Peanut Butter Oatcakes

You know those delicious oatcakes you can sometimes buy at local coffee shops? After several trials I have finally come up with a recipe that satisfies my oatcake craving (and gives my bank account a break!). Hope you enjoy the yummy melt-in-your-mouth texture of this as much as I do =) -- posted by Asian Sensation

Homemade Pizza

I was trying to come up with something quick and inexpensive to cook for my family but something with a ton of flavor. I just threw this together. My family loves this pizza. Better than anything you can buy. This is my family's favorite. But you can really make it with whatever you have around the house. I use mango salsa for a little fruit taste but you can use any kind of salsa, tomatoes, even spaghetti sauce and it will still taste great. -- posted by Chef #553668

Thai Corn Cakes

Received in email from Gourmet_recipes_from_around_the _world. the email notes it was adapted from Very Simple Food. Very pretty with either fresh cut or sweet kernel canned corn - frozen doesn't work as well because the kernels skins get tough when frozen. The sweet chili sauce makes the meal - get it; it's cheap & addictive. -- posted by Buster's friend

Roasted Butternut Squash and Leek Soup

This is my adaptation of several squash recipes I've seen. This is a great recipe for a first course of dinner, lunch or snack. It can be prepared up to 2 days ahead of time (bring to work!). Reheat refrigerated soup before adding garnish.

For vegan option, use Vegetable stock rather than chicken stock, substitute olive oil for the butter and omit the cream. Make sure to use a vegan wine as well. -- posted by Austin Vegas

All American Corn Dogs

I don't often deep fry food at home, but these are so worth it! These are a staple at fairs and theme parks across America. You could use an 8oz box of jiffy corn muffin mix instead of the first 6 ingredients but you probably won't find this outside of the US. A great crowd pleaser at bbq's or children's parties, hot dogs never tasted so good. . . . -- posted by robd16

Easy Pizza Pancakes (Thick Crepe Style)

Some of my friends from Rio will remember when the heavy rain flooded our apartment and we spent hours trying to scoop up and drain the water away. None of us had eaten so half way through, ankle deep in water (!), I devised these lovely little pizzas to give us all a break and a laugh as I'm flipping the pancakes!. I think they taste so good because the 'base' is fresh. Feel free to add extra toppings as you wish but I think they're great plain. Don't expect to be able to pick these up, you need to eat them with a knife and fork. -- posted by robd16

An indulgent and luxurious champagne breakfast or brunch dish that even those who don't like the texture of smoked salmon will love because it is cooked in with the eggs.
Lunch Wraps for the Freezer

I originally got this recipe from Allrecipes.com, but have modified it over the years. These wraps are really tasty, but admittedly, are a bit dry and should be served with some sort of sauce on top (hot sauce, enchilada sauce, fresh salsa, or sour cream...etc.). These are cheap, filling, nutritious, and great to have hand in the freezer. I keep some in the freezer at work, and a bottle of Tapatio in my desk (or sometimes I even freeze individual-sized [appx 1/4 cup] homemade red chile sauce in snack-sized ziplocs). I usually use 2 tablespoons of my own taco seasoning mix, but specified one package below, for convenience. I often add additional veggies such as shredded carrots, diced bell pepper and onion, etc. -- posted by Robyn's Cookin'

Zurie's Tomato and Cream Cheese Tart

I'd like to dedicate this recipe to Molly53. When I could not find a tomato tart or pie on Zaar with cream cheese as a basis, she went to the trouble of converting a recipe and posting it for me in RR, which is really going to a lot of trouble! Thank you, Molly53!! This is not that tart, but in the end I put this together, and my severest critic, my husband, said the tart was fine. At the time of my request in RR I had lots of small plum tomatoes which in the heat became too overripe for salad but I could not bear to throw them out. I had a large chunk left of my favourite pastry, recipe #197151, which had to be used, but I confess that I don't know how much I used for this pie.... The amount given is a guess. The taste is clean; I did not want to use mayo. Prep time does not include making the pastry. -- posted by Zurie

Dress It Up: Deviled Eggs

It's not even Easter, but I boiled a bunch of eggs so I had an excuse to prepare another one of my favorite naughty foods--deviled eggs. This is a simple recipe, but very good. I have to confess, I never bother with a piping bag because deviled eggs never last long enough for me to look at. I don't have the patience to make them pretty--I just want to eat them. It's kind of like, why bother making the bed when I'm just going to get back in it?
Veggie Nachos

These nachos are full of protein and fiber and look beautiful to boot. Take it easy on the cheese and make it low-fat. This recipe heats the chips so make use of the chips remaining in the bottom of various bags. My sister and I made this live on my podcast. It's vegetarian and easy and I was surprised there wasn't one like this on 'zaar. This version is fairly quick for two and can be made as spicy as you like by adding jalapenos or hot salsa. It's a great appetizer for the holidays as it is so light & not filling. But I have made these for my kids for a summer brunch or lunch also. I have never tried a lower fat version because I despise fat free mayonnaise & cream cheese but let me know if you try something & it works.
I have simplified it since my first 10 times making this recipe as well IT WILL SERVE 12-20 most will want 2nds, trust me :)
