			<description>A nice fast but very healthy side dish using escarole - a wonderful green that grows so well in fall-winter-spring gardens down here. It is under utilized but tastes so good - much less bitter than many other winter greens.  Fall greens other than collards who would well in this recipe as well (think curly endive, kale, black kale, bok choy, chard).  This recipe is from Gregg Shiosaki of the Seattle Culinary Academy at Seattle Central Community College who offers this holiday recipe through The Seattle Times.  I have escarole ready to try this out. 			<title>Sarasota's Easy Chicken Soup</title>

			<description>Now, I have probably too many versions for chicken soup ... My favorite ... fresh vegetables, stock and herbs taking hours to make my own roasted stock, slow cooked and fresh made pasta. Well, I love it and for a special night, I actually go through all that work.  But, working full time, that opportunity just doesn't come around that often. So version #2. Now, I normally don't like packaged seasoning, and frozen foods are usually as a last resort, but hey...we all have a life, jobs, family and sometimes... shortcuts just have to be made and this is one. The best part is you can make the chicken ahead, and then put the soup together in 20 minutes.  For a quick soup, this is really good. Now you can always use the seasoning and add add fresh vegetables if you want, but this is my version of a homemade tasting soup in less time than it takes to go get take out. Make some grilled cheese sandwiches or some ham and cheese and you have a great comfort food dinner. And a bonus, you have enough chicken leftover to make chicken salad sandwiches for the next day or chicken for another meal. 			<description>I created this recipe 3 years ago when I decided to brine a turkey for the first time.  I wasn't happy with any of the recipes I found online.  Now I would never fix a turkey any other way.  It infuses flavor throughout the bird.  I make this brine the day before I need it so it has time to cool in the refrigerator.  Brining time will depend on the size of your turkey or chicken.  We usually do an 18 lb. bird &amp;amp; I brine it for 3 days.  This is equally good for birds roasted in the oven or smoked on the grill.  The number of servings and cooking time will depend on the size bird you are cooking. 			<description>I came up with this after buying some meyer (sweet) lemons.  It is basically water with a combination of meyer lemon juice and regular (sour) lemon juice.  Sometimes I add a little Truvia. You don't need a sweetener but can add your sweetener of choice if you like.  The amounts are very inexact and depend on your taste.  I generally use the juice of one meyer lemon with a smaller amount of the sour lemon juice.
