A delicious and nutritious ice cream sandwich? I would have thought the concept was something you'd get when you had alien invaders or something similar. I found the above recipe on the Care2 website @ http://www.care2.com/greenliving/nutritious-ice-cream-sandwich.html Hope you enjoy this! -- posted by SassiFras

Healthy Granola Bars

I was searching for a healthy granola bar recipe, one without butter and any added sugar. I came upon one called "grab-and-go breakfast bars", which I changed up to make this recipe. You can use any combination of nuts/fruits that you would like. I just used what sounded good to me, and it came out great! These granola bars have about 4g fiber and 4g protein in a serving, and make a great snack. -- posted by Chef #1360260

Awesome Avocado and Mushroom Sandwich

Fresh tomato, avocado, mushrooms and sprouts on grilled wheat bread topped with melted mozzarella! Deeelish! I had this at a local restaurant, it seemed so simple so I decided to try it at home. I make it at least once a week now it is my favorite, I'm not even a vegetarian. Do not saute' the mushrooms they are meant to eat fresh. It's AWSOME! -- posted by Rollin in the Dough!

Received in email from Gourmet_recipes_from_around_the _world. the email notes it was adapted from Very Simple Food. Very pretty with either fresh cut or sweet kernel canned corn - frozen doesn't work as well because the kernels skins get tough when frozen. The sweet chili sauce makes the meal - get it; it's cheap & addictive. -- posted by Buster's friend

Veggie Nachos

These nachos are full of protein and fiber and look beautiful to boot. Take it easy on the cheese and make it low-fat. This recipe heats the chips so make use of the chips remaining in the bottom of various bags. My sister and I made this live on my podcast. It's vegetarian and easy and I was surprised there wasn't one like this on 'zaar. This version is fairly quick for two and can be made as spicy as you like by adding jalapenos or hot salsa.
** Cucumber Sandwiches Everyone Loves **

I never follow recipe's.. so this was one that after a lot of taste testing, I stuck with. Everyone loves it!! It's a great appetizer for the holidays as it is so light & not filling. But I have made these for my kids for a summer brunch or lunch also. I have never tried a lower fat version because I despise fat free mayonnaise & cream cheese but let me know if you try something & it works.
I have simplified it since my first 10 times making this recipe as well IT WILL SERVE 12-20 most will want 2nds, trust me :)

Crab & Polenta Bruschetta

As you probably know, my family before-me loved polenta and they still do. So this recipe caught my attention, and then we bought the items and yesterday we made it! I loved it & the staff did too! :) Feel free to substitute ready-to-eat-polenta if you'd like. Slice it into rounds (as it looks like a round log) grill, and then top with crab salad. Actually - the whole recipe could all be store-bought-ready-to-eat!
Southwest Salsa Rice Bites Appetizer

Although this recipe sounds like another one named similarly, it has different proportions so be aware they are different. This recipe is for a unique appetizer with a southwest kick. Fun to make and fun to eat. Very simple ingredients but delicious. These were eaten so fast and everyone wanted the recipe guest and family alike. The rice gives it unique texture. I use cheddar pepper jack so you can too if you have trouble finding just pepper jack. Further, I used Japanese sticky rice (not Uncle Bens or the the like) and Tostitos salsa but you can sub in your favorites. The sticky rice really binds it. Picture coming. Enjoy!
I found these online about 6 years ago and never posted them. What I like is that they are savory and a combination of both cheese and potato. The potato-cheese latkes prep time = 15 mins & frying time = 10 mins per batch. The apple-pear sauce prep time = 10 mins & cooking time = 20 mins. While there is nothing like the traditional applesauce and sour cream, here's this variation - easy to make and tastes great!!!!;) -- posted by Manami

Dalmatian Salted Anchovy Salad

This meal is very old, probably from Greek and Roman times 2000 years ago. We in Croatia are very lucky because we can buy salted anchovies from direct producers who make these salted anchovies the same way old Romans did. And I must say, these home made salted anchovies are much, much better than grocery-stores one. Beside anchovy we also salt “srdela” a.k.a. sardine. Srdela is “heavier” to eat, and more cleaning work. It is very salty meal and a person should not eat more than three salted anchovies per day (that’s 6 fillets). This is how we prepare this meal in Dalmatia. -- posted by nitko

Festive Tuna Salad

You could serve this as a 1st course for company; it is not your usual mayo/tuna salad. The addition of fresh mushrooms and green peas really does the trick. I usually make a lighter version where I will strain the whey out of some plain yoghurt in a sieve and use 1/3 strained yoghurt and 2/3 mayo. If using this method the yogurt must be drained really well. I add the peas when they are still frozen; they thaw quickly and I like them cold in the salad and they do not get mushy -- posted by Deantini

Smoked Salmon

This recipe takes time, but is well worth it. Use the freshest salmon you can find. It is best to cut the pieces of salmon all the same size so you get even brining and smoking. Great for canning as well. Note: You may add other flavors to the fish such as garlic powder, pepper, soy sauce etc. if you like. The recipe can easily be doubled. You can use your imagination and try other types of fish as well. Even small whole fish. -- posted by RobinAnn

German Onion Pie

My friend Mrs. G., a German lady from Bavaria, used to make a fabulous onion pie. I never got her recipe but I watched her make it a few times. I searched for a similar recipe and found that most German onion pies contain bacon, etc., but hers was meatless and very delicate. I finally found this recipe which I adapted slightly so that it is very close to hers. Posted for safekeeping - I have not tried this yet.
This is my own creation of a recipe from a local restaurant that closed. This was my favorite along with their Robert Redford Pie. That's a recreation waiting to happen too! You may choose to used canned chicken to have even less prep or make triangles, instead of squares, for appetizers.
This is my version of a recipe I found many years ago in Southern Living. My version has been printed in two of the Gooseberry Patch cookbooks.
Cheese & Butter Green Peas

Have kids who hate green peas? Well, everyone seems to have that problem! I randomly added cheese & butter to my green peas (despite being a lover of peas) and it tasted great! In fact, at the end of the day, I got more sick of the cheese than peas. Amount of cheese? One slice. (: This is even for the health-conscious...enjoy! For me, I can polish off the whole thing, but to be on the safe side serve this for two. (: You can do this for just about any vegetable, in particular non-leafy ones like carrots & peas. -- posted by Chef #1531879

Chicken Salad

An easy throw together chicken salad that has the right amount of crunch from the fresh vegetables. Great for brunches, wedding/baby showers, or any picnic & get togethers. This salad goes great with Whole Wheat Ritz crackers or on toasted Rye bread! Chicken can be left chunky if preparer would prefer it that way. I feel the chicken stays better on the cracker/toasted bread if ground up a little bit.
