			<title>Vegan Baked Beans a La Crock Pot</title>

			<description>At the time I'm posting this there are two other vegan baked bean recipes on the Zaar, both look really good.  I didn't find one for the crock pot however, using dried beans and no tomatoes.....so hopefully this fits that bill for someone else out there!  I found the recipe online - http://www.beanbible.com.  There are only a few things I tweaked, one being Bakon yeast.  Unfortunately not something I'm at all familiar with or have ever seen in the stores, but I found out a little more about it and replaced it with some nutritional yeast &amp;amp; liquid smoke.  Adjust the heat as you wish.  NOTE:  Soak the beans ahead of time (night before).  The cooking time doesn't reflect the overnight soaking of the beans, but it does reflect the crock pot cooking time if set to low. 			<description>I have been making seitan quite a bit lately, and have been trying various cooking methods (baking, steaming and  now simmering).  One of the more difficult methods as far as consistancy goes, (so I've read), is simmered seitan.  The following recipe I found in La Dolce Vegan cookbook, and it sounded so simple and mistake proof, I had to try it.  I have now conquered my fear of simering seitan in broth!! 			<title>Eggplant Curry &amp;quot;no-Fry&amp;quot; Sri Lankan Style Using Coconut</title>

			<description>Another recipe courtesy of the great Madhur Jaffrey.  I'm often looking for new eggplant dishes, and can't believe I haven't tried this particular recipe until today, it's really very easy.  From what I've read, traditionally in this dish the eggplant would be fried - in this version it is broiled which obviously cuts down on the calories quite substantially.  I also used light coconut milk.  I only had one eggplant on hand today and it turned out great, a nice side-dish or main for 2.  I can imagine that by using two regular eggplants you would be able to serve at least 3, if not 4, as a main.  Next time you run across good looking eggplants in the store, pick a few out and give this a try! 			<title>Vegan Spinach-Mushroom Quiche</title>

			<description>My friends and family are always getting on me to publish my recipes; I don't really use them, nor do I regularly remember even what I put into my dishes. I took this dish to a vegan potluck last night, and it disappeared in seconds. This morning I was awoken at gun point (exaggerated for dramatic effect) to post this recipe.... So, I thought it wise of me to comply. This recipe takes me about an hour of prep time, and about an hour to cook. There are shortcuts one may take to cut down on the prep time, but the first time, I suggest leaving ample time to prepare. I have used a variety of nuts for this recipe, all working out well (this last time I ran out of sesame seeds, so I used 2 tbsp of my tamari roasted pumpkin seeds, and 1 tbsp of raw pecans). I also like to make my dishes gluten free for potlucks, so I used &amp;frac12; cup of blue corn meal, and &amp;frac12; garbanzo flour in place of the whole wheat pastry flour, the taste was amazing, but a little more crumbly then whole wheat pastry flower. 			<description>Back in the days when I was a child every time my mother made this dish it was considered a treat among me &amp;amp; my siblings. Besides potatoes &amp;amp; peas, okra/ladyfinger is another all time favorite vegetable among the Pakistani population. It is usually served with roti/chapatti &amp;amp; yogurt or sometimes with Masoor Dal (lentil) here is the recipe of a basic okra curry that was passed down from my grandmother to my mom &amp;amp; down to me. Its the tomatoes that give it a different taste compared to the other recipes posted so far. 

Note if you want to make &amp;quot;Bhindi Gosht&amp;quot; (Okra curry with mutton) after frying the onions add mutton, let it cook on medium low heat for 20 minutes, then follow the rest of the recipe. I know there are a zillion chili recipes...this one looked a little different with the touch of lime.  I haven't tried this yet, plan to soon because I think it looks tasty.  I'm guessing at the cooking time, it looks fairly quick though...30 minutes simmering time is included in my guess.  Update...had a chance to make this and I really like the recipe - it's very quick to throw together.  The only thing I wanted to come back and adjust is the amount of chili powder - suggest starting with a tsp and working your way up from there, because chili powders vary so much. This recipe is adapted from a traditional Aloo (cauliflower) curry.
I've done quite a bit of tweaking and experimenting to make it tasty without the oil / butter / nuts / etc that are normally in Indian curries.

For anyone wishing to experiment further:
- the small amount of oil is necessary to cook the spices (otherwise it just won't taste right).
- the saute-ing and roasting adds a lot of extra flavour without any extra calories.
- the tomato / onion / carrot paste adds thickness to the curry
- the carrot adds sweetness
- the stock &amp;amp; spices all add flavour without calories. Feel free to experiment with different spices.
- the long simmering is important to add depth and subtlety to the flavour.
- if the curry tastes bitter check: Did you burn any of the spices? (turmeric especially burns easily if you fried it, and the garam masala step can be quite tricky). Did you cut the ends &amp;amp; skin off the onion? Did the onion get sauted?

While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked.  This recipe comes from me combining elements of two or three different recipes that I found.  The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well.  If I want to do a homemade sauce, I usually do it a day or so in advance.,

			<description>While this recipe calls for summer vegetables, my brother and SIL prepared it for Christmas dinner 2009 and I loved it.  Good as a vegetarian main dish or a side.  It's not quite the same as other vegetable gratins already on RecipeZaar.  Personally, I would make this with less olive oil, the amount of which I specified in the ingredients, but you can use the original amount if you prefer (just convert teaspoons to tablespoons).  This can also be made ahead after assembly and before baking.  Just pre-heat the oven.  Try to buy the zucchini and squash of roughly the same diameter.  I might serve this with bread to soak up the juices.  To make this vegan, omit the parmesan cheese.
