			<title>Baked Stuffed Mediterranean Potatoes</title>

			<description>Simple stuffed potatoes.  I love these served on the side but after you put all the fillings in, the whole potato was always too much for me, so I make mine if halves. I cook my potatoes in the microwave, use frozen spinach and few other ingredients and just finish in the oven to crisp up. Serve with a creamy yogurt, scallion and lemon topping and you have an amazing side dish.  My favorite is to serve this with grilled lamb chops, but the possibilities are endless. I also make baked chicken thighs (bone in, skin on) marinated over night in lemon, olive oil, red pepper, garlic (lots) and oregano. 			<description>I created this recipe 3 years ago when I decided to brine a turkey for the first time.  I wasn't happy with any of the recipes I found online.  Now I would never fix a turkey any other way.  It infuses flavor throughout the bird.  I make this brine the day before I need it so it has time to cool in the refrigerator.  Brining time will depend on the size of your turkey or chicken.  We usually do an 18 lb. bird &amp;amp; I brine it for 3 days.  This is equally good for birds roasted in the oven or smoked on the grill.  The number of servings and cooking time will depend on the size bird you are cooking. 			<description>We make this every year before Thanksgiving and put it in the freezer in three or four containers so we have some to take to every holiday meal. You can adjust the sugar to taste, and I often don't add as much as is called for, and sometimes even leave the jello out completely, especially if I'm making a half batch that I'm not going to freeze.
