The Witchery by the Castle Gates Steak Balmoral and Whisky Sauce

An excellent recipe for traditional Scottish Steak Balmoral, as served at the famous "The Witchery" restaurant located in Edinburgh, Scotland at the very top of the Royal Mile near the gates of beautiful Edinburgh Castle. The "Old Hell Fire Club" used to hold their meetings in this historic sixteenth century building. We prefer tender Aberdeen angus filet steaks in this first-rate recipe, but sirloin steaks or rib-eyes are just as good. Do try to use a very high quality beef, if possible. You can carefully flambe the whisky in step 2, but I usually don't bother as I find it boils down quickly enough into the divinely smooth and mellow sauce without the extra step. Serve these steaks with steamed new potatoes or baked potatoes, and seasonal greens or a tossed salad. -- posted by BecR

(Soak in hot water to cover 30 minutes, drain and squeeze out excess moisture and discard hard cores.)
Round Steak Sauerbraten

Rib Eye Steaks in a Port Wine Glaze.

Perfectly cooked steaks, nicely seasoned with a rich sweet and slightly spicy glaze.
The rib eyes should be room temperature so bring meat out of the refrigerator 1 hour before searing. Use tongs so not to puncture the meat.
This serves 12 normal adults. 1/4 pound per adult. BUT if like my Husband he'll eat the whole steak himself. I just don't know how he does it!
Leftovers are nice over a bed of greens and a blue cheese dressing. -- posted by ~Rita~

Fabulous Fajitas

This recipe is based on wonderful fajitas served at a small authentic Tex-Mex restaurant near where I used to live. I have used this with both chicken and steak, flank steak or skirt steak, and it works great. I also mix a batch of the dry spices together and use a tablespoon or so when I make fajitas. The red onions, while not traditional, add a nice color to the fajitaas, but sweet yellow onions are more traditional. Note that the preparation time listed includes time to marinate. -- posted by UrbanDesiMommy

Bacon Wrapped, Filet Mignon

Using real thick and smokey bacon really gives this plenty of flavor. It’s cooked slow, because of the bacon, and, as a result, the fillet comes out real moist. There’s so much flavor in the meat, additional sauce isn’t needed.

Flat Iron Steaks With Mushroom and Peppercorn Sauce

Flat Iron Steak is a well kept secret. Full of Beef flavor, it's is one of the "perfect for the grill" steaks as it is uniform in shape and thickness. It is also a great cut for marinating.
You will want a grill safe skillet for this recipe-I use cast iron. -- posted by DiB's

Sarasota's Steak & Eggs With Pesto Bread and Tomato Relish

I love to take an ordinary steak recipe and make it affordable any night of the week. This is one of those. I love steak and eggs, but I also love to cook a tender good steak. So, this is one of those dishes. One (1) strip steak made affordable for 3, served over grilled pesto bread and of course topped with fried eggs and a tomato basil relish. This is such a quick easy dinner. It looks like a lot, but it is not difficult. Serve this with some grilled asparagus as a side dish for a great perfect dinner. -- posted by SarasotaCook

Chili Rubbed Flank Steak Roll With Avocado Cream

This is a great meal for the broiler or the grill. I live in Iowa and thought of this recipe in January so naturaly I used the broiler but can't wait to try it on the grill with some grilled asparagus. Using the chili powder rub and hot italian sausage the meat is very hot, but is equally complemented by the cool avocado cucumber cream sauce. I hope you enjoy! -- posted by Benly03

Cowgirl Stew

This gluten free, dairy free, vinegar free recipe is one of my favorite to fix for any company and to have around during the work week. It has great, easy to find and healthy ingredients. Made in the crockpot. Can be ready for you to come home to (and smells incredible). Just pay attention to the canned/stewed tomatoes you pick up to make sure they are vinegar free. Also if you are concerned make sure there isn't any high fructose corn syrup in those canned tomatoes also. The more natural the better. This is great even with gluten free cornbread. Also, if you want to use frozen green beans get the steamer bag and steam them for a bit before you put them in the crock pot....they keep their flavor and color very well. -- posted by CookinWorkinMama

Homemade Chili

Any time I see beef on sale, I think chili. This recipe comes together very easily and can be modified to fit your needs. I wrote an hour cook time but as long as you do not allow the chili to thicken too much and stick to the bottom of the pot, you can simmer for as long as necessary. If the chili does start to stick, add a cup of water at a time until it loosens. I served with a steam in the bag portion of Spanish rice and it was delicious! Feel free to garnish with whatever you like including cheese and sour cream. -- posted by carrie680

Beer & Stilton Stuffed Beef Wellington

This recipe was designed around two of my favorite things, beer and Stilton. I opted to use Dogfish Head's World Wide Stout as I really like the way it pairs with the cheese, but any sweet strong ale (Belgian Strong, Barleywine, etc.) would work. Likewise, the cheese is the same thing. I love the Colston Bassett Stilton, but any strong bleu would fit the bill. -- posted by Pangaea
