Rainbow Rotini Salad

A great little recipe from my Publix Grocer's Product Department -- they have recipe cards there and I always grab the ones that sound good. This one did not disappoint. Even DD enjoyed this pasta salad.
NOTES: I used Colby Jack cheese instead of the cheddar, and about 1/2 of the listed amount. I also cut the dressing by half, the original recipe calls for 1 cup. I used a mixture of Newman's Own Tuscan Italian and Olive Oil & Vinegar dressings. I'm sure some fresh chopped broccoli would be a nice addition too. -- posted by FloridaNative

Sarasota's Ricotta and Cheese Sauce

A simple easy sauce which is perfect over grilled, steamed or roasted vegetables and just as good over grilled chicken. I happen to love this over roasted potatoes.
Grilled Pineapple, Creamy Nut Date Cheese on Cinnamon Crackers

This is quick and easy, and a make ahead wonder appetizer. Simple store bought crackers - now I like "Cinnamon Wheat Thins," but there are many other brands. Last time I went to the store, there were 4 different brands, and Whole Foods and other specialty stores carry even more. A creamy cream cheese and nut date filling and topped with sweet grilled pineapple. I often serve these little bites on a dessert tray. -- posted by SarasotaCook

Thai Corn Cakes

Received in email from Gourmet_recipes_from_around_the _world. the email notes it was adapted from Very Simple Food. Very pretty with either fresh cut or sweet kernel canned corn - frozen doesn't work as well because the kernels skins get tough when frozen. The sweet chili sauce makes the meal - get it; it's cheap & addictive. -- posted by Buster's friend

Forgotten Cookies-Diabetic

I haven't tried this recipe yet but I couldn't pass up posting it because I don't want to lose it and others might enjoy a "legal" cookie recipe. I'm totally guessing at the yield. Zaar is listing the calorie and fat content (mostly fron the nuts) for a dozen cookines. Dividing 12 into that amount breaks down to each cookie having 33.5 calories. If you wish to lower it more just use less nuts. -- posted by Annacia

Beer and Cheese Soup

This recipe comes from the October 2009 issue of Better Homes and Gardens. It is a little different from similar recipes, in that it uses roasted red peppers and refrigerated shredded hash browns. I haven't made this recipe, but I have made other soups with hash browns and they were wonderful. I can't wait to try this one! -- posted by Julie F

Mum's Raspberry Bomb

Raspberries and cream with meringue all frozen together to make mushy fruity creamy heaven! I never can get it just like she does, but its still good none the same. The brandy works well in this and acts more like a flavouring as opposed to a tipple. Simply wonderous, by far the best way to serve raspberries.
Turnip Pancakes

I'm trying to come up with ways to cook turnips that don't involve roasting, stewing or mashing them, so I came up with this recently. It started as a potato pancake recipe from the Joy of Cooking, then changed when I tried it out. They came out rather sweet considering there's no sugar added... I'll definitely be eating these again. Good hot or cold. -- posted by Nani_Ka

Mango Milk Crush

A really refreshing and different way to eat mango. I was served this drink on the beach in Rio one time and turned my nose up at it (I'd asked for mango juice and don't really like milk drinks) but I was pleasantly surprised to find how well the sweet creamy milk went down with the loose crushed slippery mango. Don't think of this as a drink though do serve it in a glass. This is more like eating peaches and cream.
Dutch Oven Camping Breakfast Love

Not the most descriptive recipe title, perhaps, but this is what my friend calls it and I like the name, so there you go. Nothing wakes up your camp-mates like the warmth of a campfire and the sounds and smells of sausage, bacon, and veggies. You will NEED a REAL camping dutch oven (get the cast-iron kind with the little legs and the lip on top for putting coals on the lid - if you camp much, this is well worth the investment). You will also need two hot-pads, tongs, and a heat-resistant spatula. A long-sleeve shirt and leather gloves are recommended so that you don't singe your arms and hands. Note that preparation time consists mostly of letting the fire mature. -- posted by Da Huz

This is a very different dressing for potato salad that has been a favorite of my family for many years. I found it while reading a pamphlet about using sour cream. It can be easily doubled for a large salad but DO NOT double the salt.
It is better if it sits for a day in the fridge but can be made the day it is to be served. -- posted by Chef #759331

Easy Pizza Pancakes (Thick Crepe Style)

Some of my friends from Rio will remember when the heavy rain flooded our apartment and we spent hours trying to scoop up and drain the water away. None of us had eaten so half way through, ankle deep in water (!), I devised these lovely little pizzas to give us all a break and a laugh as I'm flipping the pancakes!. I think they taste so good because the 'base' is fresh. Feel free to add extra toppings as you wish but I think they're great plain. Don't expect to be able to pick these up, you need to eat them with a knife and fork. -- posted by robd16

Miso Eggs Benedict

Miso has a salty flavor that replaces the Canadian Bacon used in traditional eggs Benedict. Have all the ingredients ready to go, and set the English muffins to toast at the same time as you put the eggs in to poach, so you can place the fresh poached eggs onto the freshly toasted muffins. Adapted from The Everything Vegetarian Cookbook. The Hollandaise sauce is what the French call a "mother sauce" meaning that it can be transformed into other sauces by adding just a few ingredients(tarragon, pepper, and shallots-bearnaise; mustard-Dijonnaise; orange concentrate-maltaise, etc.) -- posted by Sharon123

“guilt-Free Ice Cream Wannabe”

This delicious low-calorie dessert is a great way to satisfy your craving for a big bowl of chocolate ice cream without blowing your diet. The thickness of the Greek yogurt provides the creamy texture of ice cream for just a fraction of the calories. Also, by using frozen berries, the yogurt freezes as they are mixed in, giving the cool, frozen texture of real ice cream. The Fiber One cereal sprinkled on top provides a nice crunch and textural contrast - enjoy! -- posted by Chef #1453068

An indulgent and luxurious champagne breakfast or brunch dish that even those who don't like the texture of smoked salmon will love because it is cooked in with the eggs.
Zurie's Tomato and Cream Cheese Tart

I'd like to dedicate this recipe to Molly53. When I could not find a tomato tart or pie on Zaar with cream cheese as a basis, she went to the trouble of converting a recipe and posting it for me in RR, which is really going to a lot of trouble! Thank you, Molly53!! This is not that tart, but in the end I put this together, and my severest critic, my husband, said the tart was fine. At the time of my request in RR I had lots of small plum tomatoes which in the heat became too overripe for salad but I could not bear to throw them out. I had a large chunk left of my favourite pastry, recipe #197151, which had to be used, but I confess that I don't know how much I used for this pie.... The amount given is a guess. The taste is clean; I did not want to use mayo. Prep time does not include making the pastry. -- posted by Zurie

Cranberry Cake

Clients of the company I work for give us fresh cranberries every year at Thanksgiving. this year, I decided to actually DO something with them.

I made this cranberry cake several times in one week because we just can't get enough of it. It's sweet with a golden crumb, soft and moist, and dense without being heavy, with juicy explosions of tart cranberries.

This is also really easy; it comes together in about 10 minutes. Sometimes, I will cover it in whipped cream, but lately I have been baking it instead with a topping of pecans caramelized in butter and brown sugar.
