Peaches in Muscat from Nigella

One of the most simple summer desserts, peaches macerated in the sweet wine muscat and served in a glass if you like or a bowl. 2 ingredients with a 3rd optional, nigella lawson does it again. I suggest checking out the picture at http://www.cookstr.com/recipes/peaches-in-muscat for a serving suggestion. time does not include refridgeration time but it can be 1 - 6 hours if you wish to get your dessert out of the way early. Otherwise you can, as nigella suggests also put a plate of ripe peaches and bottle of muscat on the table -- posted by MarraMamba

Super Sneaky Brownies

This is an even sneakier version of the "sneaky chef" brownies by Missy Chase Lapine. It is made with some of her "purple puree" but also utilizes black beans, which is a trick from Weight Watchers. No added fat to this recipe! No cholesterol! And if you omit the chocolate chips, it is vegan. It makes a very good, not overly sweet, cake-y brownie. NOTE: the purple puree part of the recipe makes a good 1 1/2 - 2 cups. This recipe uses only 1/2 cup, so reserve remainder for another use. It freezes well. -- posted by Susiecat too

Funny Fruit Face

Eat my face, big guy! These fun and funny gelatin faces are as cool to make as they are to devour. All you need is a few small paper plates, clean hands, and lots of wacky imagination. You can vary the flavor and look by using different colors of gelatin and a variety of canned fruit. It’s unbelievable how much healthy fruit picky eaters can pack away while they’re preoccupied by playing with their food. -- posted by Chef #1365024

Silly Easy Chocolate Creme De Menthe Pudding

I was making up a box of sugar free pudding and spotted the bottle of creme de menthe on the shelf. It wouldn't let me ignore it and I thought 'hmm, I wonder' and added a bit into the mix. It worked and turned normal chocolate pudding into something lush tasting. I could see it being the base of easy 'grown up' parfaits and that sort of thing too. -- posted by Sarah_Jayne

Orange Granita in Orange Cups

One time when my son and I were shopping at Costco, we saw these sorbets served in citrus and coconut cups. My son and I decided to try this with some granita we had made the previous weekend.

This recipe is so much fun! It is simple, healthy, light, and most importantly...a blast for the kids.
Creamy Pumpkin Rice Pudding

Even though the phrase "leftover pumpkin" doesn't exist in my household, most people often wonder what to do with the leftover pumpkin after making a pumpkin pie. I like to make this tasty, simple, and quick dessert when I have a huge can of pumpkin I haven't completely gone through. Whole milk and cinnamon rice milk really work best for this recipe, but some tasty variations that really add to this pudding's richness are vanilla rice or soy milk, and Silk Pumpkin Pie flavored soy milk (which is only seasonal, I wish it was available year-round! And is it just me or does Silk Pumpkin Pie Soymilk taste just like Silk Nog that's available around Christmas, only they package it differently? So if you're making it around Christmas, use Silk Nog!) This awesome dessert is great for parties and potlucks,
it travels and freezes well, and was a big hit at my sister's Halloween party! Both the kids and adults loved it. (Note: Prep time does not include cooling time.) -- posted by the80srule

Chocolate Madeleines

Madeleine is a shell-shaped confection that is a lovely marriage of small cake and cookie, For true madeleines, you need madeleine molds, which are sold at nearly all cookware stores. However, any mold that holds a quarter cup of batter will work, although the results won't be immediately recognizable as madeleines. But, just as a rose by any other name smells as sweet, so does a madeleine in any other shape taste as sweet. -- posted by Chef mariajane

My Very Favorite Apple Crumb Pie

This is my all-time favorite recipe for apple pie. The crumb topping is so delicious and the apple filling flavor is just right. You will need a deep dish pie pan for this. The crumb topping will seem like a lot when you're putting it on but it turns out wonderful when baked. I bake my pie on a cookie sheet, lined with aluminum foil. You can use your favorite pie crust for this or try "Recipe#51537", one of my favorites for one-crust pies. -- posted by Lainey6605

Nickey’s Strawberry-Applesauce Jell-O Ring

This is my favorite way to make jell-o for office parties and when entertaining. Because you have to wait between layers for the jell-o to set, I usually start it a day or two before I need it ... I do one layer before going to bed (or before leaving for work) then the second layer when I get up or whenever I have time like after work the next day.

I usually have a little extra mix left over from layer two. I just put it in a small container and enjoy it for a snack.

You will need a jell-o ring mold to make this as written but you can use anything you want to like little custard cups, etc.

Water comes to a very fast boil so it takes almost no time at all except for the refrigeration time. The time posted does not include refrigeration time. Your number of servings will depend on how big you cut your slices. -- posted by marisk

Sensational Rice Custard Pudding

This is a very old recipe that was my husband's grandmother's own creation. She was well known for her cooking and baking. I have been making this for over 40 years and always get raving reviews. Once, a cousin gifted me with a very large glass bowl that had 8 smaller serving dishes. She included a note that this was to become 'the family dinners rice custard pudding bowl' as everyone requested that I make it for all our gatherings! For a creamier custard pudding, use Aborio rice or a medium grain rice; I prefer the short Aborio rice. Never use instant rice.

You may wish to use less sugar as this is a very sweet custard pudding, due to the condensed milk. I hope this becomes a favorite of your family too! -- posted by Debaylady

From About.com Home Cooking. Peach sorbet gets a festive edge by the addition of champagne. You can cut the preparation time by using frozen peaches. If you do not have champagne, try substituting sparkling apple or white grape juice. This recipe is designed for an ice cream machine. -- posted by SashasMommy

Inside-Out Apple Crisp

This is based on a recipe for baked apples in Mark Bittman's cookbook (How to Cook Everything) but adapted to include something akin to the topping for an apple crisp. Because it's mostly apple and only a little bit of the "crisp" (which isn't really crisp, by the way), it's a a lower-calorie version that's easy to throw together for a satisfying dessert. -- posted by dirtgirl

Crepes - Natural and Healthy

This is a modified recipe of the the original one I found on "The Simple Dollar" blog. The recipe does not use any sugar or sugar substitutes. It is probably the healthiest crepes recipe there is. For topping, I like to spread Nuttela (hazelnut spread) and thinly sliced bananas on top of it. Sometimes, to mix it up, I put cinnamon, coconut flakes, and raisins only.
I have been making it for breakfast every Saturday morning for my wife. That may be the reason she loves me so much. -- posted by slobo80

Vegan Key Lime Pie Filling

This is a tad of a spinoff of a recipe on the side of a Nasoya Silken Creations box. You can skip the vanilla and cut the confectioners sugar a little bit if you use Silken Creations Vanilla instead. I didn't include a recipe for a pie crust because I like it crustless! And for ultimate laziness, you can even mix it right in the pie pan! There are lots of good vegan pie crust recipes on here, or you can buy a premade one.
