			<title>Cantaloupe-Lime-Granita</title>

			<description>Not overly sweet and lime, mint and white wine (Pino Grigio or a very dry and fruity white wine) give this Granita a summerly freshness. The sweetness of a ripe cantaloupe melon is often enough, so that you don't need to add more sugar. I like the cantaloupe not too ripe with a still lightly green colored flesh. In this stage the cantaloupe has some pear flavors and a sweetness of honey. This goes well together with lime and a dry white wine. The mint or peppermint add just a hint here. I prepare a Granita often one day in advance and mix it with a fork from time to time. 			<description>You can adjust this recipe to have even lower fat, or use all full-fat ingredients.  I use regular sugar and one can of full-fat condensed milk, but you could use Splenda and use non-fat milk for both cans.  You could also use egg substitute rather than whole eggs.  However, I wouldn't go any lower than reduced-fat sour cream, the non-fat is too thin and runny for a topping.  And do NOT attempt this with bottled lime juice - blech.

			<description>A wonderful classic British preserve. Spread it thickly on fresh baked bread, crumpets, muffins or hot buttered toast.  It's also delicious on pancakes and if used as a filling for cakes or tarts - such as my Recipe #176514. This recipe has the benefit of being made in the Crock Pot/Slow Cooker, acting as a bain marie which allows you time to being doing other things in the kitchen! I have also given instructions for the more traditional method if you don't have a slow cooker.  A jar or two makes a lovely gift - tie a pretty ribbon around the neck of the jar and provide a recipe tag as well. We like our lemon curd quite tangy - so if you are not keen on a very lemony taste - increase the sugar by about 2 to 3 ounces, or use 2 lemons only. This can also be made with oranges or limes, or a mixture of all three Citrus fruits; it will then be called St.Clement's Curd, from the Nursery Rhyme &amp;quot;Oranges and Lemons - The Bells of St.Clements&amp;quot;. After GEMA's disappointing review, I made this myself and made some minor changes (namely reducing the flour by two tablespoons and adding a tablespoon of yogurt) and clarifying the directions according to preparation in my own kitchen.  I found the cake to be a lovely snacking cake perfect as a midday sweet or informal dessert. I have made a few alterations (her version has almonds in the crust and a meringue on top, but I prefer this less complicated version). It is really simple and has turned out GREAT for me everytime. Put a little homemade whipped cream on top and you're good to go! 			<description>I love Anthony Bourdain's No Reservations. I was watching the Northwest episode and the Gypsy dining group came up with a fabulous dessert that engulfed all of the senses. Seeing as how I am in no way going to do this dessert justice, I just wanted to quote what Gypsy described it as:

&amp;quot;The second dessert was a lime cheesecake mousse set over the top of an aural crust. Strawberry pop rocks were implanted into the graham cracker crust for a surprising aural firework display with every bite. The dish was accompanied by strawberry sorbet over a salad of black pepper and strawberries, a strawberry sauce, and a fresh grating of lime zest.&amp;quot;

I have researched the lime mousse techniques and i have just run out of patience on how to keep the rocks from popping before the cake is consumed. So it's basically, no bake, low heat, keep it cool. 

I cannot come close to coming up with the black pepper and strawberries concoction so i am going to make my cop out, easy version. It might not be completely gourmet, but it is still  poppin'.

According to that site, this is the key lime pie served at the famous Catahoula's restaurant in Louisiana. Normally I am not a big fan of key lime pie, but this one is a winner! I'm including the recipe for the crust if you want to make your own; I simply used a store-bought prepared graham cracker crust, and it worked just fine. 			<description>I needed to use up some fresh limes, and I wanted to make a pie.  This is the perfect balance between sweet and tangy.  You could probably get away with lime juice from your fridge too.  I cheated and used a Marie Callender's pre-made crust to cut down on time, but I do think the graham cracker crust would be even better.  Super simple, and you feel like you got a 2-for-1 deal because it makes 2 pies.  I found this recipe in America's Best Church Supper Recipes/Taste of Home from Diane Bell of Manvel, Texas.  Next time you have a potluck, make 2 pies and keep 1 at home to enjoy.  Loved this with fresh whipped cream...MMMM.  Waiting for the pie to chill is the hardest part of making this pie.
