Seitan With Portobellos in White Wine Sauce

I wanted a vegetarian version of chicken with white wine sauce that wasn't a total WW points-buster, and this recipe is what I arrived at. The portobellos and herbs help to flavor the seitan. If you'd prefer to go all-out, add more butter and cream to taste - the version here has just enough for me. Also, I highly recommend using a white wine that you'd actually drink - the flavor is noticeable in the final dish. I used a zippy New Zealand Sauvignon Blanc. Having never actually tried chicken with white wine sauce before giving up meat 10 years ago, I think this tastes great!! -- posted by morgangeline

Easy Creamy Chicken & Noodle Bake

I think I clipped this from an egg noodle ad. I have always used the green bean option. Try to make sure the noodles are reasonably in the liquid. You might want to poke them down during cooking when they become more malleable. I usually end up with a few crunchy noodles. -- posted by GibbyLou

Chicken Tortilla & Rice Casserole

I got the original recipe when I worked at Lowell Farms, an organic rice company. I originally used their organic jasmine rice in this recipe. It is very good and has a distinct tast much different than regular white rice. It gives the dish a lot of flavor. It is hard for me to find unless I go back to my hometown. I added chicken to the recipe to make it a main dish. I have not made this in a long time and just recently found my recipe again. I am posting for safe keeping. http://www.lowellfarms.com -- posted by JenJenMarie

Peruvian. There isn't a whole lot of wow factor here but it is a good mild dish that is fairly easy to make that my whole family will eat. The raisins add a nice sweetness as does the paprika but overall it is a rather bland dish that some may find comforting. -- posted by invictus

Little a This & That Meatloaf Muffins

What is meatloaf but a way to use up items in the fridge? This recipe uses a little bit of what I had in the fridge tonight. My family will eat meatloaf only in muffin form. I'm sure it could be made in a loaf if cooked longer, about an hour.
I put ketchup on only half the muffins for immediate eating (and next day leftovers) and then leave the rest bare to freeze. -- posted by mommaj

Gourmet Mac & Cheese W/ Lots of Variations

Tweak the spices to your liking. I like it also without the paprika, but garnished with a sprig of fresh rosemary.

Also try making it cheesier or adding or substituting cheeses. I've made an excellent one with brie. I've also used canned tuna instead of chicken for a quicker version.

I have also experimented with different seasonings and rubs for the chicken or tuna, including celery salt, cayenne, rosemary, cumin, etc.

Changing the pasta also greatly changes the flavor as well, in my opinion.

Can be made with dried spices but I recommend fresh!

To go above and beyond, you can also bake the finished casserole with a breadcrumb or other topping. -- posted by GoldsmithLissa

My boyfriend became addicted to the tortas they served at a little taco stand by his old place in LA. I created this healthier version to satisfy his cravings at home. He loves them. Of course nothing truly compares to that awesome, authentic torta roll, but the rest of the ingredients are fairly authentic. The toasted whole wheat bread works just fine for us...as long as all of our fixins are present, we're golden. :-) Prep time does not include marinating time. -- posted by Robyn's Cookin'

Turnip-Squash Vegetarian Budget Casserole

I'm currently on a budget casserole roll here. Feel free to sub the cream of potato soup for any other cream soup (my other favorites are mushroom and celery), they're pretty packed with flavor. It's just that not as many use cream of potato like I do! I like Stovetop traditional sage stuffing mix and the turkey one, any kind of boxed stuffing will do. You can used canned french-fried onions like French's or Durkee but I prefer homemade, Recipe #44115 those are sooooo good. -- posted by the80srule

Easy Pizza Pancakes (Thick Crepe Style)

Some of my friends from Rio will remember when the heavy rain flooded our apartment and we spent hours trying to scoop up and drain the water away. None of us had eaten so half way through, ankle deep in water (!), I devised these lovely little pizzas to give us all a break and a laugh as I'm flipping the pancakes!. I think they taste so good because the 'base' is fresh. Feel free to add extra toppings as you wish but I think they're great plain.
Jamie Oliver Mac N Cheese

Jamie: ''Mac 'n' cheese' is a classic American pasta dish - everyone loves it. Sometimes it's done so badly in the convenience area, it's almost become famous for being horrible, but when you do it properly, trust me, it's an absolute killer. Feel free to use any tubular pasta you want. I've made this dish my own by lightening it with sweet tomatoes and given it some crunch with delicious breadcrumbs. Just you wait till you try it!

This dish isn't going to win any prizes in the nutrition department, but you can, and should, balance it with a nice salad. If you only have it once in a while as a special treat it'll do you no harm."

A unique way to use up turkey, mashed potatoes and cranberry sauce. Add a couple of fresh ingredients and this goes together in no time. Now, if like many, who have steamed green beans for Thanksgiving, try reinventing them by a quick saute with shallots, mushrooms, and a little balsamic vinegar. Just 4-5 minutes and you have a great way to use up those beans and it makes a great side dish with this.
Cajun Shrimp and Sausage Gravy over Biscuits

A few years back I was visiting friends in LA, and after a long day of fishing, a wonderful dinner with fresh fish of course, the next day we all woke up famished. Well ... biscuits with sausage gravy was the request, but I wanted to do something a little cajun. Our last vacation day, so it was clean out the fridge, but still trying to make something that resembled biscuits with sausage gravy. After a quick run to a local quick stop to get some cream and biscuits we were set. Well this is the creation, and it is really good. The only thing I have changed since I returned is that I love to add some scallions right at the end for a fresh flavor, but otherwise, pretty much the same. Make this for a breakfast/brunch for family this holiday season. And if you don't want to use andouille, use a spicy or mild sausage along with the cajun spices. And if you bake, make your own biscuits. I'm just not much of a baker, so I take a short cut and use a canned biscuit. We served this with some scrambled eggs and Bloody Mary's (it was the last day of vacation). But skip the eggs, and you won't miss them - this is a very satisfying dish. -- posted by SarasotaCook

Lighter Chicken and Biscuits (Oamc)

This is a recipe I adapted from Martha Stewart's Everday Food. It is a stovetop version of a classic southern casserole. I am usually suspicious of so called "quick" versions of classics and even more so of "light" adaptations, but this one was right on the money. The texture and flavor are reminiscent of Boston Market chicken pot pie. There is no cream of chicken soup and you can have dinner on the table in about 45 minutes. The original recipe called for whole wheat biscuits, but I made Bisquick biscuits with melted butter generously brushed on top (makes a golden brown crust). This recipe would be delicious with turkey and can be made with cooked chicken or turkey as well. This recipe can easily be doubled for OAMCers as well. -- posted by UrbanDesiMommy
