Chickpea Salad Sandwiches

After becoming a vegetarian, I missed certain sandwiches that I used to make on a regular basis. In an effort to substitute, I came up with this faux chicken salad-esque spread that is delicious on whole grain bread or in a pita pocket! It is an easy go-to because I usually have everything in my pantry. Substitute any ingredients that you might use in your chicken or tuna salad! -- posted by Miss_Elaine

Tuna Pasta Salad

This is a quick and simple lunch or light supper from 2009 Taste of Home Annual Recipes (courtesy of Sue Gronholz, Beaver Dam, Wisconsin). I doubled the recipe to have leftovers during the week. I followed the recipe except I used whole wheat pasta shells, red onion, regular mayonnaise (1 cup instead of 2 cups), and I tripled the peas. I also used 1/2 teaspoon salt and decided to add lemon pepper seasoning at the end for flavor. Works great when you're hungry now and need something quick. Yummy! -- posted by AmyZoe

Banana Health Muffins

Healthy, tasty and suitable for coeliacs, those with lactose intolerance and vegans alike.
Despite their healthiness, these taste delicious and the recipe can be adapted to suit any tastes and i recommend sprinkling the tops with a little muesli and sugar and serving them warm from the oven and drizzled with yoghurt if you are not lactose intolerant. For a nuttier flavour, the vegetable oil can be substituted for nut oil. Chickpea flour can be substituted for rice flour if you don't like the taste. Variations include adding apple, dates, cream cheese, cranberries and raisins to name a few...the possibilities are endless! Enjoy! -- posted by the_allergic_chef

Veggie Sandwiches A.k.a. Veggimiches

I used to make these all the time in southern Cali for my BF. Now that I've relocated to the far North, certain fresh ingredients are harder to come by, so I haven't been able to make this sandwich in ages. I'm not sure where the "m" stems from in "veggiemich," that's just what we ended up calling it. :) The reason for mixing the mustard and dressing prior to spreading on the bread is to avoid uneven spreading while keeping the calorie count down. Everything can of course be omitted or replaced to your taste; you can even make it Atkins-friendly by making a lettuce pocket and omitting the bread, hehe! We loved using a lot of pepper for a nice kick. You can make it a more filling meal with other additions, too! ^_^ -- posted by FuzzyKiwi

Natural Food Power Sandwich With Enoki Mushrooms

Treat crunchy enokis as sprouts in this sandwich lunch.

Enoki mushrooms look like no other mushroom. Long legged, uniformly smooth and cream colored, it resembles a bean sprout or perhaps a straightened spaghetti noodle with a tiny mushroom cap. Other common names are "golden needle," "winter mushroom," and "velvet foot." In Japan it is called enokidake. As a complement to almost any salad, enokis will add crispness and a subtle radishy flavor similar to nasturtium leaves and flowers. Eaten raw, they will leave a hint of pepper on your tongue. Toss some into soup during the last few minutes of simmering, or drop them into stir-fried vegetable or meat dishes just before serving.

A variation of this recipe is to use a spicy humus instead of making the avocado mash, and adding 2 avocado halves to the sandwich if you are craving a bit more texture. -- posted by Ashlin

Lunch Box Fun-Due

From Rachel Ray's Yum-O cookbook. This is a recipe that DD7 picked out to make for us for lunch. :) It fits my requirement that our lunches be healthy and well-balanced. She washed and trimmed the strawberries, peeled the carrots, cut up the cheese, mixed the salsa/dressing, and helped assemble the lunches. A 12 year old could probably make this with just some supervision. The amounts listed are RR's original amounts, but I think unless you are feeding a grown man, this is too much food. Adjust amounts to fit the appetite. -- posted by CraftScout

Almost Dad's Tofu Jerky

I adapted this recipe from one I found at tofujerky.org. One of the few cheats I would do as a veggie was eat my dad's venison jerky. With his passing, we lost the family recipe. I recreated it to the best of my memory using tofu. The marinade also makes great baked tofu. Adjust the pepper to your taste. I usually double this recipe because we love it so much. -- posted by PDX CakeGirl

