Homemade Manicotti

I found this recipe in Rachael Ray's magazine and made it my own. As a kid, crepes (palachinche) in my house was a dessert filled with jelly, rolled like a cigar and eaten before my mother can put them on the table. So I thought it was cool that they were incorporated into this dish. I have to say, I willl never use store bought manicotti for this dish! -- posted by Ingrid Nicolich-Obregon

Porcini-Parsley Pasta (Rachael Ray)

A 30 minute meal from Rachael Ray, published in her magazine Feb 2010. As they state, "This sauce is so simple, yet truly intense in flavor. The dish makes a great meat-free entrée or first course for any special meal." -- posted by JanuaryBride

Marinara Sauce

This is a really great sratch recipe for spagetti or pizza sauce to make ahead of time I put it in the crock pot on low to simmer. If you look at the label of most spagetti sauce you buy in a store the second or third ingredient is corn syrup. After this we don't ever buy red sauce. I make this in large batches frequently and it freezes very well. -- posted by victoriansweets_cakencandy

Weight Watchers Crock Pot Chicken Stroganoff Remake

This is a remake of 4 point recipe #322468. The Dollar General within walking distance of me does not carry non-fat sour cream or the 98% fat free soup. Plus its a larger can. I est that my version comes in at 5 or 6 points, plus noodles.

Spaghetti Sauce

Again a recipe I grew up with. It is the only spaghetti my hubby will touch and works well as the sauce in lasagna. I think the original recipe called for onions and garlic cooked with the ground beef - but I never add them. You can also add mushrooms or other veggies to this for you veggie lovers out there. This sauce freezes well and can easily be doubled! -- posted by Pam 88

Hearty Mac & Cheese

This was adapted from an Ellie Krieger recipe. I made a few of my own tweaks. A friend of mine challenged me to find a mac & cheese recipe that wouldn’t leave us feeling like we ate our entire body weight in fattening dairy. I know it sounds strange to use squash as the base for the cheese sauce, but it actually worked. The dish doesn’t taste like squash. It’s nice and creamy with a crispy, browned top. If you’re looking for a light alternative to many people’s favorite comfort food, give this a try. -- posted by Diet It Up

A Better Marzetti

Had never heard of Johnny Marzetti until recently stumbling on his recipe in some newspaper website. Actually, research shows Marzetti's Restaurant in Columbus, Ohio was the source of this great comfort food dish back in the 20's (..is it still there?). Have seen ingredients of several versions of this dish here, but none with all these great ingredients. This is an ultimate comfort food that is even better at the second and third sitting. I think that the sausage and Italian cheese blend is key to success of this rendition. Dish is great with a nice green salad. -- posted by ebbtide

Best Ever Red & White Sauce Lasagna

Super Quick Tomato Basil Cream Pasta (Vegan!!)

I made this tonight and it is super delicious!! I found this recipe on veganyumyum.com and here is her description: "When it’s summer, I can’t get enough of recipes that use up fresh tomatoes and basil. But no matter what time of year, I’m always down with quick recipes. You can make this sauce in the time it takes to boil the pasta. My whole wheat pasta cooks in 9 minutes, so this simple sauce makes a 9 minute summer meal that’s hard to beat." -- posted by SPrins

Spaghetti Alla Puttanesca, Italian Style

I first was introduced to this recipe when I was reading the book, "Belong to Me", when the main character "would have sold her soul" for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese! Italians customarily do not use cheese in this dish; the cheese overwhelms the sauce and makes the anchovies more pronounced, unbalancing all the delicate flavours you just worked so hard to create. -- posted by The_Swedish_Chef

Cincinnati Style Chili

I have always loved Skyline Chili. I'm not from Cincinnati, but have been there. This is a combination of recipes I used to make one that has worked for me. I made it for the big superbowl party my family has every year. They loved it! I've never made it from scratch before because I didn't know what all was in the sauce. I had always used sauce packets from the grocery store. When the store was out, I had to come up with another solution. I love to cook and experiment. So...this is what I came up with.
Chumley's Shrimp Skewers

I came up with this recipe the other night when my wife and girls wanted Alyssa's Favorite Fish, recipe# 361646. I didn't feel like fish so I tried this, I think you will enjoy it.
I used whole wheat spaghetti for the pasta, and regular olive oil, you could use what you like.
I was hoping to have some of this left over for the next day but I ate it all that night. I put down 2-4 servings but I ate it in one. Sorry!!

Pasta With Sun-Dried Tomatoes, Snap Peas, and Feta

A delicious pasta that I threw together using some of the leftovers from another very tasty dish:

http://www.recipezaar.com/Chicken-Breast-Stuffed-With-Feta-Cheese-Sundried-Tomato-and-Re-17962.

My directions are not exactly precise since most of it is according to taste. However, if you have a little experiencing cooking, and taste everything as you go, this is really simple to make.

The sweetness of the snap-peas go really well with the saltiness of the feta, and the sun-dried tomatoes meld it all together. Yum! -- posted by Chef #1413665
