leaves and a glass of crisp, chilled Chablis or Chardonnay. Notes on using sorrel leaves: Sorrel is one of those ingredients that feature all too rarely in our kitchens, yet its bite and acidity make it one of summer's top temptations. When you're cooking the larger, mature leaves, strip out and discard the stalks, just as you would with spinach, before cooking. Avoid aluminium or cast-iron pans, though, because the oxalic acid in the leaves reacts with the metal and affects the flavour. -- posted by French Tart

They have stayed with us a couple of times now and love this part of SW France, and the food and wine! They grow olives and avocados, and regularly send me a selection of "California Growers" recipe leaflets, magazines and cookbooks, as well as a box of avocados every year! Always a treat! I have made these scones/biscuits several times now for appetisers and nibbles, as well as for picnics - they are delicious when eaten warm with fresh butter, mustard and ham.
Flavors of fall—sage and figs—pair up with tangy goat cheese for an elegant appetizer that’s a perfect pairing for a glass of bubbly. The toasts can be made up to a day ahead and stored at room temperature in an airtight container.
Haloumi, Sausage and Pesto Skewers

A simple budget-conscious and yummy everyday recipe with no pretensions to sophistication, which I've adapted from an online recipe from the Australian magazine 'New Idea'. The recipe uses beef sausages, but obviously you could use your favourite sausages. You could also vary the capsicums (or peppers) and use more than one coloured pepper; and you could add a slice of onion onto the skewer. My personal preference is red peppers, but just go with your preference!
Original Macaroni and Cheese - (With Variations)

"This dish is the perfect canvas for variations, from flavor tweaks to major transformations". This recipe is a blend of several methods that appeared in an 1807 cookbook called "A New System Of Domestic Cookery". Marcie Sullivan added some vegetables, ground beef and Gouda cheese to make this a Entree instead of just a side. While Lisa Cotter used for her breadcrumbs 1 cup day-old rosemary focaccia and 1/2 cup broken pita chips, ground together in a food processor. I found this recipe in Hallmark magazine. Quantities for figs depend on the size; allow one or two large figs per person or, between three and six for medium to small figs. This makes a fabulous dinner party starter, or a light salad for lunch..........I sometimes serve this for the cheese course too, for something a little different. -- posted by French Tart

This is such an unexpected fresh dip! I love to serve it with the new "Flips" cracker/pretzels. We've also served this dip with bagels, pretzels and other crackers. You can also spread it on a tortilla wrap and make pinwheels or top it with ham/turkey and make roll-up sandwiches!
It does not last long, be prepared! -- posted by Andreazaar

Applejack Turkey Sandwich

Grilled sweet peppers and onion add crunch to this sweet-smoky sandwich from Cobbler's Restaurant in Gaylord, Michigan. We used all three colors of sweet peppers - red, green and orange. It looked and tasted great! ;;)Another day-after recipe.
Grilled California Avocado Salad

Large avocados are recommended for this recipe. A large Haas avocado averages about 8 oz (here in Miami - our avocados have a tendency to be a bit larger). Adjust the the quantity accordingly. This is easy, tastes great, & has that WOW factor! It is an elegant first course that combines with baby greens, a spicy salsa and a delicious herbed goat cheese. Provided by the California Commission with a couple of tweaks. -- posted by Manami

Tomato Quiche

Garlic Feta Toasts With a Warm Olive Spread

I don't know about you, but I'm a bit of a soup and salad person, and once a week I have just a salad or soup/salad, soup/sammy for dinner rather than a heavy dinner. I make this quite often and serve it with a bowl of my potato soup or my chick pea soup, but you can use whatever you like best. Slice a few good fresh tomatoes or some fresh fruit if you prefer, and you have a great easy dinner. Two (2) nights a week, I really try to eat a bit lighter - and this fits the bill. But, it also makes an amazing appetizer, or a great side dish for any meal during the week. Simply put, it is just really good. Now whatever you do ... don't get rid of that cheese - Save! It makes a great spread on baguettes or makes an amazing spread for a sandwich. It will last a couple of weeks in the refrigerator covered. and, make all this ahead of time and just heat up, toast and serve. -- posted by SarasotaCook
