You will need a casserole dish that can be used on the stove top as well as in the oven. A dutch oven works perfectly. A large, deep cast iron or cast aluminum skillet would also work provided it is entirely metal (no plastic handles) and you have a lid (again, no plastic).

If you do not have stove-top safe casserole dish, you may use a frying pan for steps 3-6. In step 6, omit the chicken. In step 7, transfer to a large kettle. 			<title>Jambalaya, With Thanks to Pol Martin</title>

			<description>I am a great fan of the late Pol Martin, I recently made his Jambalaya, from &amp;quot;Pol Martins Supreme Cuisine&amp;quot;,   using left over gammon from Christmas Day in place of the ham.  The family absolutely loved it!  So I've brought it here to share with you.

I've recorded the recipe as written, but should add that I did not cook this in the stove at all,  (I've mentioned this in the directions),   I used the tinned tomatoes, with their juice,  and I didn't have fennel seed, so simply omitted it, after some deliberation about possible subs.  Also, please note that the recipe uses Cooked rice, I have not included cooking time for the rice, although I cooked mine in the microwave whilst cooking the bacon, onion, etc, down to step 4,   it took around twenty minutes to cook.  Final note, that should read a FEW drops of hot pepper sauce,   but somehow, it keeps coming out as 3! 			<description>This is the original paelle recipe as it was given to me by a lady who made it for her Portuguese husband. Modifications I have made: I use chicken breasts and often omit pork, cook the sausage and slice into coins, use Basmati rice, don't peel tomatoes, add a 10 oz box of frozen artichoke hearts to the broth and rice mixture, substitute broth made with chicken granules and I add the shrimp at the end with the peas so as not to be over cooked. 			<description>I found this recipe in The Best of The Best of Idaho Cookbook/Caldera Kitchens.  This is different from any jambalaya I've ever tried because of the roux (which has a nice gravy texture) and the spicy rice, but it's comfort food at it's finest.  Although a little labor intensive, it's well worth the end result.  I used chicken, crab, and spicy smoked sausage, but use what you have on hand or what your tastebuds prefer.  The original recipe calls for 1/2 teaspoon file' (optional), but I left it out of the recipe because it wasn't recognized as a food when I tried posting it. I don't like a lot of fat in my cooking, but if you don't like 24 oz of evaporated skim milk, you can substitute 36 oz. of half and half.  I also reduced the amount of butter from the original recipie from 1/2 cup to 1/4 cup. So if you want it richer, just add more butter or half and half.

The easiest way to get the cooked chicken and the 7 cups of broth is to make your own chicken broth using chicken pieces. It's called 'rough cut' because it is meant to be just a &amp;quot;rustic&amp;quot;, simple, easy, hearty, filling dish.  There is to be No tedious MINCING!!  :-)  Just put the ingredients in the cooker. ;-)

It's really easy!  Just put the ingredients into the cooker in the order listed, ending with the chicken.  You don't want to taste it after adding raw meat to it so adjust your seasoning as nearly as you can before the chicken goes in.  You can adjust the flavors further after it's finished.

Ours came out with a LOT of juice so, if you don't like it that way, consider draining the tomatoes, cutting the stock and using bouillon cubes instead.  Or cook as directed and removing excess juices to reach the consistency you prefer.

I ladled off about 4 cups of the liquid after all the seasonings married in the cooking process.

I served it over rice.

I thought about adding ground cayenne or red pepper flakes after cooking for a little added heat.  Or just having them in ramekins on the table for those who'd like it.

Consider substituting 2 LBS of ground turkey or chicken for the thighs.  I'm going to try duck or venison this winter.