Healthy Couscous With Roasted Mediterranean Vegetables (Ww)

Compromising on calories shouldn't mean compromising on taste. So I came up with this dish that can be a complete meal or served as a side with lean meat. If you have them available, you could add fresh herbs- rosemary or basil would compliment the other flavours nicely. Serves 4 as a side or 2 as a lunch. By my calculations, this recipe contains a total of 11 1/2 points (my book is a few years old though!) -- posted by Shuzbud

Okara Oatmeal Carob Chip Cookies Recipe

Whole wheat and rolled oats lend lots of fiber to these tasty cookies, along with a little-known ingredient, okara. Okara is soybean meal, a natural by-product of tofu. It is usually available in Asian markets that sell fresh tofu and health food stores. You may substitute chocolate chips for the carob chips and use what ever nuts suit your fancy.

Try a Cashew Chicken Salad in a Sandwich on a Hot Summer Evening

The title is pretty self-explanatory, and I think you'll agree that this is a nice way to spend a summer evening. Kettle (crunchy) potato chips on the side, a couple of home-made cookies or a brownie, some carrot sticks, and you've got a pretty decent brown-bag lunch, too. The original recipe (from Taste of Home, Aug/Sep 09) calls for pumpernickel bread. -- posted by Debber

Here's one to add to your bake sale repertoire--and they'll be just enough different [but still the same thing] to get the kids curious, and good enough that they'll sell like "hot cakes!" Save a couple for the home-folks, because you won't be bringing any home when you take these to the potluck or family reunion picnic! I use two bowls (recycle the first one) so I have everything ready to pour and mix--goes much quicker and no wasting time to measure when the stuff is hot!
Asparagus & Corn Quiches

Quiche is always so versatile - an easy-to-prepare dinner, lunch or snack; and individual quiches are great for take-to-work lunches or for picnics or potlucks. Made with the canned vegetables, this can be made very quickly but it can, of course, also be made with fresh or frozen vegetables. If you are using frozen vegetables, steam them briefly and make sure that all excess liquid has been drained off - or saved for making soup, such as my Recipe #135453. I've adapted this recipe from one I found on the Simply Great Meals website. Conversions: 425g = approximately 131/2 ounces; 125g = 4 ounces. -- posted by bluemoon downunder

Dark Chocolate and Sangiovese Pear Brownies

This yummy and super-rich chocolate brownie recipe has been adapted from a recipe by Maggie Beer, a revered Australian chef and author of many cookbooks. If Sangiovese Verjuice is not available use any Verjuice; and you could use glacé cumquat, ginger - or whatever glacé fruit you like instead of the pear - and you could use a mixture of fruit and nuts. I'd recommend macadamia nuts. Some conversions: 300g = approximately 91/2 ounces; 250g = 8 ounces; 60g = 2 ounces; 40g = 11/3 ounces. For the BEST results, do use top quality chocolate, such as Lindt 70% cocoa. Recently, I tried some German chocolate that was 85% cocoa... that was probably too rich and too bitter for most tastes, so rich in fact that you'd find that much as they enjoyed it people wouldn't be coming back for a second and third brownie - so your brownies would last longer! -- posted by bluemoon downunder

Ww Couscous Salad

This is a filling, low points salad. If you really want to make it lower points, cut the amount of couscous you use (my usual couscous is 9 points per cup). I actually use 1/3 cup couscous for 3 points and leave out the olive oil from the dressing to make it really lean. As written, this recipe provides a total of 12 points but using 1/3 cup couscous and no olive oil gives 3 points only. Serves 2 as a lunch or up to 4 as a side dish. Cook time includes half an hour for the salad to chill in the refrigerator. This is easy to increase for large groups or take-to-work lunches. -- posted by Shuzbud

Yummy Fool Proof Gluten Free French Bread!

