Sweet Rice Salad

My mother has made the sweet rice ever since I was young (a long, long time ago). We loved it but years ago I started adding cool whip and fruit cocktail to it for a dessert salad. Lately I've been adding cool whip and a box of frozen raspberries in syrup instead of the fruit cocktail, which we like better. -- posted by Connie Lea

Stir-Fried Spaghetti

This is a quick, healthy week-day meal, very fast to put together if you have leftover spaghetti noodles on hand. I like to use Barilla Plus spaghetti... it is higher in protein than regular spaghetti and tastes so good. Whole wheat spaghetti would be good, too. -- posted by Heirloom Tomato

Chicken Noodle Soup over Mashed Potatoes

If you haven't tried chicken noodle soup over mashed potatoes, I am sorry! You will never go back. It makes a creamy, delicious meal. I always make my recipe #407601 they really make a difference in the soup, 1 1/2 this recipe as you need more noodles. I also use recipe#404067 for the potatoes, cut back a bit on the butter and milk when using in soup because all the liquid already gives it great flavor. Enjoy! -- posted by Rollin in the Dough!

Southern Breakfast Biscuits - Easy but Light and Fluffy

Having run through a range of biscuit recipes, this has become Kimberly's favorite way to have them. I'm not going to complain, they're lovely and fluffy, and if I have to make them, it's easy as pie.

They're a little crispy on the edges, top and bottom, deliciously soft on the sides, and almost impossible to get wrong.

All credit to the talented Kimberly for the recipe's creation.

Tex-Mex Rice from the Rio Grande Valley

This rice has been passed down in my family for at least four generations. The cumin is the key to this recipe. Use whole cumin, freshly ground. Ground cumin looses it's flavor quite rapidly. If you must use cumin purchased already ground, try throwing in an extra teaspoon. Also, this rice is cooked in a large skillet, rather than in a pot. -- posted by Chef #1522879

Sweet and Simple Couscous With Fruit

I adapted this from a recipe I saw on Everyday Italian. My local WinCo carries "Tri-Color" or "Rainbow" couscous, which I like for the aesthetics. For fruit, any dried fruit will do, but I like to use a combination of dried cherries, cranberries, blueberries, apples, and apricots. The flavors work really well together, and--again--the aesthetics are very pleasing. With smaller fruits like blueberries and cranberries, you can leave them whole.

This recipe tastes great--but uniquely different--both warm and cold. -- posted by Cookin' Cop

Ginger Fried Rice

This looked awfully good, simple, almost perfect! I made this last night and my BF and I were very pleased with the outcome. If possible, use leftover rice as fresh rice will be too moist. Leftover rice from Chinese takeout works well too. After making the dish the amount of garlic didn't seem excessive to me, but use your judgment. Courtesy of Mark Bittman, the minimalist, from today's version of the New York Times. I reduced the oil as it seemed excessive. Use 1/2 cup if you'd prefer. For a vegan dish, omit the eggs.
Solo Chicken Mushroom Pilaf

There is usually just enough flavorful liquid in the final dish to prompt me to eat this with a spoon. The natural flavoring of the mushrooms is similar to MSG and when paired with the sweetness of sauted onions, that was enough flavor for me.
Best Homemade Rice Pilaf

Mixture of rice and vermicelli slightly browned with a buttery flavor. I love this with ribs, salmon, or barbecued chicken. This recipe is from my mother-in-law, takes about 1/2 hour to prepare, and you need 2 sauce pans. Don't sub with brown rice because it doesn't taste as good. You can cut the butter a little if you want but the more you reduce butter the drier the rice. Use real butter! I suggest make it as is written the first time around. -- posted by Chef #1537226

Uyghur Polo (Pilaf)

Polo (a Central Asian variant on the word pilaf) is a food staple found across Central Asia, including Kazakhstan, Kyrgyzstan, Uzbekistan, Turkmenistan, Tajikistan, and parts of northwestern China. The different peoples of each region have their own takes, and their own flavors, for the recipe. This recipe is for Uyghur polo, the variant of the dish found in China's Xinjiang Uyghur Autonomous Region. Uyghur food is on the whole closer in taste to Indian, Persian, or Mediterranean food than it is to conventional Chinese food.

I credit this recipe to my Uyghur language instructor. The recipe can be a challenge to cook correctly at first, but the challenge will prove well worth the effort because it is absolutely delicious. -- posted by mpevans

Super Quick Tomato Basil Cream Pasta (Vegan!!)

Spaghetti Alla Puttanesca, Italian Style

I first was introduced to this recipe when I was reading the book, "Belong to Me", when the main character "would have sold her soul" for a plate of this. I had to do further research and hours later, found a recipe that I was happy with sharing. There are American versions of this and Italian versions of this. The Italian version has you begin by reducing the anchovies into a paste, reducing their fishy taste. It also has you cook the sauce longer, mingling the flavours and reducing the tomatoes into their own paste. Although excellent the 1st day, it is even better the second so plan ahead to make more! And please, RESIST the urge to cover this with cheese! Italians customarily do not use cheese in this dish; the cheese overwhelms the sauce and makes the anchovies more pronounced, unbalancing all the delicate flavours you just worked so hard to create. -- posted by The_Swedish_Chef

Foolproof Baked Brown Rice

I got so tired of doing brown rice on the stovetop -- messes from sputtery lidsz and boil-overs, burnt or stuck rice in the pot. But I really didn't want another appliance (rice cooker)... But this method is GREAT and foolproof! NO MESS, easy and you don't hav to watch like a hawk. I'm sure this would work for any kind of rice, but you'd have to adjust time and the amount of water.
Peanut Butter Granola

Here's a healthy granola that doesn't have a lot of oil, but has a lot of good-for-you ingredients in it. It's good sprinkled over vanilla yogurt or with milk -- or out of hand as I walk through the kitchen! I bake it at 325 for about 40 minutes, but my oven is going wonky, so I put the recipes original instructions here. You can substitute orange or cranberry juice for the apple juice. I've used almond butter instead of peanut and it turned out great.
