You can use whatever vinegar you like, and can add, after tasting, more. Nakano makes several seasoned vinegars that are scrumptious! Smoked paprika is one of the best seasonings I've ever used; you can't believe how fragrant it is nd the taste is amazing. However, having said that, it is very pricey. 			<description>There are many versions of this basic recipe.  This little riff adds a little extra color and crunch to an already delightful side dish that is rich in both flavor and fiber.  Add different fruits, and it becomes yet another kind of salad, beautiful in its ruby-redness, especially on a bed of greens. Note: the toasted pecans are nice added the day before serving, but as time goes on, they become less crunchy - but still add a great flavor. 			<description>If you don't care for the mayonnaise dressed Waldorf Salads, this one is for you.  It's from my grandmother and probably from the period of the 1930's or so.  It's ABSOLUTELY DELICIOUS!  I could eat this for dessert, and when I make it usually double or quadruple the recipe so I can send some home with everyone after the holiday dinner.

It's best to make the dressing ahead of time so it has time to cool. 			<description>the grand children always want my mother in law to make this salad when they visit.  It is an update on an OLD recipe that calls for a cooked dressing --she has gone modern and uses the microwave and add cool whip instead of making her own whipped cream.She makes about a triple batch in a big tupperware bowl and keeps the leftovers in the fridge -- be sure to stir leftovers and eat with in about a day.
