Cream of Carrot Soup

I made this with fat-free half & half to lighten it up a bit. I couldn't tell from the original recipe whether to simmer the carrots covered or uncovered - doing it covered made a fairly thin soup. If you want a thicker soup, I'd imagine leaving it uncovered would help.
Lebanese/Syrian Bazella

After having lived in Syria for the past year for school, I learned how to make several authentic dishes. They will probably taste different outside the Middle East due to the availability of items seasonally and brands of ingredients used. This dish is a blend of carrots, peas and meat in a tomato-based broth that is served with Middle Eastern-style rice. Arabs are used to having family over--it's a family based culture--so it's meant to be shared. -- posted by Mustafa's Cook

Kadhi Pakora / Pakoras

At the local Indian market, they have a small, vegetarian "cafeteria-style" lunch/dinner counter that we go to as often as we're able. One of my favorite dishes there is a yogurt curry with pakoras swimming in it. Pakoras are a snack made with, in this case, veggies dredged in a chickpea (besan) flour batter and then deep fried. I've been on the hunt for a good kadhi pakora recipe and found this keeper. Just don't use thick, Greek style yogurt like I did; you want more of a soupy consistency rather than what my photo shows. You can vary the veggies you use here. Try onion strips, spinach and even paneer, Indian cheese. Adapted from a recipe at http://www.indianfoodsite.com/.
Lobster Stuffed Potato

I got this recipe from a chef who taught a gourmet cooking class many years ago. The recipe is from the award winning restaurant "Windows on The Water" which is in Kennebunkport, Maine, not far from President Bush's family compound. I'm sure you could substitute the lobster meat with imitation crab or lobster. Lobster meat is very expensive; around $23.00 per pound. -- posted by Mainely Debbie

Hearty Light Chicken Soup

If you don't want to buy a bunch of different frozen vegetables just buy a quality mixed vegetable. It usually pretty close to the portions in this recipes.

Best Lima Bean Soup - Especially Wintertime!

Wintertime soups and stews . . . nothing better! This recipe will give you a rib-sticking flavorful soup that everyone can tweak as much as desired to satisfy his or her own tastebuds. For those not partial to the taste of lima beans, be aware that this soup barely carries a hint of lima bean flavor, as the lima beans serve merely as the staple for this wonderful dish.
Cauliflower and Potato Gratin (Russ Parsons)

A simple, satisfying vegetarian recipe than can be served as a holiday side dish or a or as a main the rest of the year. Do be sure to cook the cauliflower well to mellow the flavor. And make the white sauce a little thicker than you might think appropriate -- the cauliflower and potatoes will both give off some moisture while they bake.

Chicken " Soup " Risotto Style!

Chicken Risotto. A yummy creamy ( as in texture but has no cream ) chicken, rice and veggie concoction I made last night for dinner. However, I used sushi rice instead of the typical italian arborio- but it absorbs just as much!! Good stuff. As for taste...think of your favorite chicken soup recipe...but risotto syle.
If you use arborio rice you may need to increase liquid and cooking time...it takes a little longer to cook than sushi rice (approx. 5-10 mins..) read the instructions on your package of arborio rice to get an idea. -- posted by Amy Duchesne

This soup does not have cream or milk in it like many of the ones I have seen. I got it off the internet many years ago. The recipe is credited to the Dinner Co-op. And very simple to make. I think it could also easily be converted to a slow cooker recipe. I usually double the recipe when I make it. -- posted by ~Sherry~

Ginger Butternut Squash Soup

The combination of ginger and butternut squash is delicious and addictive. This recipe yields a creamy soup without the use of any cream. I love to whip this soup up with my immersion blender right in the pot. This soup also freezes well. You can serve it with a dollop of sour cream if you desire, although I serve it without a garnish. If you want to make this a completely dairy free soup, use dairy free margarine (Fleishman's unsalted, or Earth Balance.) Oh yeah, and you MUST use fresh ginger. -- posted by Lee Hock

Herbed Country Breakfast Potatoes

These are the country breakfast potatoes I cooked at a restaurant I once worked, which were served on weekends for brunch. They are easy to make, and may be prepared with or without tri-color bell peppers -- and of course they are delicious, with aromatic fresh herbs. I've tried making them with dried herbs, but there's just no beating the flavor of fresh rosemary and thyme (you can even sneak a little fresh sage in there too, if you've got it). Enjoy these hearty breakfast potatoes with your favorite eggs or omelet, or serve them the way I do (yes it may seem strange)... topped with my Recipe #363705 sauce! Mmm! -- posted by Bazaar®
