Shrimp Cocktail My Way Please :d

My mom made this shrimp cocktail ever since I can remember. Then I made it for my husband, he thought it was too spicy so then I tweeked it a bit with Clamato Juice. The original recipe does not have any Clamata juice and has equal amount of Salsa Del Pato as Tomato Sauce. I hope you can enjoy it as much as everyone I make it for does. -- posted by Jacob's Mommy

Marinara Sauce

This is a really great sratch recipe for spagetti or pizza sauce to make ahead of time I put it in the crock pot on low to simmer. If you look at the label of most spagetti sauce you buy in a store the second or third ingredient is corn syrup. After this we don't ever buy red sauce. I make this in large batches frequently and it freezes very well. -- posted by victoriansweets_cakencandy

Sarasota's Chicken With Fennel & Olives

This is actually based on a suggestion made by another Recipezaar member, SarasotaCook. I had made a request for ideas to use up some ingredients in my freezer and pantry, and she kindly described how she likes to prepare chicken using the ingredients I had on hand. I took her idea and this is what I came up with. Sarasota told me to go ahead and post the recipe, so here is how I prepared it. I used Muir Glen organic for the diced tomatoes. Note: I removed the skin after cooking and served the meat sliced off the bone; the nutritional facts are assuming you ate all of the marinade, didn't spoon out the fat, and ate the skin. My chicken breasts were huge and had enough meat to feed 3 servings. If you prefer to leave the meat on the bone, you will have 2 larger portions. -- posted by HeatherFeather

Southwest Chipotle Pork

An excellent Pulled pork recipe can be put on a bun or in a wrap. I usually use only 1 onion and 2 peppers. If you like spicy don't seed the chipotle peppers. I use 2 of them instead of 1.

If you wish to do this on the stove use medium heat for 2 to 3 hours and mind to add water, as a pot lets moisture escape and a slow cooker does not. -- posted by Matts Lotus

It can also easily be made into a vegetarian (omit canadian bacon) or vegan (omit the canadian bacon/cheese and use olive oil in place of butter) dish. -- posted by ludosti

Red Pepper Vichyssoise

This is a lovely soup to serve in the summertime, as it is served chilled. If you prefer, you can substitute sour cream for the creme fraiche. To make creme fraiche, just combine 1 cup of whipping cream with 2 tbsp of buttermilk. Once combined, cover and let stand at room temperature for 8 hours. This will make a cup of creme fraiche. Prep and cooking time does not include the chill time! -- posted by breezermom

Monday Supper! Curried Lamb and Chutney Rissoles/Patties

A tasty and different way to use some of the Sunday Roast leftovers on Monday! Although I have specified lamb in this recipe, beef would also work very well, it's just that I had roast lamb leftovers when I made these. These rissoles are lightly spiced and tangy - perfect for supper when served with salad, pickles, chutneys and maybe a naan bread or pitta bread to make a sandwich. They are easily made and can be prepared ahead of time and left in the fridge, as they hold their shape better when they have been chilled and are firm. These will also freeze very well; open freeze them before frying on a tray or plate until firm and then pack them into freezer bags or a plastic container. They only need about 6 hours to defrost and then are cooked as instructed below.Use curry powder to taste, I use 2 teaspoons as I like mine quite spicy! -- posted by French Tart

Balsamic Chicken Taco Salad

My wife and I were traveling through Old Quebec and ordered a version of this at a roadside diner. WOW...we just about fell over from the first bite. Robin said she could copy this at home...we had no idea what to use for flavoring the chicken until she suggested Balsamic Dressing...and this is the wonderful result. So easy and good. A quick change of pace.
The great thing about this recipe is that all the prep can be done in the time it takes to cook the chicken. Fast and good. -- posted by Chef #1308572

Best Lima Bean Soup - Especially Wintertime!

This recipe will give you a rib-sticking flavorful soup that everyone can tweak as much as desired to satisfy his or her own tastebuds.
Cauliflower and Potato Gratin (Russ Parsons)

A simple, satisfying vegetarian recipe than can be served as a holiday side dish or a or as a main the rest of the year. Do be sure to cook the cauliflower well to mellow the flavor. And make the white sauce a little thicker than you might think appropriate -- the cauliflower and potatoes will both give off some moisture while they bake.

