I was looking for a Spanish dish to take for a theme dinner party and came up with this simplified hybrid of a few recipes I'd researched.

This recipe can easily be adapted to suit your tastes... add oregano to the chicken seasoning if you like that flavor, omit the shrimp, or even add additional shellfish such as clams or mussels if you like.

The dish comes together very quickly after the initial ingredient prep.  Be careful not to add too much liquid, the finished dish is nice if the rice toasts and forms a slight crunch on the bottom.

Note:  I changed the estimated number of servings from 10 to 6 because after making it twice, I can say that this recipe seems to inspire &amp;quot;seconds&amp;quot; and &amp;quot;thirds.&amp;quot; We eat a salad along with it--no bread, soup, etc.   If you are controlling the portions for a dinner party or are serving a variety of side dishes along with this main course, use the higher number of servings.

Note 2:  I had this leftover yesterday for lunch, and it warmed up great in the microwave.  Freezing seems to be fine, too.

Note 3:  Because we were running low, my husband substituted parmesan cheese for swiss, cut the amount of cheddar cheese in half, and mixed the cheeses into the casserole instead of putting them on top. 			<description>This is a simple, hearty comfort recipe that was based on whatever I had in the pantry last night.  It's called 'rough cut' because it is meant to be just a &amp;quot;rustic&amp;quot;, simple, easy, hearty, filling dish.  There is to be No tedious MINCING!!  :-)  Just put the ingredients in the cooker. ;-)

It's really easy!  Just put the ingredients into the cooker in the order listed, ending with the chicken.  You don't want to taste it after adding raw meat to it so adjust your seasoning as nearly as you can before the chicken goes in.  You can adjust the flavors further after it's finished.

Ours came out with a LOT of juice so, if you don't like it that way, consider draining the tomatoes, cutting the stock and using bouillon cubes instead.  Or cook as directed and removing excess juices to reach the consistency you prefer.

I ladled off about 4 cups of the liquid after all the seasonings married in the cooking process.

I served it over rice.

I thought about adding ground cayenne or red pepper flakes after cooking for a little added heat.  Or just having them in ramekins on the table for those who'd like it.

Consider substituting 2 LBS of ground turkey or chicken for the thighs.  I'm going to try duck or venison this winter.

			<description>I made this for dinner tonight, and the whole family loved it. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. 			<description>I grew up eating a Filipino version of Congee called &amp;quot;Arroz Caldo&amp;quot;. My grandmother would have lots of dark chicken meat in it and huge chunks of ginger that I would end up biting into (not fun when you're 7 years old). Since then my own kids have developed a love for the traditional Chinese-style congee (also called rice soup) they serve in restaurants, especially during cold Autumn and Winter days. Some people may be uneasy about using the 'century duck egg' (or 'thousand year old egg' is really just as egg that is preserved in salt, ash and lime) but don't judge it in it's unpeeled, chopped up state - added to the congee, it really adds a yummy complexity to this dish, even my 2yo daughter loves it. This recipe is for you if you want a warm, hearty, simple and economical meal. Enjoy! 			<description>I spent 18 months in central Canada, serving a mission for the Church of Jesus Christ of Latter-day Saints.  While I was there, I fell in love with the people and the food, specifically Ukrainian and Filipino food. The cabbage rolls were my favorite, and when I returned to the US, I began searching for recipes, but could never find one that I liked.  This recipe comes from me combining elements of two or three different recipes that I found.  The resulting recipe is surprisingly easy--if a bit labor intensive.

I included instructions to make a sauce, but, if you run out of energy, the stuff in a can works just as well.  If I want to do a homemade sauce, I usually do it a day or so in advance.,
