He suggests using the best sausage you can find for this dish.  His choice, cacciatorini, a dry, aged, spicy salami or pork and beef, or salsiccia Napoletana piccante, an excellent dry sausage from Naples. Works with any fuller pasta, including stuffed sorts such as ravioli.  I use whole-wheat because I'll use any excuse to do the healthy option when the sauce is flavourful enough to hide the difference.  But of course, there's always the regular pasta for the pickier eaters!  I did it with a sausage tortellini once and it was fantastic!

I love big batches of soup to freeze (especially when I was single and just wanted to come home to a good dinner...) and this one is perfect.  I've also added beans, potatoes, carrots, celery and whatever else looked like it needed to be used up.  Nowadays I don't usually add the jalapenos (daughter doesn't like heat...so sad....)...but love having this to warm things up. This hummus makes a good sandwich filling: Fill a pita pocket or a warmed flour tortilla with a few tablespoons of hummus. Add sliced tomato, lettuce, red onion, and perhaps a few pickled banana pepper rings.
