Chili Oil

Adds flavour and zing to otherwise boring meals. This oil is great for using in Asian dishes, and for spicing up pizzas and pastas! Editor's Note: Dried, not fresh chiles are recommended. Oil does not inhibit the growth of mold or bacteria, and home-made oils could produce botulism food poisoning if not handled correctly. Commercially produced oils must contain specific levels of microbial inhibitors (typically acidifying agents such as phosphoric or citric acid). Because these inhibitors are not generally available to the consumer, the US Food & Drug Administration suggests that such oils be made in small quantity and refrigerated. -- posted by RatGirl

Garlic-Basil Vinegar

I lovemaking my own vinegar, the variations are endless. And it's simple, all you have to do is pour hot vinegar over the herbs, and let it stand for 2 weeks. Place a sprig of the fresh herb in the bttle, to make it look pretty, especially if giving as gifts. The recipe below is my favorite one. -- posted by KittyKitty

Modernized Hungarian Cucumber Salad Dressing

I've been reading an intriguing book lately titled "Culinaria Hungary", published in 1999 & authored by Aniko Gergely. It is much more a history of regional Hungarian cuisine & ingredients native to the regions than it is a cookbook, but does feature a few recipes considered part of classic & modern Hungarian cooking. 1 of the most startling & also the smallest recipe was a dressing for cucumber salad. This recipe is for the dressing, but I added 2 notes below the prep to describe how the dressing is used to make 2 types of the salad. *Enjoy* (Time does not include the soaking time or refrigeration time) -- posted by twissis

Skinny Cocktail Sauce

This recipe came from the New South Wales Fish Marketing Authority some years ago now. Its wonderful served with prawns or to accompany a fresh seafood platter.
Use gluten-free yogurt and GF worcestershire sauce if your diet requires gluten-free. This sauce is better if made in advance and kept refrigerated. You can add in some chopped chillies if you like some extra zing too. -- posted by **Jubes**

Méli-Mélo:a Muddle and Medley of Heirloom Tomatoes

Méli-Mélo is a wonderful French word which simply translated means a mixture, medley, assortment. selection or to use the old English word, a Muddle! This is a simple and yet stunning tomato salad, which relies heavily on assorted sun-ripened tomatoes, sea salt, herbs and good olive oil. It makes a "stand-alone" meal or a wonderful accompaniment. The tomatoes I used in the salad in my photographs were good old fashioned heirloom tomatoes called: Pineapple (yellow and mottled red inside - sweet and fruity flavoured), Black Krim (black-ish skin and dark purple inside - tangy taste), Marmande (Traditional French toms with a beefy taste and texture), Brandywine (dark Bordeaux colour with superb flavour), Moneymaker (traditional English toms - a gardener's favourite - full of flavour) and Auriga (medium orange tom with a sharp and tangy flavour). Try to use a selection of different shapes, colours and flavours when you make this salad. Do NOT omit the salting process – it is essential to this recipe as it brings out the flavours to their fullest……trust me; this salad is NOT salty as the salt drains away with the excess tomato juices! Serve this with grilled artisanal breads such as boule, couronne, ciabatta, cottage loaf, home-made breads or crusty rolls. Grilled cheese or fresh goat’s cheese is also a wonderful addition to this salad. Alternatively, serve it alongside grilled or barbecued meats or with pasties, pies or quiches – it really is simply delicious just by itself however! -- posted by French Tart
