			<description>This recipe originally came from one of those Gooseberry Patch cookbooks but I added more ingredients and doctored this chili up quite a bit. When I first tried it, it seemed to need more than the original recipe. Here is what I came up with and usually it's a hit. I like to add a little red pepper flakes (not cayenne) cause with the pepper flakes you can play around with the temp of it. I like this on hot dogs too! Out of 14 lbs. of untrimmed meaty goodness I ended up with -- 6 pounds of meat suitable for slicing into jerky, a roughly equivalent amount of fat and scraps (which my father's dogs are currently enjoying), and a 2 lb. hunk o' brisket that was too marbled with fat to make good jerky out of. 			<description>This is a great recipe that a friend of mine has been bringing to office pot-lucks for years.  I just got the recipe from him and made it myself.  It's a unique and pretty decadent twist on traditional enchiladas.

You can adjust the amount of green chiles and jalapenos to your particular taste.  This recipe carries a little bite, but is not particularly hot (even using green chiles rated HOT).  To pep it up, use 3 cans of green chiles and 2 cans of jalapenos.

Im not judging, I know that many a good casserole gets thrown together using cream of mushroom, cream of celery, or cream of chicken soup.  I just didnt grow up eating many of those casseroles. In fact, tuna noodle is the only casserole I remember eating as a kid, other than mac and cheese.  As I learn more about cooking, I find that I generally prefer creating things from scratch, using whole ingredients rather than processed ones. I'll never make my old recipe again.  Absolutely delicious.  The corn is optional but we really like it.  Also, I do not cook the celery with the ground  beef so it is a little crunchy, which is what I prefer.  If you prefer, cook it with the beef and onion.  I make this in a large crock pot, but you certainly could do on the stove top. Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time.  To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. The sauce it actually for 8 pieces of chicken, but we liked extra drizzled on top of the chicken after it came out, so it worked out better for 4 pieces.   I used whole wheat spaghetti for the pasta, and regular olive oil, you could use what you like.
  I was hoping to have some of this left over for the next day but I ate it all that night.  I put down 2-4 servings but I ate it in one.  Sorry!!

			<description>Take two frustrating attempts to make a different stuffed green pepper soup and a wonderful blizzardy day and you end up with a soup that mirrors a stuffed green pepper, exactly! There's nothing like dogged determination and lots of time to get something right. I wanted a  rich sweet pepper soup that had the delicate flavour of tomatoes and the ability to bite into a meat/rice mixture, just like a real stuffed pepper. This recipe is two parts: first, the Porcupine Meatballs, which can be made a day or two ahead. Then, the Tri-Colour Pepper Soup, which is a stand alone soup that I've been making, and enjoying, for years. 

If you enjoy a lot of meat, you might want to double the meatball recipe; for our tastes, this is perfect, with 4-5 meatballs served in each bowl. The taste of this soup is quintessential 1950's style Stuffed Green Peppers. If you can tolerate more heat, then jazz it up to your hearts content! This way, you won't find the recipe &amp;quot;too bland&amp;quot;, which is how we like it---pure comfort food straight from Leave It To Beaver. 

Enjoy the meatballs or enjoy the pepper soup, or, enjoy them blended together for the best of all worlds with this stuffed pepper soup! This is a combination of two recipes, one of which I altered.  The first is from this site, (#16399, Quinoa-Toasted).  The second is from Allrecipes.com (Caron's Kickin' Quinoa Salad), to which I made some changes.  We thought it tasted a bit like sushi and loved it!  Feel free to add more heat, but this had enough for our family as we've got wee ones.
