Broccoli Casserole With a Kick

I came up with this when I had planned to make a broccoli casserole and discovered that I didn't have any cheese! I went digging through my cabinets for something cheesey. I found a can of nacho cheese sauce. I figured it would work. It was very good in the casserole and just gave a light Kick. -- posted by Chele D

I whipped this up for a recent get-together I had with a bunch of ladies. It was such a hit that I decided it would be worth writing down (oro just putting on here) so I could keep up with it to make it again.
We served this with rice krispie treats, jumbo marshmallows, pretzels, pound cake, and fruit for dippers. -- posted by Melanie2590

Savory Steamed Yellow Squash With Mushrooms and Walnuts

A simple recipe to use with those plastic, microwave steamer bags. I find quite a bit of liquid is left in the bag after cooking, feel free to drain that off if desired and re-seasons with spices if needed, though I recommend trying it first before you drain it (the liquid adds a certain soup-like quality that I find is a nice compliment to the tender squash.) -- posted by VA in TX

The nutrients in oatmeal and OJ work synergistically to provide double the benefits.
The phenols in oatmeal and the vitamin C in Orange juice both help make LDL more stable. The more stable your LDL, the less likely it is to rupture, stick to artery walls and cause heart attacks.
So reduce your cholesterol!

Hot Spinach Dip

Originally from Desperation Entertaining by Beverly Mills & Alicia Ross.
I found this when I was just married and wanted something easy for when company came over. It's been asked for several times since then.
Note: Normally, I do not have a preference for using a certain brand, but this is one of those rare times I do. Stouffer's creamed spinach will produce a far richer dip, but is frequently hard to find in stores in my area...other brands will still make a good dip, though. -- posted by Misa

Bedtime Oatmeal

This isn't really a recipe, it's more an idea which worked really well. I find it hard to get to sleep, but don't like having a hot drink before I go to bed because I end up waking up a couple of hours later then can't get back to sleep. I love the taste of Horlicks (malted milk) though, and find it really relaxing, and oats are meant to help you sleep so I tried adding it to a bowl of oatmeal and it tasted really yummy! It's a lot cheaper than buying flavoured oatmeal too, and you can add any type of malted milk/hot chocolate powders to it, or even flavoured milkshake (my brother likes banana Nesquik with cinnamon). Have fun trying it out! -- posted by Rainbow*Bubbles

Chocolaty indulgence at in it's simplest form! ((for a lower-calorie version, replace sugar with Splenda or other artificial sweetener, and replace 1 tablespoon of oil with applesauce. This eliminates around 300 calories- if you're afraid of losing flavor, try one or the other variation or replacing just half the sugar)) -- posted by TinkerToy

Spanish Tomato Jam (Mermelada De Tomates)

The surprising bright accent of sweetness in this popular modern Catalan relish makes it an ideal counterpoint to savories such as anchovies, pungent cheese, or smoked ham. Normally, the tomatoes are slowly baked or cooked on top of the stove with sugar syrup, but this quick microwave version is delicious and simple. The tomatoes will splatter as they are microwaved, so choose a deep bowl with sides at least three inches tall. Adapted from "The New Spanish Table" cookbook.

Fall Harvest Smoothie

Top with a little fat free whip cream for an extra-special desert. My teen-age daughter begs for this and sometimes we even heat it up for a thick soup. The key to this recipe is to make sure you use a blender/smoothie maker that has enough power to completely puree alll the ingredients; otherwise the squash will stay stringy. -- posted by RackeSRN

Bring Me Your Head on a Platter! Cauliflower

OK just the Brain Food here!
This is a take off of my Recipe #106251 using a different method to keep it looking like a brain for Halloween.
Do take note all microwaves cook differently so take care when roasting not to over do.
Oh by the way cauliflower is Brain food!
A recent study done by McLean Hospital, an affiliate of Harvard Medical School, suggests that taking a minimum of 500mg of citicoline supplements a day can help boost mental energy and efficacy. Citicoline, a natural substance found in all living cells, can also be ingested via cauliflower—a source of choline, which is converted to citicoline in the brain! -- posted by ~Rita~

Knock off Boneless Wings for the Lunch Box

I take this with a serving of pre-cooked or leftover rice. Would probably be good over a salad or with steamed veggies too. The chicken tenders I use call for 5 as a serving size. Use the appropriate # of tenders for the serving size listed on the package.
