			<description>I have had this rattling around my head for a while and finally made it after obtaining some beautiful rather large shrimp from the farmers market today  thank you Mr. Fish Guy  Please dont leave our farmers market.  Originally my craving in order to be satisfied twas to be over thinly sliced neatly arranged boiled /roasted baby red potatoes lightly topped with fresh shredded parmesan cheese. Yummmm, that would have been spectacular with the sun-dried tomatoes.  However, Im out of potatoesand parmesan cheese, sigh.  So here is yet another smoked basmati rice dish.  Please forgive I really am more creative that rice rice rice.  Its all about the presentation!!! You will need a pretty presentation plate  but even a nice 10 glass pie plate will do. You will need a steamer for the shrimp. You will also need clarified butter.  I just happen to be someone that buys 4 pounds of butter at a time and clarifies and seasons it with various spices for general usage.  Think about it (no more shredded morning shredded toast :o]).  You will always have spreadable butter that is lightly seasoned for savory or sweets with cardamom, cinnamon, and fenugreek, I forget what else I might have put in the last batch on a whim, but those are my basics for clarified seasoning. Clarified butter keeps nicely for several months on the shelf or longer if in the fridge.  Yes, in a glass mason jar of course.  If you dont mind the heavier flavor  just buy Ghee.  I personally like a lighter flavor and not so nutty from their high temperature clarify process. But I do also have some Ghee on my shelf for certain dishes. 			<description>I am a great fan of the late Pol Martin, I recently made his Jambalaya, from &amp;quot;Pol Martins Supreme Cuisine&amp;quot;,   using left over gammon from Christmas Day in place of the ham.  The family absolutely loved it!  So I've brought it here to share with you.

I've recorded the recipe as written, but should add that I did not cook this in the stove at all,  (I've mentioned this in the directions),   I used the tinned tomatoes, with their juice,  and I didn't have fennel seed, so simply omitted it, after some deliberation about possible subs.  Also, please note that the recipe uses Cooked rice, I have not included cooking time for the rice, although I cooked mine in the microwave whilst cooking the bacon, onion, etc, down to step 4,   it took around twenty minutes to cook. Modifications I have made: I use chicken breasts and often omit pork, cook the sausage and slice into coins, use Basmati rice, don't peel tomatoes, add a 10 oz box of frozen artichoke hearts to the broth and rice mixture, substitute broth made with chicken granules and I add the shrimp at the end with the peas so as not to be over cooked. This is different from any jambalaya I've ever tried because of the roux (which has a nice gravy texture) and the spicy rice, but it's comfort food at it's finest.  Although a little labor intensive, it's well worth the end result.  I used chicken, crab, and spicy smoked sausage, but use what you have on hand or what your tastebuds prefer.  The original recipe calls for 1/2 teaspoon file' (optional), but I left it out of the recipe because it wasn't recognized as a food when I tried posting it. I was looking for a Spanish dish to take for a theme dinner party and came up with this simplified hybrid of a few recipes I'd researched.

This recipe can easily be adapted to suit your tastes... add oregano to the chicken seasoning if you like that flavor, omit the shrimp, or even add additional shellfish such as clams or mussels if you like.

The dish comes together very quickly after the initial ingredient prep.  Be careful not to add too much liquid, the finished dish is nice if the rice toasts and forms a slight crunch on the bottom.

			<description>I made this for dinner tonight, and the whole family loved it. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. 			<description>I grew up eating a Filipino version of Congee called &amp;quot;Arroz Caldo&amp;quot;. My grandmother would have lots of dark chicken meat in it and huge chunks of ginger that I would end up biting into (not fun when you're 7 years old). Since then my own kids have developed a love for the traditional Chinese-style congee (also called rice soup) they serve in restaurants, especially during cold Autumn and Winter days. Some people may be uneasy about using the 'century duck egg' (or 'thousand year old egg' is really just as egg that is preserved in salt, ash and lime) but don't judge it in it's unpeeled, chopped up state - added to the congee, it really adds a yummy complexity to this dish, even my 2yo daughter loves it. This recipe is for you if you want a warm, hearty, simple and economical meal. Enjoy! 			<description>I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints.  While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked.  This recipe comes from me combining elements of two or three different recipes that I found.  The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well.  If I want to do a homemade sauce, I usually do it a day or so in advance.,