I couldn't find a good scallop and spinach salad recipe, so I googled around and this one came up. It's from a diabetic recipe site. We sautéed the scallops rather than broiling them, and added a dash of salt to the dressing.
Key Lime-Blue Cheese Chicken

Like all fun discoveries, this dish was created by accident: I made it on a whim while vacationing in Key Largo, Florida, out of "whatever was in the refrigerator." But who would have guessed that blue cheese and key lime are divine together?! This dish can be made with any limes, but Key Limes are sweeter and more fragrant. We also learned that partially grilling the chicken added a lot to the flavor! -- posted by Chef Goosebean (#699861)

Chicken " Soup " Risotto Style!

Chicken Risotto. A yummy creamy ( as in texture but has no cream ) chicken, rice and veggie concoction I made last night for dinner. However, I used sushi rice instead of the typical italian arborio- but it absorbs just as much!! Good stuff. As for taste...think of your favorite chicken soup recipe...but risotto syle.
If you use arborio rice you may need to increase liquid and cooking time...it takes a little longer to cook than sushi rice (approx. 5-10 mins..) read the instructions on your package of arborio rice to get an idea. -- posted by Amy Duchesne

Old Fashioned Chicken and Dumplings (Made Easy)

When I was growing up, one of my favorite comfort foods was my maternal grandmother's chicken and dumplings. "Nana" would stew her chicken and debone it, strain the broth (seasoned with fresh rosemary from her garden), roll her own biscuit dough, then drop hand-cut, flour-rolled dumplings into her broth. It was a lot of work, but she always seemed to have it on the table in minutes! She usually made it when I was sick or not having a great day (my mom too). It's one of those ''little things" my mom and I remember fondly. This recipe is my adaptation of Colonel Harland Sanders' personal gravy and dumpling recipe, which I've brought a little closer to Nana's... made a lot easier! PLEASE NOTE: THIS RECIPE HAS BEEN REVISED SINCE THE ORIGINAL POSTING, AFTER CHEF #1523855'S REVIEW. DOUBLING THE BROTH WAS MY SOLUTION (AS I'VE DONE HERE). IT GIVES MORE BROTH TO COOK THE DUMPLINGS IN (Thank you, Chef # 1523855). YIELDS ABOUT 5 SERVINGS. -- posted by Bazaar®

Solo Chicken Mushroom Pilaf

There is usually just enough flavorful liquid in the final dish to prompt me to eat this with a spoon.
Bacon Cheeseburger Soup ( Paula Deen )

This recipe is from Cooking with Paula Deen magazine Nov/Dec 2009. This soup is warm and hearty. People of all ages loved it and it is a fast family supper. You can double it easily and freeze the second portion for later. It tastes more like a regular cheeseburger to me. I garnished mine with some cheddar cheese as well. Served with my Hamburger Bun Toasts recipe also from Paula Deen in that same issue that she used to accompany it. Hope you like it.
Creamy Shrimp and Pasta

From Prevention. This isn't the most attractive pasta sauce I've ever made, but it sure is yummy! It is a great use for cooked shrimp, which I often find on sale. The original recipe calls for snow peas instead of green beans (add to pan with shrimp, don't boil) and roasted red peppers instead of fresh. I was worried at first that there was too much thyme, but it comes out nicely in the end. -- posted by smellyvegetarian

Steamed Taiwanese Meatloaf

Got this recipe from my friend's mom, who makes it with pork. I haven't tried it with the pork, only turkey. Kids love this recipe - it goes well over rice. Best part is that it takes no time at all to make. On days when I don't have time, I simply mix everything together beforehand, cover it in saran wrap and throw the Corel bowl (which I can put directly into a steamer) into the fridge until 30 minutes before dinner time. To avoid using the chicken bouillon I have tried using chicken broth, but I really see no difference in taste. So I normally just make it using water and skipping the chicken bouillon altogether. -- posted by Fluffkins
