Apple Butter Pie

Ths is from Baking Bites, a web site that all bakers *must* visit. I haven't tried it yet, but it sounds great. You can use a regular, vanilla wafer or graham cracker crust. The crust needs to be prebaked before the filling is put into it. -- posted by Debbie R.

Pumpkin Pie

This pie recipe is excellent. I think the honey in the recipe is what makes it delicious. You may want to make 2 pies out of the ingredients if you have small pie plates. Otherwise the timing may vary. -- posted by Chef #590134

Easy Hummus

Hummus is a popular dip usually eaten with pita bread at Middle Eastern restaurants. This version is is easy to make for anyone with a food processor. All of the ingredients are commonly available. It is every bit as good as hummus made with tahini. Consider this the convenience food version of hummus. You may be aghast at the use of bottled lemon juice and jarred garlic, but it really does work as well as fresh for this recipe.

This hummus makes a good sandwich filling: Fill a pita pocket or a warmed flour tortilla with a few tablespoons of hummus. Add sliced tomato, lettuce, red onion, and perhaps a few pickled banana pepper rings. It's very satisfying. -- posted by RudyH

Pear Caramel Crumb Pie

I wanted to make a pear pie with a pecan crumb topping, but sometimes the sweetness of such a topping can make a plain fruit filling seem tart. Inspiration came from a jar of pear cinnamon caramel dessert sauce I had in my fridge. The flavors blend perfectly, and the pecans give a nice crunch to the topping. We also have heart-health issues in my family, so unlike most crumb recipes, this one doesn't use butter. -- posted by akageorge

Lemonade Scones

I found this recipe on a blog site. It sounded really good and easy so I wanted to post it. Recipe is by Chris Chun.
Serve with strawberry/ raspberry jam and whipped cream. Also good with a cup of tea or coffee.
Want to try something a little different? Put a little lemon zest, basil or mint in for that extra zing! Try using Ginger ale for a nice change of flavor. You could just use soda/carbonated water and flavor the scones as you would like (half a cup.) -- posted by sexymommalucas

Sarasota's Sweet/Spicy Ham Steaks With Fall Fruits

Easy and quick ham steaks with a spicy glaze. Takes just minutes on a grill pan or even in a saute pan. Serve with some sliced onions and fruit on the side, I like to use pears and apples. This is literally takes 2 minutes to make the glaze, 5 minutes for the ham and 5 for the fruit. Saute some spinach and microwaved sweet potato for 2 quick side dishes. Stuff the potato with some brown sugar and butter and you having an amazing quick dinner. You could easily serve this for company or just a quick midweek dinner. You wouldn't know how quick this meal can be put together -- posted by SarasotaCook

Moist Pumpkin Spice Bread

This may be the most delicious pumpkin bread recipe I've ever baked. I came up with this for my brother's 18th birthday and it has been devoured in just two days. I believe the applesauce in the recipe is what makes it so ooey-gooey moist. It's also low in fat as the applesauce replaces the oil that would normally be used. The recipe makes two loaves, one of which can be frozen or given to a friend. -- posted by EntirelyEmily

Sunday's Best Rice Pudding (Traditional Style)

In memory of my dad who used to take me to Pickwick Restaurant for rice pudding every Sunday afternoon. This is the closest recipe I could find to that which was served at the restaurant: Creamy with a hint of cinnamon and nutmeg. Delicious whether served warm or cold with a sprinkle of cinnamon on top. Also, if prepared ahead, rice pudding makes a quick breakfast in case you're too much in a hurry to make oatmeal. -- posted by Rachael Potter

Veggie Nachos

Fruity Crunchy Yogurt Banana Pops

My sister clipped this for me either from a family magazine or one of those brand circulars. This looks like a great way to get your kids to eat fruit without them thinking it's fruit. ;) And it's just as adult-friendly as well as kid-friendly! I made a tray of these and couldn't resist, and now I must share it. In addition to a great dessert and snack, they also make a great on-the-go breakfast food that doesn't seem like breakfast food! :) Be sure to have some wooden craft/popsicle sticks handy, you'll need 8 for this.
Warming Celery & Carrot Soup

A smooth and creamy soup with just a little "bite" for those colder days. Cooked in a microwave with not too much labour input beyond preparation of the veg.

The basic recipe was a favourite from our old Sanyo microwave cookbook from more than twenty years ago.

Note:
For more or less "bite", add or take away one tablespoon of the Love Apple Sauce as you desire.
If Love Apple sauce is not available a substitute can be made by combining 1 tbsp Tomato Ketchup with 1 tsp Jerk Sauce. -- posted by Schemin Demon

The old lady (lillian) who we used to look after used to add a tin of campbells condensed chicken soup to her stew, you would do this, one day ill out on her roast chicken casserole and roast pheasent. -- posted by pornstarbarbie

Cranberry Orange Holiday Relish

There are many versions of this basic recipe. This little riff adds a little extra color and crunch to an already delightful side dish that is rich in both flavor and fiber. Add different fruits, and it becomes yet another kind of salad, beautiful in its ruby-redness, especially on a bed of greens. Note: the toasted pecans are nice added the day before serving, but as time goes on, they become less crunchy - but still add a great flavor. This relish can be held in the refrig for a week or so, and can be frozen as well. -- posted by MaryRich

Serve with some sliced grilled onions and marinated grilled fruit on the side, I like to use pears and apples. This is literally takes 2 minutes to make the glaze, 5 minutes for the ham and 5 for the fruit. Saute some spinach and microwave a sweet potato for 2 quick side dishes. Stuff the potato with some brown sugar and butter and you having an amazing quick dinner.
Peachy Fruit and Yogurt Shake

I adapted this from Better Homes & Gardens Diabetic cookbook. I have changed a few things. They say in the testing kitchen, they discovered if they added a little vanilla extract to the shake, they didn't need a sweetner. Feel free to add a little honey or sweetner if you feel it needs it. If you partially freeze the banana and yogurt, you can leave out the ice. -- posted by Sharon123
