			<description>Easy and quick ham steaks with a spicy glaze.  Takes just minutes on a grill pan or even in a saute pan.  Serve with some sliced onions and fruit on the side, I like to use pears and apples. This is literally takes 2 minutes to make the glaze, 5 minutes for the ham and 5 for the fruit. Saute some spinach and microwaved sweet potato for 2 quick side dishes. Stuff the potato with some brown sugar and butter and you having an amazing quick dinner. You could easily serve this for company or just a quick midweek dinner. 			<description>This is a great, easy roast chicken that has a crispy skin and tastes incredible!  Sometimes, if I have the time, I brine the bird first, use your favorite brine recipe for that. Please use Kosher salt, there IS a big difference. Also, watch your broth, I found that I have to add about another cup so the bird doesn't dry out. I have also added the garlic to mashed potatoes rather than serving the garlic heads with the chicken. Either way, this chicken is a real winner! I have used this with both chicken and steak, flank steak or skirt steak, and it works great. I also mix a batch of the dry spices together and use a tablespoon or so when I make fajitas. The red onions, while not traditional, add a nice color to the fajitaas, but sweet yellow onions are more traditional. The beauty of the ckaes is that their centers stay much softer than the outer layer.  To avoid losing their molten interiors, be sure to not overbake them.   If that happens, you can still eat them, but the centers will be firm instead of soft.  If you are neverous  about inverting the cakes, don't do it.  You can serve them in their ramekins.


- You can prepare the cakes up to a day in advance.  Make the batter, spoon it into ramekins, cover each with  foil and refrigerate.  When you're ready to serve, remove foil and bake cakes for 14 minutes.
- Add fruit.  You can serve with fresh strawberries, raspberries, cherries or a combo.  A simple fruit sauce can be serve (blending a handful of berries agalong with a couple of tablespoons sugar and teaspoon of lemon juice in a blender / food processor, then straining the liquid through a sieve before using.

			<description>Another classic, best served warm or cold at room temperature but never hot.  It goes great with summer salads but often I just eat it on its own, picking at it throughout the day.  In Spain it is sacrilege to grill the top, you're supposed to flip it over and cook it all over the heat of the hob.  I think this causes too many problems and I can't tell much difference in taste anyway.   Better to have it neatly turned out onto a plate than try and put the pieces back together I reckon!  The olive oil is essential here and really adds something special I think.   Don't think of this as an omelette (potato omelette, how boring!) The recipe is for 250g butter, you can store the rest in the freezer or adjust quantities to suit.  The anchovies do not impart a fishy flavour at all and act more like a seasoning, as do the other ingredients.  It's hard to put your finger on what the flavour really is, except damn good greens!  Serving size is for the whole amount of butter and not for 1 cabbage. You must cook the cabbage according to the instructions set out below. Stuff the potato with some brown sugar and butter and you having an amazing quick dinner.
