			<title>Thick and Creamy Potato Latkes</title>

			<description>Often served as a side dish with holiday meals, the Jewish potato latke (something of a pancake) is usually made from grated potatoes mixed with eggs, onions,  matzo meal, and seasonings and then fried.  Ideally, latkes should be somewhat thick, golden, very crisp on the outside, and very creamy in the center.  Figuring out how to make these ideal latkes meant finding the best potato, the best grating method, and the best frying technique.  Matzo meal is a traditional binder, though we found that the pancakes' texture does not suffer without it. My daughter loved it, which I was surprised.  It isn't sweet at all.  You can taste all the fruit in it.  I enjoyed it, and I'm sure over time I'll get used to a non-sweet smoothie.  I liked this recipe because it didn't contain any fruit juice or sugar or honey. It's very much like an apple crisp. Their recipe gives instructions to clean the dish as soon as possible or reheat adding water and a few drops of dishwashing soap to help remove the caramelized sugar.  I didn't and boy do I wish I had.  The recipe reads 4-5 servings, but because it is so sweet, I cut down on how much to serve. 			<description>I first made these pancakes messages for my son's 4th birthday and then for the last day of kindergarten. Both times the kids loved them and ate up the pancakes. You can write on them even when they're frozen, which I think is actually easier. You can write any messages you want or draw any pictures you want. Now I make a whole bunch to freeze, take out what I need and write the message/picture right then for either breakfast, snack or lunch. The kids don't even eat them with syrup! Servings and yield are approximate since it depends on how much batter you have-I double mine and get about 60 or so pancakes.
