Shrimp Fried Rice -A One Dish Meal

This is a great do ahead dish - get everything ready early in the day, refrigerate until 10 minutes before serving. This may be a meal in one or part of a chinese banquet . It is important to do the onions & garlic as suggested in the recipe steps. If you use large prawns keep them separate and half cook them before adding other ingredients - again - do not over cook the shrimp. Cook this right in front of your guests and serve from the wok. The colors from the ingredients are so attractive -- posted by Bergy

Spiced Shrimp and Rice (Machbous Rubyan)

I was given buharat spice mix for Christmas. Now I'm searching for ways to use it. I haven't made this, but I will.
Paella Valenciana

Paella can be made many different ways. You can put almost anything into the dish. You can have a meat paella or a seafood paella or combination of both. The most important item you can not do without is the saffron. It is expensive, but an absolute must-have ingredient. -- posted by beach bum in the Philippines

French Tuna and Rice Salad

I used to get a tuna and rice salad at a small French bistro and was sad when the restaurant closed. I have been trying to find a similar recipe for years and finally found it from Debra Fioritto Weber. I made a few small changes, such as replacing gherkins with capers and adding tarragon to the vinaigrette. -- posted by Shana C

Pineapple and Shrimp Fried Rice

Coconut Rice With Scallions, Peanuts, and Shrimp

This recipe is from the "Just Add Water" cookbook by Lauren Chattman. You can make this without the shrimp as a side dish, or add shrimp for a full dinner. The coconut milk adds such great flavor, and it was really easy to make and clean up! The rice soaks up most of the liquid, so if you like it a little saucy, increase the coconut milk and water. -- posted by EagleRocker

Easy Mixed Paella

This is the easiest way to cook a Spanish mixed paella and still can call it paella. The ingredients are also easy to find everywhere. This rice recipe is cooked in a paella -hence its name- which is a round and flat steel or iron pan with two handles. If you don't have a paella use a large pan (30-35 cms. diameter per 4-6 servings approx.). The amounts are for fresh ingredients but you can also use canned and/or frozen ones. -- posted by Rosethorn

Easiest Fried Rice (Using Uncooked Rice)

Found this on an Aussie Website and have used it ever since. It is the easiest fried rice I've ever made and it is so good. I have often wanted to cook fried rice and I have had no leftover cooked rice ready well you don't use leftover rice for this recipe so it is a very handy recipe. -- posted by Ninna

Yellow Rice & Seafood Salad

Similar to paella, but served chilled, this colorful summertime dish is the perfect centerpiece at summer outing! Summer is the best season for fresh cilantro and this recipe takes advantage of the herb's refreshing flavor. If you know my plight - I either have to join them (the residents' who always want rice twice a day) and this is the way I am doing it - I'm joining them sort of!! :) BTW - found this on Goya web site. -- posted by Manami

Jambalaya, With Thanks to Pol Martin

I am a great fan of the late Pol Martin, I recently made his Jambalaya, from "Pol Martins Supreme Cuisine", using left over gammon from Christmas Day in place of the ham. The family absolutely loved it! So I've brought it here to share with you.

I've recorded the recipe as written, but should add that I did not cook this in the stove at all, (I've mentioned this in the directions), I used the tinned tomatoes, with their juice, and I didn't have fennel seed, so simply omitted it, after some deliberation about possible subs. Also, please note that the recipe uses Cooked rice, I have not included cooking time for the rice, although I cooked mine in the microwave whilst cooking the bacon, onion, etc, down to step 4, it took around twenty minutes to cook. Final note, that should read a FEW drops of hot pepper sauce, but somehow, it keeps coming out as 3! Add whatever you are comfortable with! -- posted by Karen Elizabeth

Becky's Jambalaya

I found this recipe in The Best of The Best of Idaho Cookbook/Caldera Kitchens. This is different from any jambalaya I've ever tried because of the roux (which has a nice gravy texture) and the spicy rice, but it's comfort food at it's finest. Although a little labor intensive, it's well worth the end result. I used chicken, crab, and spicy smoked sausage, but use what you have on hand or what your tastebuds prefer. The original recipe calls for 1/2 teaspoon file' (optional), but I left it out of the recipe because it wasn't recognized as a food when I tried posting it. I left out the MSG and file' when I made it and used fresh parsley. -- posted by AmyZoe

Crab a Licious Casserole

I adapted this recipe from Cooks.com. I like Basmati or Jasmine rice for this recipe. Each adds its own subtle flavor.

Note: I changed the estimated number of servings from 10 to 6 because after making it twice, I can say that this recipe seems to inspire "seconds" and "thirds." We eat a salad along with it--no bread, soup, etc. If you are controlling the portions for a dinner party or are serving a variety of side dishes along with this main course, use the higher number of servings.

Note 2: I had this leftover yesterday for lunch, and it warmed up great in the microwave. Freezing seems to be fine, too.

Note 3: Because we were running low, my husband substituted parmesan cheese for swiss, cut the amount of cheddar cheese in half, and mixed the cheeses into the casserole instead of putting them on top. He also added a dash of cayenne pepper. We liked it just as well. -- posted by 1ofdabest

Fried Fish With Rice (Kuwaiti & Emratie)

Fish with rice is often served in homes in the Arabian Gulf. Kuwaitis in particular love their Zubadi (Silver Pomfret) fish that is local to them but can be found in the frozen section of many Middle Eastern & Asian shops. (You may have to degut them yourself). While some prefer to eat them dry with rice, others like ourselves, make Recipe #387327 to serve as an accompaniment. This recipe is a very tasty combination from three sources which all deserve credit, Sa-mak ma-ga-lee - Fried Fish from From "The Complete United Arab Emirates Cookbook", by Celia Ann Brock- Al Ansari, Mtabag Simach from "Cardamom and Lime: Recipes from the Arabian Gulf", by Sarah Al-Hamad, and http://mimisrecipes.blogspot.com. -- posted by UmmBinat
