Skillet Spiced Cranberry Chicken

I like to serve this easy one-pan dish throughout the holidays, when fresh cranberries are in season! Frozen or dried cranberries could also be used, for all year round appeal. Feel free to adjust sweetness to your tastes (we like it tangy). This chicken is great served with stuffing or rice, and your favorite seasonal vegetables. -- posted by BecR

Cajun Shrimp and Sausage Gravy over Biscuits

A few years back I was visiting friends in LA, and after a long day of fishing, a wonderful dinner with fresh fish of course, the next day we all woke up famished. Well ... biscuits with sausage gravy was the request, but I wanted to do something a little cajun. Our last vacation day, so it was clean out the fridge, but still trying to make something that resembled biscuits with sausage gravy. After a quick run to a local quick stop to get some cream and biscuits we were set. Well this is the creation, and it is really good. The only thing I have changed since I returned is that I love to add some scallions right at the end for a fresh flavor, but otherwise, pretty much the same. Make this for a breakfast/brunch for family this holiday season. And if you don't want to use andouille, use a spicy or mild sausage along with the cajun spices. And if you bake, make your own biscuits. I'm just not much of a baker, so I take a short cut and use a canned biscuit. We served this with some scrambled eggs and Bloody Mary's (it was the last day of vacation). But skip the eggs, and you won't miss them - this is a very satisfying dish. -- posted by SarasotaCook

Cheats Scouse

This is quick, easy, healthy and cheap to make and is sure to sooth on a cold winters night. Serve with lots of pickled beetroot or red cabbage. Traditionally made with leftover meat from a sunday roast, Scouse is a traditional regional stew from Liverpool, UK. I think this is every bit as satisfying as the full version and tastes even better the next day -- posted by robd16

Pakistani Style Turai Ka Salan (Courgettes Curry)

Like many basic vegetable curries this recipe has it all. Only difference is I add lemon & garam masala powder at the end to give it a more aromatic flavor. You can also add meat in it after frying the onions & cook the meat along with tomatoes & spices till it gets done. Then add courgettes & follow the rest of the recipe. -- posted by Bint e Naeem

Lighter Chicken and Biscuits (Oamc)

This is a recipe I adapted from Martha Stewart's Everday Food. It is a stovetop version of a classic southern casserole. I am usually suspicious of so called "quick" versions of classics and even more so of "light" adaptations, but this one was right on the money. The texture and flavor are reminiscent of Boston Market chicken pot pie. There is no cream of chicken soup and you can have dinner on the table in about 45 minutes. The original recipe called for whole wheat biscuits, but I made Bisquick biscuits with melted butter generously brushed on top (makes a golden brown crust). This recipe would be delicious with turkey and can be made with cooked chicken or turkey as well. This recipe can easily be doubled for OAMCers as well. -- posted by UrbanDesiMommy

Crescent Wrapped Brats and Sauerkraut

What a fun way to eat "Brats and Kraut." A brat wrapped up with a honey mustard and kraut in a flakey crust and baked, served with some lightly sauteed onions. This is really good and simple. Now if your bratwurst is not pre-cooked as mine were not, I pre-cook mine in a deep pan by boiling slowly in a mix of beer and water. They don't take too long. If they are pre-cooked, skip that step. I prefer to get the ones NOT pre-cooked, but whatever you have will work fine. I serve this with some parsley butter carrots and a green salad and of course a cold beer. This is the simplest thing to make and so good. -- posted by SarasotaCook

Cheesy Party Pasta

A great dish to make if you are having lots of company or to take to a potluck. Add whatever you think you would like. I have made this in a large chafing dish and served it at a birthday party. You can also make this in a large foil or hotel tray. OR scale it down to have just with your family. I always use low fat ingredients, but this works with full fat products as well. Serve with crusty rolls and salad. Enjoy! -- posted by Nif

Shepheds, Cottage or Cumberland Pie

This was one of my favourite meals when I was a kid and I still love it now. Really comforting and satisfying traditional British food. I've tried other versions but this 1 with the carrots is my favourite. Serve with boiled cabbage or peas and plenty of gravy. Can also be made with lamb mince Yum! The recipe given is for shepherds pie. For cottage pie, add a sprinkling of grated cheese over the top before baking. For cumberland pie, add a sprinkling of breadcrumbs on top before adding the cheese but personally, I don't think it needs either of these. I'm a shepherds man through and through! -- posted by robd16
