			<description>This is hardly a recipe, but a very simple way turning a lot of carrots into supper.  I found this recipe at http://glutenfreegoddess.blogspot.com/ when looking for something simple to use up my tons of carrots.  I added lentils to make it a main course.  The lentils don't affect the taste and add protein, fiber, iron and other goodies, but you can leave them out for an even simpler recipe.  You can also use any unsweetened, unflavored nondairy milk in place of the soy milk. 			<description>&amp;quot;Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later.  Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan&amp;quot;. 

Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal!  Enjoy!

A little history:
In baking and pastry making, the term streusel (a German word meaning &amp;quot;something scattered or sprinkled&amp;quot;, from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and white sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). Some modern recipes add various spices and occasionally chopped nutmeats. 			<title>Loch Lomond Rumbledethumps</title>

			<description>During Christmas, we were on holiday in Scotland. I asked my mother-in-law, &amp;quot;Have you ever made a dish called &amp;quot;rumbledethump? They're talking about it on a website. (Zaar)&amp;quot;  She laughed and said, &amp;quot;That old thing! We ate it as kids and when newly married! I haven't made it in years!&amp;quot;  She explained that if you asked a 100 Scottish women to make this dish, you'd come up with 100 variations.  

Some use onions, some use chives. Some boil their cabbage, some fry it. Other's add turnips or parsnips or carrots. But however you make it, this is Comfort Food at it's highest elevation. I watched her make it from scratch, took notes and asked questions. The end result is her version, which comes from the Loch Lomond area of Scotland.

What I love about this variation is the great contrast between the tangy tomato topping and the incredible richness of the cabbage/onion/potato filling. Top it with cheese and you have some of America's favourite flavours: tomato, cheese and potato.  I should know: I ate three pieces the first time that I ate her version!

I searched for a similar recipe and found that most German onion pies contain bacon, etc., but hers was meatless and very delicate.  I finally found this recipe which I adapted slightly so that it is very close to hers.  Posted for safekeeping - I have not tried this yet. Cabbage is very good for you, as it contains anti-oxidants, vitamin C and all sorts of other things.

			<description>At the local Indian market, they have a small, vegetarian &amp;quot;cafeteria-style&amp;quot; lunch/dinner counter that we go to as often as we're able. One of my favorite dishes there is a yogurt curry with pakoras swimming in it.  Pakoras are a snack made with, in this case, veggies dredged in a chickpea (besan) flour batter and then deep fried. I've been on the hunt for a good kadhi pakora recipe and found this keeper.  Just don't use thick, Greek style yogurt like I did; you want more of a soupy consistency rather than what my photo shows.  You can vary the veggies you use here. If possible, use leftover rice as fresh rice will be too moist.  Leftover rice from Chinese takeout works well too.  After making the dish the amount of garlic didn't seem excessive to me, but use your judgment.  Courtesy of Mark Bittman, the minimalist, from today's version of the New York Times.  I reduced the oil as it seemed excessive.  Use 1/2 cup if you'd prefer.  For a vegan dish, omit the eggs. With more than a cup of fresh lemon juice, the lemon flavour is really pronounced, the filling sets up real well and the dusted sugar makes for a beautiful presentation.
