Parmesan Sage Rice

I adapted this from several different recipes on this web site. It invariably gets rave reviews and is great as a side dish with chicken, salmon and other meats. Also goes great with salad with vinaigrette dressing. This is so easy to make and your friends will be very impressed (mine were)! This recipe will make enough for 2-3 people unless you're very light eaters. It doubles/triples/quadruples well. I recently prepared it for 10 friends and had to up the cups of water considerably but with rice it's not a big deal to just add more water and let it simmer for longer. -- posted by E.
Coconut Saffron Rice

A delicious combination of coconut and saffron blended with jasmine rice. I have tried many recipes and finally came up with this myself and I love it! Be sure to use unsweetened coconut. If you can use a fresh coconut and grate it. If not, you can rinse the sugar off of sweetened and then toast. -- posted by cherylf

Wild Rice Pilaf

Not too much cooking is involved here, and pretty much everything you have to add at the last minute or so of cooking. The slightly heated zucchini is nice, though, as it is somewhat cooked by the heat of the rice, but is still crispy, which is what I like about this recipe. When I say medium zucchini I mean something that is not too big or too small for your like (this is a personal thing,as it suggests). The type of wild rice I use is long grain, although I'm not sure if there is any other kind. -- posted by Studentchef

Best Ever Fried Rice

This recipe comes from Cooking Light, September 2005 and is without a doubt the best fried rice I have ever tasted. Not only great tasting but very easy to make as well. I have modified the original recipe slightly to reflect our preferences for oil, meat, veggies etc. The original recipe calls for shredded lettuce as an ingredient however I have never tried it this way. I will list it as an optional ingredient. The sesame oil is the secret ingredient as far as I am concerned!! Don't be shy, give it a try!! -- posted by NanuqsMom

Rob's Basic Baked Rice

My DH found this recipe in a Paul Prudhomme book and has adjusted it to our preferences. Great side for just about anything (especially grilled foods) with a light flavor - which doesn't end up competing with your other dishes. Really easy to make, just toss it in the oven and forget about it (so to speak) while you work on other things. :) We tend to like the gorgonzola cheese lately, but feta also works really nicely. It all depends on what your main dish flavor is and your preference. Cooking times can vary - we find 70 minutes works perfectly for us. -- posted by Mommy Diva

Calas - Rice Fritters

Even the pickiest eater will love this traditional New Orleans rice fritter. Allowing the batter to sit overnight gives this particular recipe a distinctive, subtle sourdough flavor and the lack of sugar (besides what is required to proof the yeast) allows you to control how sweet you want this to be. This is a great way to use leftover rice. Your choice of oil will make a big difference in the flavor. The recipe calls for peanut oil, but I prefer it with safflower oil. It gives it a lighter, more interesting flavor (not too mention being cheaper). I got this recipe from a blog I highly recommend, Nola Cuisine. -- posted by OwlMonkey

Mexican Beef Chili

From "The Essential Rice Cookbook." This is a hearty meal that could also be used as a side. I have tried substituting pork instead of beef, but it really needs the deep flavor of red meat. Also, it isn't very spicy, so you may want to add more spice.
Delicious and Healthy Brown Rice With Tofu and Veggies

Portuguese Sweet Rice (Arroz Doce)

Sweet Rice is as individual as the cooks who make them. I've tasted sweet rice by different cooks, but I've never tried one that came close to the creamyness, and sweet, lemony flavour of my grandma's rice. This is her recipe.
Island Style Rice and Beans

I found this on a OAMC website, which credits Healthy Meals in Minutes for this recipe. This was pretty easy, and nummy. This could also probably be made in a rice cooker (especially after thawing a frozen batch). I did the stovetop cooking for my two batches separately, since I was baking one batch for dinner and freezing the second. This worked out well for me. -- posted by CraftScout

Creamy Wild Mushroom and Wild Rice Casserole

This is not just mushroom soup and rice. This combines fresh herbs wild mushrooms, fennel, onions, sherry and a creamy cheesy bechemel sauce, all topped with a crunchy crusty topping.

This is a rich decadent side dish which is amazing with roasted turkey, chicken, cornish hens or pork.

Using any rice you want, a quick cooking, or any boxed rice, or the old fashioned way. But I take the short cut for this to make my life easier, but either way, the casserole is great. -- posted by SarasotaCook

Vegetarian Black-Eyed Peas & Rice

From The Black Family Reunion cookbook.
While growing up, my grandmother, rhoda Weekes, was known among family and friends as the master of black-eyed peas and rice. You may think I'm exaggerating, but I can remember folks coming from throughout the tri-state area if they heard Mother was "cookin' up a pot."

I'd watch her throw a bit of this and a dash of that into the kettle. It still warms my spirit to remember her creating her magical dish, while I kept her company in her big, beautiful kitchen. I'm no longer a meat-eater, so the following is my vegetarian version of Rhoda Weekes' black-eyed peas and rice.-Susan L.
Fresh Pepper Rice

Needed some flavorful rice to go with the spicy marinated chicken I was grilling so made up this quick, easy and super tasty recipe. If you don't have a poblano chile, you can use a jalapeno, or any other green pepper like it. If you don't want spicy, you can use a regular green bell pepper. This rice was so tasty, can't wait to eat the leftovers! Also, if you don't have the powdered chicken bouillon (I use Knorr) then you can use one cube, or just replace the water with 1 can chicken broth. -- posted by Melvin'sWifey

Easy One Pot Lentils and Rice

I made this for dinner tonight, and the whole family loved it. I make lentils and rice quite often in a million and one different ways, and never with a recipe, but decided to post this one for safe keeping so that I can make it this way again. I served this as a rice ring (with easy glazed carrots and raisins in the middle). I had no onions on hand, but this would be excellent with carmelized onions on top. You may need to use a little more or less water depending on the age of your lentils. I used 6 1/2 cups, and it was perfect. I hope you enjoy this as much as we did! -- posted by Chef #1082457

Kateh - Iranian Simple Rice

I think this way of making rice comes from the North of Iran. I prefer this to the more classic polow as it's less work to do and it's faster. My husband has a very interesting way to check if the rice it's done:he spits a little on his finger and places the saliva on the pan.
Chicken and Rice

This is my grandmother's recipe, but it was originally meant as a way to serve up fresh dove when it was in season. Since I live in the city, and there isn't a lot of opportunity for dove hunting, I substitute chicken. I find that bone in chicken pieces work best because they don't dry out the way boneless pieces will. This is my idea of ultimate comfort food. I usually serve it with peas and fresh sweet potatoes. -- posted by quirkycook

Rice Porridge (Congee) With Century Egg and Pork (Or Chicken)

I grew up eating a Filipino version of Congee called "Arroz Caldo". My grandmother would have lots of dark chicken meat in it and huge chunks of ginger that I would end up biting into (not fun when you're 7 years old). Since then my own kids have developed a love for the traditional Chinese-style congee (also called rice soup) they serve in restaurants, especially during cold Autumn and Winter days. Some people may be uneasy about using the 'century duck egg' (or 'thousand year old egg' is really just as egg that is preserved in salt, ash and lime) but don't judge it in it's unpeeled, chopped up state - added to the congee, it really adds a yummy complexity to this dish, even my 2yo daughter loves it. This recipe is for you if you want a warm, hearty, simple and economical meal. Enjoy! (note: I use leftover shredded chicken or pork but you can poach your own prior to making recipe, and use the ground white pepper - it really makes a difference!) -- posted by mlao77
