			<description>Even though I'm a born-and-raised Arizonan, both of my grandparents are from southern Louisiana.  As a result, I grew up eating a lot of good, homecooked Cajun food!!  This isn't a family recipe, but it rivals any I've had.  (It's a combination of several recipes I found online.)  I find myself craving it once every couple of weeks...luckily my boyfriend loves it too!  :-)  This can be made with 2 pounds of chicken, or 1 lb chicken + 1 lb smoked sausage. Sometimes I add a little Truvia. You don't need a sweetener but can add your sweetener of choice if you like.  The amounts are very inexact and depend on your taste.  I generally use the juice of one meyer lemon with a smaller amount of the sour lemon juice. Serve with some sliced grilled onions and marinated grilled fruit on the side, I like to use pears and apples. This is literally takes 2 minutes to make the glaze, 5 minutes for the ham and 5 for the fruit. Saute some spinach and microwave a sweet potato for 2 quick side dishes. Stuff the potato with some brown sugar and butter and you having an amazing quick dinner.
