White Chicken Chili

My grandma gave me this recipe. She got it out of Southern Lady magazine. It was kind of spicy when I made it, if you don't like spicy I would substitute the peppers for just a green bell pepper. Also, it calls for chipotle chili powder and I used just plain. Any white bean would be good in this, I substituted one of the cans of beans for a can of hominy and added a can of corn. The directions listed are my quick method of preparing this chili! -- posted by TerriB16

Chili Even My Mom Likes!

When my mom says something I've cooked is good and not just "OK" or "it needs more salt" (and that is not often), then I've got a winner. The seasonings for this chili recipe are borrowed from Rachel Ray's Indian Summer Turkey Chili which I think are a great and very tasty combination. You can spice it up even more according to your taste, and play around with the type of ground meat--beef, turkey, venison or chicken even! (My family prefers beef). -- posted by MimmaS

Black Eyed Pea Balsamic Salad

I got this at a farmer's market in Texas. A chef from one of the local resturants was demonstrating how to use the veggies of the season. This is a hit on New Year's day, the legend being that you eat black eyed peas on New Years day to insure health, wealth and happiness. Not so sure about the wealth, but health an happiness are great. You can use either fresh or frozen peas, but not canned and can substitue finely diced ham for the bacon. Good eating. -- posted by liral

Chuck's Daddy-O Beans

In 1990, I was fortunate to get involved with a great family who gave me a home and a place to feel safe (thanks, George) and pretty quickly, I came to think of Chuck as "dad". I don't know where he got this recipe or how much trial-and-error was involved, but whenever the family gets together...these are always at the top of the request list. I recently got it from him as part of an online recipe exchange. The secret is the flavor of the teriyaki sauce cooking down and bringing the whole thing together; he prefers the brand sold at Costco but use the one you like the best. I also think the green chiles are just as essential to the finished dish as well. Add more or less of any of the ingredients to suit your taste and whatever brands you prefer--that is the beauty of this recipe. For extra pizzazz...throw in a pound or so of ground meat...pre-cooked or just broken up. -- posted by Hungry Hogareno

La La La Bamba! Mexican Dip Ole'!

This recipe comes from my friend Ann in Maryland. I have made this many times, and it's always devoured! It's not necessarily "quick and easy," because I hand-chop the olives and make my own guacamole, but the extra effort makes a big difference. Ann's original recipe did not call for jalapeno and cilantro, but I love it! She isn't an olive lover, so she omits those.
Three Bean Vegan Chili

A quick and simple spicy vegetarian/vegan chili with beans and pasta. I grew up loving my mom's chili with beef. When I gave up red meat, I switched to ground turkey, and adjusted the recipe slightly. I later increased the bean ratio and cut out the meat entirely. -- posted by jenms

Somen, Tofu and Vegetables in Miso Broth

This recipe came into being one night when trying to use up the last of my somen. Easy and quick to fix, very little clean up time too! For those that don't like tofu, use a firm tofu that has been frozen at least 24hrs and then thawed (this will give the tofu a more "chewy/meaty" texture). Also, if you don't have chili oil, use a tiny pinch of cayenne pepper instead. -- posted by blueyedwineaux

Hummus - Silky Smooth, from Scratch!

This recipe was published in the food section of my city paper from a local Lebanese restaurant. Amazingly smooth and creamy.

"Baking soda is the secret to silky smooth hummus; it softens the beans so they cook quickly and break down easily when blended. The hummus can be prepared up to two days ahead and stored in an airtight container in the refrigerator until ready to use." -- posted by biznana

This is a tad of a spinoff of a recipe on the side of a Nasoya Silken Creations box. You can skip the vanilla and cut the confectioners sugar a little bit if you use Silken Creations Vanilla instead. I didn't include a recipe for a pie crust because I like it crustless! And for ultimate laziness, you can even mix it right in the pie pan! There are lots of good vegan pie crust recipes on here, or you can buy a premade one.
Slow Cooker Tamale Pie

Looking for a easy mexican dinner. look no further! My husband and I love this stuff since I work till after 10pm most nights. Smack it in the crockpot at night and my lunch is waiting for me when I wake up the next morning. I leave the seasoning open because everyone has a different taste for heat I don't do a lot of chili powder with the ancho chili's but I love cumin and the other seasoning. Another good suggestion is mixing green onions into the gorn muffin mix, I top with shedded smoked cheddar cheese and a little sour cream.
Bean and Bacon Soup Tacos

This is a recipe we devised during our early married years. A can of bean and bacon condensed soup, corn tortillas, some chopped onion. You'll spend about 10 minutes in the kitchen and have a simple but tasty meal for two on the table at about 50 cents per taco. Add a green salad and you've got an easy, cheap, but satisfying meal on the table. This is a meal we revert to often, but now it's by choice, not by necessity! -- posted by SacramentoCouplesCooking

This is a wonderful Indian lentil side dish. Asafetida has a very strong, musky smell that many people find unappealing. Store it in an airtight container to prevent it from contaminating your other spices, and if you really don't like the smell, keep it in the freezer--I left it in my car for a little while and everything in the car smelled like it afterward. Despite the strange smell, I have not yet met anyone who dislikes the flavor once it's prepared! This recipe comes from a cookbook called Madhur Jaffrey's Spice Kitchen. All the ingredients should be available at any Indian grocery store. -- posted by Edana

Pasta With Lentils

A couple of notes about this recipe.
First of all, this is a recipe for one person. I know that doesn't seem true, but the 4 coups of water boil down really fast.
Secondly, I usually soak my lentils beforehand because it makes them cook quicker.
Third, I put "2 oz" of pasta, because that's usually the serving size for one person for pasta... sometimes it's 1/4 of a cup, and sometimes it's more. Just go with what the box says, or whatever you feel is good for you.
Also, you can do it with rice instead of pasta if you so desire! It's equally as yummy! -- posted by michelle!