From Cooking Free by Carol Fenster. This turned out great, even in a regular bread pan. Crunchy on the outside and soft on the inside. Carol says: "Put this in a cold oven for a crisp crust and nice texture. If this doesn't work in your oven, let the bread rise until level with top of pan; then bake in preheated 425° F oven for 25-30 minutes. Use a pan specially designed for French bread." It is critical to cool bread completely before slicing and is easier to slice with electric knife. This is a quicker bread because you don't have to let it rise before baking. -- posted by WI Cheesehead

Cool weather is coming & I adore a fresh bear claw with a steaming hot cup of coffee. When I came across this recipe I had to save it.
Roast Eggplant With Walnuts

This wonderful appetizer, when served with warm pita, marinated strips of red pepper & tasty olives, can be a meal unto itself... or tucked into a pita with the aforementioned for lunch, a very nice lunch. Per the Times: "This Turkish recipe is from Paula Wolfert's upcoming book, "The Slow Mediterranean Kitchen," which will be published in October by Wiley. Wolfert notes that the slower the grilling, the smokier the flavor of the eggplant. She thanks Dr. Ayse Baysal for sharing the recipe."
Note: When large eggplants are roasted whole, you may notice black juices seeping out of the skin. If this happens, immediately slit the eggplant on one side and drain on a slanted board in the sink. -- posted by Buster's friend

Mani's Bakery's High Protein Muffin

This recipe comes from the LA Times Food section's SOS column posted in response to reader pleading. It is an adapted recipe from the bakery. You need jumbo muffin tins to get the 14 muffins from this - regular tins will yield more muffins & likely need a slightly shortened cooking time. Should be getting about 11 grams of protein & 9 grams of fiber with about 32 grams of fat - but a lot of that is coming from the seeds & canola oil. Just the thing for hiking, fishing or hunting - easy to eat & needs no fridge! -- posted by Buster's friend

Simply Healthy Veal Jerky

I had some extra veal I didn't know what to do with and figured I'd try making some jerky out of it. It was surprisingly good. I think I could have turned the oven off much sooner though, it was very brittle. A nice slight hint of BBQ flavour and it was great. I used calorie-free Walden Farms BBQ because I'm on a diet, but I'm sure another full flavour BBQ sauce would add much more flavour. Also, I eyeballed the BBQ sauce, I used enough to cover all the meat, so it might be more than 1/2 cup.

I'm looking forward to trying this with Teriyaki Sauce and other seasonings. I don't add salt as I'm trying to watch my sodium right now. I found the bbq sauce was just enough flavour. -- posted by Seamor

Candy Corn Onigiri (Rice Balls)

For Halloween bento boxes! This is a lunchbox friendly recipe, quick to put together. Prep time does not include cooking of rice, as you can prepare the rice the night before, or use leftover rice. I like cooking my rice fresh in my rice cooker while I fix the rest of the lunches. These would also make good non-sweet treats for a Halloween party.
Christmas Muffins

After pulling these muffins hot out of the oven, your family and friends will know that Christmas is near.
A less heavy version of the wholemeal Christmas muffins, these muffins welcome in the holiday season.
Also, these muffins are a holiday option for those who don't like fruit cake, and can also be made vegan if you substitute soy milk for regular milk.

Simple Ham Spread

Here's a very simple and basic ham sandwich spread from Jean Pare's Company's Coming Soups & Sandwiches. You can make this as written, increase the quantity of chopped onion or add things like chopped celery and mustard to add more flavour. This recipe should be enough to make 4 sandwiches. -- posted by Dreamer in Ontario

Peanut Butter and Pickle Sandwich

There are a few other PB&P sanwiches on Recipezaar, so I know I'm not crazy. These are only slightly different because after trying other pickles I think the bread and butter pickle chips are best for this. I use a brand called Bubbies which I highly recommend. -- posted by Ilysse
